CREAMY TOMATO BASIL PASTA



Creamy Tomato Basil Pasta image

This creamy tomato basil pasta recipe is a delicious meatless meal that's fast, simple to make, and is perfect for in-season summer tomatoes and fresh basil!

8 ounces uncooked pasta
2 tablespoons butter
1/2 tablespoon flour
3-4 cloves garlic (minced)
1/4 cup dry white wine or chicken/veg broth
1 cup heavy/whipping cream
1/2 teaspoon Dijon mustard (optional)
1/4 teaspoon Italian seasoning
2 medium tomatoes (chopped)
1/2 cup freshly grated parmesan cheese
1/2 cup basil (tear it up) (or more, to taste)
Salt & pepper (to taste)

Steps:

  • Boil a salted pot of water for the pasta and cook it al dente according to package directions.
  • When the pasta is about 10 minutes away from being done, add the butter to a skillet over medium-high heat. Once it melts, make a quick roux by sprinkling the flour in and cook for about 1 minute, stirring fairly often.
  • Add in the garlic, followed by the wine (or broth). Let it bubble until it's reduced by half (approx. 30 seconds to 1 minute).
  • Whisk in the cream, Dijon mustard, and Italian seasoning until you've got a smooth sauce.
  • Stir in the chopped tomatoes. Cook the sauce for another 5 minutes or until the sauce has thickened up a bit.
  • Take the skillet off the heat and stir in the parmesan cheese and basil.
  • Add the drained pasta to the skillet and toss until coated (I usually add a tablespoon or so of the pasta water to the sauce prior to draining it, especially if it's become a tad too thick). Serve immediately with more freshly grated parmesan if desired.

2 cups farfalle pasta, uncooked
1 teaspoon olive oil
1/4 onion, peeled and chopped
1 garlic clove, minced
2 tablespoons sun-dried tomatoes, drained and chopped
7 ounces diced tomatoes (canned or fresh)
black pepper, to taste
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon dried parsley
4 ounces cream cheese
2 tablespoons milk
2 tablespoons parmesan cheese
2 boneless skinless chicken breasts, cut into bite-sized pieces, cooked

Steps:

  • Heat teaspoon of oil over medium-high heat.
  • Add onion and sauté until starting to brown.
  • Add garlic and sun-dried tomatoes; sauté 3 more minutes.
  • Add tomatoes, pepper, and other herbs. Stir well, reduce heat, cover and simmer about 20 minutes.
  • Meanwhile, cook pasta according to directions.
  • Add cream cheese, milk, and parmesan to tomato pot and melt over low heat until cheeses are incorporated.
  • Add chicken and drained pasta, and mix until blended.

This creamy pasta dinner can be made in less than 20 minutes and tastes like it is straight out of your favorite Italian restaurant. Popular with the kids and adults, this dish seems too tasty to be so easy!

1 tbsp butter
5 garlic cloves (minced)
1 tsp Italian seasoning
28 oz crushed tomatoes
1 cup cream
1 cup Romano cheese (grated)
1 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder
1/2 cup chopped fresh basil
16 oz penne pasta

Steps:

  • Prepare the pasta per package directions.
  • Over medium high heat, melt the butter. Add the garlic and Italian seasoning. Flash cook the garlic, about 1 minute, and then add crushed tomatoes. Add heavy cream and bring to a simmer.
  • Add shredded Parmesan cheese, salt, pepper, and garlic powder, then immediately reduce to low heat and stir continuously, until the cheese melts and the sauce is smooth. Then stir in the basil giving it 2-3 minutes to wilt.
  • Remove from heat and toss pasta with the sauce. Garnish with additional parmesan and/or fresh basil. Enjoy!

1 onion, diced
1 clove garlic, minced
1 (14.5 ounce) can Italian-style diced tomatoes, undrained
1 tablespoon dried basil leaves
¾ teaspoon white sugar
¼ teaspoon dried oregano
¼ teaspoon salt
⅛ teaspoon ground black pepper
½ cup heavy cream
1 tablespoon butter

Steps:

  • In a saucepan, saute onion and garlic in olive oil over medium heat. Make sure it doesn't burn. Add tomatoes, basil, sugar, oregano, salt and pepper. Bring to boil and continue to boil 5 minutes or until most of the liquid evaporates. Remove from heat; stir in whipping cream and butter. Reduce heat and simmer 5 more minutes.

2 cups diced tomatoes
1 small onion, finely chopped
6 tablespoons olive oil
2 cloves crushed garlic
6 leaves fresh basil, torn
10 ounces fusilli pasta
3 tablespoons grated Parmesan cheese, or to taste
1 ½ cups crumbled feta cheese
salt and ground black pepper to taste

Steps:

  • Stir tomatoes, onion, olive oil, garlic, and basil together in a bowl.
  • Bring a large pot of lightly salted water to a boil. Cook fusilli in the boiling water, stirring occasionally, until cooked through but firm to the bite, 12 minutes. Drain.
  • Toss warm pasta with feta cheese and Parmesan cheese in a large bowl. Stir tomato mixture into pasta and season with salt and pepper.
