Creamy pasta with tuna and colorful vegetables makes for a winning, skillet-easy combination!

2 cups milk
1 2/3 cups hot water
3 tablespoons butter or margarine
1 box Tuna Helper™ creamy pasta
2 medium carrots, cut into 1/8-inch slices (1 cup)
2 cans (5 oz each) tuna, drained
1 cup frozen broccoli cuts, thawed, drained
1 jar (4.5 oz) sliced mushrooms, drained

Steps:

  • In 12-inch skillet, heat milk, hot water, butter, contents of uncooked pasta and sauce mix pouches (from Tuna Helper box), carrots and tuna to boiling over high heat, stirring occasionally.
  • Reduce heat. Cover; simmer 5 minutes, stirring occasionally.
  • Stir in broccoli and mushrooms. Cover; simmer about 5 minutes or until vegetables are tender. Remove from heat; let stand covered 5 minutes (sauce will thicken as it stands).

Times were tough for my newly divorced mom in the 70's. I remember eating creamed tuna on toast with a green salad on the side at least weekly. It was one of my favorite meals, and I had no idea we were eating it out of necessity. Times aren't so tough now, but I still make this about once a month. It's great when you're in a hurry, or have limited supplies on hand. My kids love it too!

2 tablespoons butter
2 tablespoons all-purpose flour
1 ½ cups milk
1 (5 ounce) can chunk light tuna in water, drained and flaked
salt and ground black pepper to taste
4 slices bread, toasted, or to taste

Steps:

  • Melt butter in a small saucepan over medium heat. Stir flour into melted butter until smooth and slowly stream milk into the mixture while whisking continually. Bring mixture to a simmer and cook until thickened, about 5 minutes.
  • Reduce heat to medium-low. Stir tuna into the milk mixture; season with salt and pepper. Cook until tuna is warmed, 2 to 3 minutes.
  • Ladle tuna mixture over toasted bread to serve.

8 ounces bow tie pasta, uncooked
1 lb asparagus, cut into 1 inch pieces
1 cup English pea, frozen
1/4 cup green onion, sliced
1/2 teaspoon salt
2 teaspoons olive oil
1 cup tomatoes, chopped and seeded
1/4 cup lemon juice
2 (6 ounce) cans tuna in water, drained and coarsely flaked
1/2 teaspoon fresh ground black pepper

Steps:

  • Cook pasta according to package directions; drain but reserve 3 tablespoons of the cooking water.
  • While pasta cooks, combine asparagus and peas in a steamer basket over boiling water; cover and steam 3-4 minutes or until asparagus is crisp-tender. Drain.
  • Combine steamed vegetables, onions, salt, and oil in a large bowl.
  • Add pasta, pasta cooking water, tomato, and lemon juice; toss well.
  • Add tuna; toss.
  • Sprinkle with pepper and serve.

Comfort food that is simple to prepare, my Creamy Tuna Pasta is so satisfying! Pasta is tossed through a simple lemon and dill cream sauce and topped with flakes of tender, hot, wood smoked tuna.

180 g linguine pasta (See Note 1)
120 g smoked tuna (See Note 2)
1 tbsp butter (See Note 3)
1 clove garlic, finely chopped
2 tbsp lemon juice (See Note 3 and 4)
2 tsp lemon zest
1/2 cup thickened/heavy cream
1 tbsp fresh dill, finely chopped (See Note 3)
sea salt and freshly ground black pepper (to taste)
pecorino cheese (optional)
green salad and crusty bread

Steps:

  • Put a large saucepan of water on the stove, and bring to the boil.
  • Prepare your ingredients:Flake your tuna into bite-size pieces if necessary.Zest and juice the lemon. Finely chop the dill and garlic.
  • Add a teaspoon of salt to the saucepan of boiling water and add your pasta, stirring regularly to ensure it does not stick together.Cook the pasta - check the cooking time on the packet, but test the pasta prior to that to make sure it is cooked to al dente.Whilst the pasta is cooking, prepare your sauce.
  • In a frying pan on a medium heat, melt the butter and add your finely chopped garlic. Stir for 1-2 minutes, being careful to not let the garlic burn;
  • Add the cream, lemon juice and zest, dill and season with salt and pepper. Cook for 2-3 minutes.
  • Once the pasta is cooked, reserve a little of the pasta water for later, and drain your pasta well.
  • Add your cooked pasta to the sauce, and toss through to combine.If you need a little extra liquid, add some of the reserved pasta water.
  • Add the tuna into the dish. Stir to combine and serve.

1 onion, chopped

3 celery ribs, sliced
1/2 cup ready-to-serve chicken broth

1/4 lb deli ham, cut into strips
1/2 cup heavy cream
1/2 cup grated parmesan cheese

Steps:

  • In a large saucepan, melt butter over medium-high heat. Add onion and cook to 5 minutes or until softened, stirring occasionally.
  • Add carrots, celery, chicken broth,6 and black pepper. Bring to a boil.
  • Reduce heat to low, cover, and simmer 8 to 10 minutes, or until carrots are tender.

1/2 teaspoon salt
1/4 teaspoon pepper
1/3 cup white wine
1 (10 2/3 ounce) can condensed cream of chicken soup

1 teaspoon grated lemon zest

Steps:

  • Cook pasta according to package directions, adding vegetables during last 3 minutes of cooking time; drain and set aside.
