OLD-FASHIONED SOUTHERN SPOON BREAD
Spoon bread has a long history and has a similar texture to a soufflé. It is served with a spoon, hence its name.

- Gather the ingredients.
- Preheat the oven to 350 F. Grease an 8-inch-square baking dish or 1 1/2-quart casserole.
- Combine the cornmeal and salt in a mixing bowl.
- Gradually add the boiling water while whisking out any lumps. Add the melted butter and stir to blend. Let the mixture cool for about 5 minutes.
- Whisk the milk into the cornmeal mixture.
- In a small bowl, beat the eggs thoroughly.
- Whisk the beaten eggs into the cornmeal mixture along with the baking powder. Blend well with a whisk or electric mixer.
- Turn the batter into the prepared baking dish.
- Bake for about 35 minutes or until set and lightly browned.
- Serve the spoon bread hot with plenty of butter.

- Preheat the oven to 400 degrees F (200 degrees C). Butter a 9-inch square baking dish.
- Spread half of the bread in the bottom of the prepared baking dish. Top with raisins, cinnamon, nutmeg, and remaining bread. Sprinkle with more cinnamon and nutmeg and drizzle with melted butter.
- Combine half-and-half, sugar, eggs, vanilla extract, and salt in a large bowl until well mixed and pour over bread. Press down on the bread with a fork to make sure it is saturated with the custard.
- Place the baking dish in a large pan of boiling water and bake in the preheated oven until the center is set, about 1 hour.

- Bring the water and margarine to a boil on the stove or in the microwave. While it is heating, combine the cornmeal, salt and baking powder in a large bowl. Pour the boiling water into the cornmeal mixture. Stir it up quickly with a whisk to prevent lumps. The cornmeal will swell up and absorb the water. Slowly add the milk to the hot cornmeal. If you add it to fast it will wind up lmpy, which is not real bad, but it's better if you try to keep it smooth. So slowly stir in the milk, a little at a time. When all the milk is added, break the eggs into the bowl too. You don't add the eggs before the milk because the hot cornmeal will cook them. Beat up the batter until the eggs are well incorporated. Then turn the batter into a well oiled 2-quart casserole, or 8-inch square pan, or even a ten inch iron skillet. Bake the bread at 375F for abot40 minutes. The top will be nicely browned and the mixture will jiggle a little bit when you shake the pan. Take it out of the oven and serve it hot.

- Mix first two ingredients to make a batter --- add more or less water depending on how thick or thin you want your cornbread patties. The best way would be to mix in small amounts of water at a time to get the consistency you want.
- In a skillet or frying pan bring oil up to medium heat and test 1/2 teaspoon drop of batter, You do not want it to fry too fast. I normally cook mine on #6 and then furn down to #5 on my stove. Drop by tablespoons full and pat out with back of spoon to make a pattie. Turn over when bottom is light brown.
- Serve and enjoy this tasty bread!
SOUTHERN STYLE CORNBREAD
Purists will recoil in horror because as my Texan friend told me "no self respecting Southern woman would ever put sugar in her cornbread recipe" but even she admitted this is good and could not believe there was sugar in it. This bread is thin and crusty yet still tender and moist. It's nice and savory, not sweet like Northern corn breads which tend to taste like cake. This is from Cook's Illustrated.

- Adjust oven rack to lower middle position and heat oven to 450 degrees. Set 8-inch cast-iron skillet with bacon fat (or vegetable oil) in heating oven.
- Measure 1/3 cup cornmeal into medium bowl. Mix remaining cornmeal, sugar, salt, baking powder, and baking soda in small bowl; set aside.
- Pour boiling water all at once into the 1/3 cup cornmeal; stir to make a stiff mush. Whisk in buttermilk gradually, breaking up lumps until smooth, then whisk in egg. When oven is preheated and skillet very hot, stir dry ingredients into mush mixture until just moistened. Carefully remove skillet from oven. Pour hot bacon fat (or melted butter) from the skillet into the batter and stir to incorporate, then quickly pour batter into heated skillet. Bake until golden brown, about 20 minutes. Remove from oven and instantly turn cornbread onto wire rack; cool for 5 minutes, then serve immediately.
- Note: Though it is preferable to make cornbread in a preheated cast-iron skillet, a 9-inch round cake pan or 9-inch square baking pan, greased lightly with butter and not preheated, will also produce acceptable results if you double the recipe and bake the bread for 25 minutes.

- Stir together flour, salt, and yeast in a large bowl. Add 1 cup water and buttermilk. Using your hand as a claw, stir together until no dry bits of flour remain and all clumps are broken up. Do not knead. Cover bowl tightly with plastic wrap; let stand at room temperature until it’s very bubbly and the consistency resembles pancake batter, at least 12 hours or up to 18 hours.
- Turn out dough on a well-floured work surface. (It will be very loose.) Incorporating as little flour from surface into dough as possible, shape it into a taut ball by folding edges in toward middle and repeating until it begins to develop structure and hold its shape, 12 to 16 times. Turn dough seam side down on a clean (not floured) work surface. Heavily sprinkle top with flour. Using a dough scraper, pull the dough across the work surface, rotating it as you drag it, developing tension and forming a taut ball. Coat generously in flour.
- Line an 8-inch proofing basket or bowl with a linen or cotton towel (not terry cloth). Dust the towel generously with flour; sprinkle with cornmeal. Using a dough scraper, lift and carefully invert dough ball into prepared bowl so the smooth, rounded side faces down and the seam faces up. Cover bowl with a kitchen towel. Let stand at room temperature until doubled in size, 1 to 2 hours. Preheat oven to 500°F with rack in lower third position. Meanwhile, place a cast-iron Dutch oven (5 quart or larger) with lid in oven to preheat about 20 minutes.
- Remove hot Dutch oven from oven. Carefully invert dough ball into Dutch oven. Working quickly using a thin, sharp knife, make 3 (about 4-inch-long, 1/4-inch-deep) cuts across the top of the loaf. Cover bread with Dutch oven lid; return to oven. Reduce oven temperature to 450°F. Bake, covered, until loaf has increased in volume and turned a shiny, pale light brown, about 25 minutes. Remove lid. Continue baking until loaf is golden brown and a thermometer inserted in center registers 205°F, 12 to 18 minutes. Transfer to a wire rack; cool 1 hour.
