ASPARAGUS SPEARS WITH SESAME



Asparagus Spears with Sesame image

3 tablespoons sesame oil
2 tablespoons white wine vinegar
2 tablespoons soy sauce
2 teaspoons sugar
Kosher salt
1 pound fairly thin pencil asparagus, ends trimmed, cut into 2-inch pieces
4 tablespoons sesame seeds

Steps:

  • Bring a large pot of water to a rolling boil. In a medium bowl, whisk together the sesame oil, white wine vinegar, soy sauce, and sugar. Set aside.
  • Prepare an ice bath: Fill a large bowl halfway with ice cubes and add some cold water. Place a colander squarely inside the ice bath. The colander will keep you from having to pick the asparagus out from amongst the ice cubes in the ice bath.
  • Add salt until the boiling water tastes like seawater. Add the asparagus to the boiling water and cook for 1 1/2 to 2 minutes - you want them to be crunchy. If the asparagus are thin, cook for only 1 minute. Remove the asparagus from the water with a strainer and transfer them to the colander inside the ice bath. Allow them to cool completely for a few minutes and then place them on a kitchen towel to drain any excess moisture.
  • Toss the asparagus, sesame seeds, and the sauce together and refrigerate for 1 hour, or until ready to serve.

2 tablespoons peanut oil
2 tablespoons minced shallots
1 tablespoon sesame seeds
2 teaspoons soy sauce (low sodium, if desired)
Dash of toasted sesame oil
Freshly ground black pepper

Steps:

  • Trim tough ends from asparagus spears. Set spears aside.
  • Heat a 10-inch cast-iron skillet for about 2 minutes over medium-high heat. Add 1 tablespoon peanut oil and half of the asparagus in a single layer.
  • Cook for 3 to 4 minutes without turning. Shake pan occasionally. Turn, and cook 3 minutes more. Asparagus should be bright green with brown spots.
  • Add 1 tablespoon shallots and half the sesame seeds, and cook, shaking the pan to toss asparagus, for 1 to 2 minutes or until shallots are transparent. Do not let them burn.
  • Add half the soy sauce, sesame oil, and pepper, and cook 30 seconds. Transfer to a plate, and keep warm. Repeat with remaining asparagus. Keep warm until ready to serve.

Sweet asparagus and spring onions go so well with the woodsy flavor of morels. All you need is a bit of butter and some crème fraîche to finish the dish. Prep and Cook Time: 45 minutes. Notes: If you can find fresh morels, definitely splurge on them; the flavor is unparalleled. Be sure to clean both dried and fresh morels well before using, to avoid unpleasant sandy bites. We like to peel the tough outer skin from the asparagus for this dish. This not only makes it prettier but results in more tender stalks. If you like, blanch the vegetables the day before, then wrap them in moistened paper towels, put in a plastic storage bag, and refrigerate.

1/3 pound fresh morel mushrooms or 1 oz. dried (see Notes)
3 bunches asparagus, ends trimmed and stalks peeled (see Notes)
3 bunches green onions, white and pale green parts only, root ends trimmed
4 tablespoons unsalted butter
1/2 cup crème fraîche
1 teaspoon coarse kosher salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Bring a large pot of water to a boil. If using dried morels, put them in a small bowl, cover with 1 cup boiling water, and let stand 10 minutes. Lift out and pat dry.
  • Meanwhile, generously salt remaining boiling water. Fill a large bowl with ice and cold water and set near the stove. Add asparagus to boiling water and cook until crisp-tender, about 4 minutes. Remove from water and immediately plunge into ice bath to stop cooking. Repeat process with green onions. Drain asparagus and onions on paper towels, then cut asparagus spears in half.
  • In a large frying pan over medium-low heat, melt butter. Add morels, asparagus, and onions and cook 1 minute, tossing gently to coat with butter. Stir in crème fraîche and season with salt and pepper. Continue cooking until heated through, 4 minutes longer. Transfer to a serving dish.

1 bunch asparagus
1 tablespoon black sesame seed
1/2 fresh lemon
1 tablespoon butter
1 pinch kosher salt
1 pinch black pepper

Steps:

  • Trim bottom 1/4 of asparagus off, or the whitish colored part,and discard.
  • Wash before cooking.
  • Sauté the asparagus in butter, with salt, pepper and black sesame, over medium heat.
  • Continue until the asparagus"gives" a little.
  • This all depends on the thickness of the asparagus.
  • Some water can be added if the asparagus starts to brown.
  • Squeeze juice from 1/2 lemon over asparagus, and serve.

