4 limes
1 cup heavy whipping cream
½ cup white sugar
2 eggs
3 egg yolks
2 teaspoons ground ginger
1 (9 inch) baked pie shell
½ cup lime marmalade

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • Zest 1 lime, then juice all 4 limes. Combine lime zest, juice, cream, sugar, eggs, egg yolks, and ginger in a large bowl. Whisk until well combined and pour into the prepared crust.
  • Bake in the preheated oven until set, about 45 minutes. Let cool slightly.
  • Meanwhile, heat lime marmalade over low heat until melted. Remove from heat and cool slightly, about 5 minutes. Pour lime marmalade over the warm tart and spread out evenly. Allow to cool completely before slicing and serving.

1 qt heavy cream
2 whole cinnamon sticks
1 teaspoon ground cloves
1 teaspoon ground allspice
¼ teaspoon freshly ground black pepper
½ teaspoon freshly grated nutmeg
1 tablespoon ground ginger
7 large egg yolks
12 tablespoons granulated sugar, divided
¼ cup light brown sugar
1 tablespoon molasses
boiling water, for baking
powdered sugar, for dusting
6 ramekins, 6 ounce
culinary blow torch, optional
gingerbread man parchment paper cut-out, 3 in (8 cm)

Steps:

  • Preheat the oven to 325°F (160°C).
  • Add the cream, cinnamon sticks, cloves, allspice, black pepper, nutmeg, and ginger to a medium pot and whisk to combine. Turn the heat to medium-low and bring to just below a boil, about 200°F (95°C), about 10 minutes. The cream should start to bubble around the edges of the pan. Remove the pot from the heat, cover, and steep the spices for 20 minutes.
  • Meanwhile, add the egg yolks, 6 tablespoons granulated sugar, the brown sugar, and molasses to a large bowl. Whisk until the sugar dissolves. The mixture will be a golden honey color and should fall off the whisk in ribbons.
  • Set a fine-mesh sieve over a 4-cup liquid measuring cup or medium bowl and strain the cream mixture to remove the solids.
  • Slowly pour the strained cream into the egg yolk mixture, adding only a little at first to temper the eggs, whisking continuously until well incorporated. Use a spoon to skim any excess foam that may have accumulated on the surface.
  • Line a high-walled baking dish with a small dish towel or 1-2 paper towels to prevent the ramekins from sliding in the dish. Set 6 6-ounce ramekins in the dish. Ladle the custard into each ramekin, filling almost completely.
  • Carefully pour enough boiling water into the pan to come halfway up the sides of the ramekins, taking care not to splash any water into the custard.
  • Transfer the baking dish to the oven. Bake for 45-55 minutes, or until the custard is set around the edges of the ramekins but still jiggles in the center when shaken. The custard will continue to set as it cools.
  • Remove the baking dish from the oven and let the custards cool in the water bath until safe to handle, about 20 minutes. Transfer the custards to the refrigerator to set completely, at least 4 hours, or overnight.
  • Sprinkle 1 tablespoon of granulated sugar over the surface of each custard. Using a blow torch, caramelize the sugar until golden brown and hardened (it is okay if it darkens more in some areas). (Alternatively, set the ramekins on a baking sheet and broil on high for 3-4 minutes, until the sugar is golden brown and hardened.) Let the crème brûlées cool for 10 minutes.
  • Set a 3-inch gingerbread man parchment paper cut-out on top of a crème brûlée and dust with powdered sugar. Remove the cutter and repeat with the remaining crème brûlées. Serve immediately after dusting.

1/4 lb unsalted butter, plus
1 teaspoon unsalted butter, for buttering pan
1 cup sugar
3 eggs
2 cups flour
1 teaspoon ground cinnamon
1 teaspoon ground cloves
2 teaspoons baking soda
1 tablespoon fresh ginger, grated
1 cup unsulphured molasses
2 teaspoons baking soda, dissolved in
2 tablespoons hot water
2 eggs
1/2 cup sugar
1/2 cup fresh lime juice
1 lime, zest of, grated (about 1 tablespoon)
4 tablespoons unsalted butter, cut into small pieces
1 cup heavy cream

Steps:

  • For the cake:.
  • Preheat oven to 350 degrees, then butter and flour an 8-inch square pan.
  • Melt the butter, pour into a large bowl and allow it to cool slightly. Beat the sugar and eggs into the butter.
  • In a separate medium bowl, whisk together the flour, cinnamon, cloves, dry baking soda and grated ginger.
  • Bring 1 cup of water to a boil in a small saucepan. Using a wooden spoon, stir the molasses and the baking-soda solution into this water.
  • Whisk the dry ingredients into the sugar and eggs, then stir in the molasses mixture.
  • Pour the batter into a prepared pan and bake until a toothpick inserted in the center of the cake pulls out cleanly, about 40 minutes to 1 hour.
  • Cool cake on a wire rack for 10 minutes. Run a knife around the rim of the pan to loosen the cake and invert onto a cooling rack to cool completely.
  • For the lime cream:.
  • Whip the eggs and sugar in a bowl of an electric mixer, using the whisk attachment until the mixture doubles in volume and has a light color. Lower the speed and blend in the lime juice and zest.
  • Pour this mixture in the top of a double boiler (or into a medium metal bowl placed over a pot of simmering water). Cook over high heat, whisking often until smooth , very thick and custard-like.
  • Remove from the heat and use a wooden spoon to stir in the butter, a few pieces at a time, until it is fully incorporated.
  • Cool to room temperature.
  • Using an electric mixer or wire whisk, whip the heavy cream into soft peaks. Gently fold a fourth of the whipped cream into the lime curd. Then fold in the remaining cream.
  • To serve:.
  • Cut the cooled cake into squares and top with a generous dollop of lime cream.

Moist, spicy gingerbread is one of those simple desserts that people tend to associate fondly with childhood holidays. For me, it harks back to the Christmas seasons that I spent as a kid in Europe where gingerbread is particularly popular. Blending a mixture of baking soda and boiling water into molasses has a magical transforming effect in the oven. The light brown batter becomes very dark, rich, and deeply flavored when baked. Fragrant with warm, fresh ginger, this gingerbread is very moist, simple to make, and irresistible. Lime Cream is an unexpected-but perfect-partner. The recipe makes enough cream for one gingerbread cake. Any leftover cream is delicious slathered over toasted pound cake, buttermilk biscuits, or brioche. Don't reserve this recipe just for holiday baking-it will make your family sublimely happy all year long.

1/4 pound (1 stick) butter, plus more for buttering the pan
1 cup sugar
3 eggs
2 cups flour
1 teaspoon ground cinnamon
1 teaspoon ground cloves

Lime Cream
2 eggs

Steps:

  • Preheat the oven to 350°F, and butter and flour an 8-inch square pan.
  • Melt the stick of butter, pour into a large bowl, and allow it to cool slightly. Beat the sugar and eggs into the butter. In a separate medium bowl, whisk together the flour, cinnamon, cloves, baking soda, and grated ginger.
  • Bring 1 cup of water to a boil in a small saucepan. Using a wooden spoon, stir the molasses and soda solution into the water. Whisk the dry ingredients into the sugar and eggs, then stir in the molasses mixture.
  • Pour the batter into the prepared pan and bake for 45 minutes to 1 hour, testing for doneness with a wooden toothpick in the center of the cake (it should pull out clean and free of batter). Another indicator is that the cake will pull away from the sides of the pan when it's done. Cool the cake on a wire rack for 10 minutes. Run a knife around the rim of the pan to loosen the cake, and invert onto a cooling rack and cool completely. Cut into squares and serve with Lime Cream.
  • In the bowl of an electric mixer, use the whisk attachment to whip the eggs and sugar at high speed until double in volume and light in color. Lower the speed and blend in the lime juice and zest.
  • Pour the egg mixture into a medium metal bowl placed over a pot of simmering water (or a double boiler). Cook over high heat, whisking often, until smooth, very thick, and custardlike (about 20 minutes). Remove from the heat and use a wooden spoon to stir in the butter, a few pieces at a time, until it is fully incorporated. If the final mixture is lumpy, strain through a fine sieve. Otherwise, cool to room temperature.
  • Using an electric mixer or a wire whisk, whip the heavy cream into soft peaks. Gently fold a fourth of the whipped cream into the lime curd. Then fold in the remaining whipped cream.

KAHLUA GINGERBREAD WITH KEY LIME CURD

Gingerbread, it's not just for Christmas. Lime curd really lightens up this dessert which I've made this several times for dinner parties. Since not everyone loves gingerbread (go figure), I usually make at least two desserts when serving this to guests. The ingredient list seems long but it's really very easy and a great choice to make ahead. Please note the lime curd must chill thoroughly before serving. From Southern Living.   • Key Lime Curd: Combine sugar, butter, lime juice and rind in a heavy saucepan. Cook over medium heat, stirring constantly, until butter melts. Gradually stir one-fourth of mixture into eggs; add to remaining hot mixture, stirring constantly.
  • Cook over low heat, stirring constantly, 10 minutes or until lime mixture thickens and coats a spoon.
  • Remove from heat; cool. Cover and chill at least 2 hours. Yield: 3 cups.

  • Melt 1 cup butter in a large frying pan. Add the spices and cook for a few minutes. Add the vegetables and cook about 5 minutes. Do not allow the vegetables to brown. Add the stock and Tabasco. Stir and cook 5 minutes more. Crumble the cornbread into the skillet and mix; remove pan from heat.
  • Whisk 7 eggs and evaporated milk; pour into stuffing mixture. Return to low heat and cook, stirring, for about 2 minutes. Remove the bay leaves. Place stuffing in a bowl; cool before stuffing turkey.
