A delicious, versatile dressing for pasta or green salads. Easily made in advance for use just before service.

¼ cup rice wine vinegar or lemon juice
2 tablespoons Dijon mustard or mayonnaise
1 large garlic clove, minced
Salt and freshly ground black pepper
⅔ cup olive oil

Steps:

  • Measure vinegar (or lemon juice) and mustard (or mayonnaise) into a 2-cup measuring cup. With a small whisk, stir in garlic, a big pinch of salt and a few grinds of pepper. Measure oil in another cup. Slowly whisk oil into mixture, first in droplets, then in a slow, steady stream to make an emulsified vinaigrette.

Steps:

  • Combine the mustard, salt and pepper, and vinegar. Whisk in the cream. Gently stir in the olive oil. Stir in the chervil. Unlike standard vinaigrette, creamy vinaigrette is relatively stable and will keep in the refrigerator for up to 5 days or so.

I can't fully claim this recipe as my own since I found the original on Allrecipes. I did tweak it just a little based on my own preferences and what ingredients I had on hand. My husband, who I fear is going to turn into a bottle of Ranch dressing, loves this dressing almost as much. I use a microplane to grate the shallot and garlic, that way the dressing is nice and creamy without the need for a blender or food processor.