4 boneless, skinless chicken breast (about 8 ounces each)
1 tablespoon rice wine vinegar
Kosher salt and freshly ground black pepper
1/4 cup roasted white sesame seeds
1/4 cup black sesame seeds
2 tablespoons olive oil
1 teaspoon sesame oil

Steps:

  • Brush the chicken on both sides with the vinegar. Sprinkle the chicken on both sides with 1 teaspoon salt and a few grinds of pepper. Mix the white and black sesame seeds in a shallow dish. Firmly press the chicken into the sesame seeds until well coated on both sides.
  • Heat the olive oil and sesame oil in a large skillet over medium-high heat. Add the chicken and cook undisturbed until just starting to turn white, about 1 minute. Flip the chicken and cook undisturbed until the other side is turning white, about 1 minute. Reduce the heat to low, cover and cook until the chicken is completely cooked through and an instant-read thermometer inserted into thickest part registers 165 degrees F, about 10 minutes. Serve the chicken as a whole piece or sliced crosswise into strips.
  • The chicken will keep up to 4 days. Let cool completely before refrigerating.
  • Caesar Salad: Slice the chicken and toss with romaine lettuce and store-bought Caesar dressing; top with hard-boiled eggs, olives, grated Parmesan and anchovies, if desired.
  • Mac and Cheese: Stir diced chicken and broccoli or cauliflower florets into your favorite version of macaroni and cheese.
  • Fajitas: Serve the chicken sliced with rice, taco-seasoned sautéed peppers and onions, black beans and tortillas.
  • Cashew-Chicken Salad: Serve on top of mixed greens with cashews, mandarin oranges, shredded cabbage and store-bought dressing.

  • If serving chilled, cook until crisp tender.
  • Drain.
  • Place in a bowl of ice water to stop the cooking process.

  • Fill a large saucepan with 1/2 inch of water and bring to a boil. Cook asparagus until tender-crisp, about 5 minutes. Drain, then rinse with cold water. Return pan to the stove over medium heat, pour in oil, and swirl around pan. Shake excess water off of the asparagus, and toss in oil with sesame seeds, and salt to reheat.

Here's a perfect spring salad that celebrates fresh asparagus and chives. You will love the tangy, sesame ginger dressing.

½ lb asparagus, fresh
1 tsp sunflower oil
+
1 tsp sunflower oil
1 lb boneless, skinless chicken breast(s)
1 tsp toasted sesame oil
1 clove garlic, minced
2 tsp rice vinegar
1 tbsp light tamari sauce
1 tsp sunflower oil
8 cups Romaine lettuce, shredded
2 cups green cabbage, shredded
1 carrot(s), medium, grated
2 cups orange peppers, thinly sliced
1 green onion(s), thinly sliced
12 sprigs chives, for garnish
3 tbsp sunflower oil
4 tsp rice vinegar
2 tsp water
¼ tsp ginger, ground
1 clove garlic, minced
2 tsp ketchup
2 tsp honey
1 tsp lemon juice
¼ tsp black pepper, freshly ground
½ tsp toasted sesame oil
½ tsp sesame seeds
2 tsp light tamari sauce

Steps:

  • Cut chicken breasts into strips (6-8 pieces per breast). Place in shallow bowl. Add sesame oil, minced garlic, rice vinegar and tamari and turn pieces to coat. Marinate 1 hour in the refrigerator.
  • Trim tough ends from asparagus. Heat 1 tsp (5 mL) oil in non-stick skillet over medium-high heat. Add asparagus and sauté approximately five minutes until tender crisp. Roll the spears in the pan to coat with oil and encourage even cooking on all sides. Set aside to cool. Slice on an angle into ½ inch (1.25 cm) pieces.
  • Heat another teaspoon (5 mL) oil in pan asparagus was sautéed in. Add chicken strips and cook until lightly browned and cooked through (165°F (74°C)) - about 5 minutes per side. Pour over any remaining marinade during cooking. Boil and set aside to cool.
  • Shred romaine lettuce and cabbage and add to large salad bowl. Top with the grated carrot and slivers of orange pepper.
  • To make the dressing, measure sunflower oil, rice vinegar, water, ground ginger, garlic, ketchup, honey, lemon juice, freshly ground black pepper, sesame oil, sesame seeds and tamari into a blender or food processor. Process until smooth.
  • To serve, pile romaine salad high in centre of dinner plate. Garnish with sliced green onions and a few chive sprigs. Serve with sesame ginger dressing.
