2 cups uncooked penne pasta
2 cups sliced fresh mushrooms
1 cup sliced green onions
2 tablespoons butter
1/2 cup white wine or chicken broth
1 teaspoon minced garlic
1 tablespoon all-purpose flour
1/3 cup water
1 cup heavy whipping cream
2 cups cubed cooked chicken
2 tablespoons capers, drained
1/4 teaspoon salt
1/8 teaspoon pepper
Shredded Parmesan cheese

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large skillet, saute mushrooms and onions in butter for 4-5 minutes or until tender. Add wine or broth and garlic. Bring to a boil; cook until liquid is reduced by half, about 5 minutes., Combine flour and water until smooth; gradually add to mushroom mixture. Bring to a boil. Reduce heat; cook and stir for 2 minutes or until thickened. Stir in cream. Bring to a boil. Reduce heat; simmer, uncovered, for 4-5 minutes or until heated through. , Drain pasta. Add the pasta, chicken, capers, salt and pepper to cream sauce. Cook for 3-4 minutes or until heated through. Sprinkle with Parmesan cheese.

I got this recipe from my ex-husbands cousin Paula. I always liked her the most :) This is a really yummy dish. The ingredients may sound a little different but they blend so great.

1 1/2 cups heavy cream
4 tablespoons butter
1/2 teaspoon salt
1/8 teaspoon cayenne
1/8 teaspoon nutmeg
1/4 cup fresh grated parmesan cheese
1/4 cup chopped fresh parsley
1/4 cup chopped fresh basil
1/4 cup chopped fresh mint leaves
1/4 cup chopped fresh chives
1 (16 ounce) package angel hair pasta
2 1/2 cups cooked chicken breasts

Steps:

  • Combine cream, butter, salt, nutmeg and cayenne in a saucepan and simmer 15 minutes, or until sauce is slightly reduced and thickened.
  • While the sauce is reducing, get the water ready for the pasta and cook as directed.
  • Whisk in Parmesan cheese and herbs to the cream mixture and simmer for another 5 minutes.
  • Add cooked chicken to the cream mixture.
  • Serve pasta topped with the creamy herb and chicken mixture.
  • Serve with a salad and crusty bread. Don't forget the wine :).

12 ounces spaghetti, fettuccine or linguine
4 tablespoons unsalted butter
1 tablespoon minced fresh rosemary, or 1 teaspoon dried
1 cup heavy cream
Salt and freshly ground black pepper
Freshly grated nutmeg, to taste
1/2 cup freshly grated Parmesan cheese (or to taste)
2 tablespoons minced fresh parsley

Steps:

  • In a large pot of boiling salted water add the spaghetti and cook until it is al dente. Meanwhile, in a large skillet set over moderately low heat, melt the butter, add the rosemary and cook it, stirring, for 1 to 2 minutes. As soon as the pasta is cooked, drain and add it to the pan. Add the cream, salt, pepper and nutmeg. Toss to coat and let reduce 1 to 2 minutes, gently stirring, or until lightly thickened. Add Parmesan to taste, toss to combine and transfer to serving dish. Sprinkle with parsley.

In this simple, springy pasta, milky ricotta thinned out with a little starchy pasta cooking water makes for a saucy, soupy dish that's seasoned with loads of black pepper and herbs. For the best flavor, use at least three different kinds of herbs, break out some nicer olive oil and look for fresh ricotta. Lemon lovers can grate in the zest of half a lemon as well.

1 pound short pasta, such as shells, cavatappi, chiocciole, farfalle, ditali or wagon wheels
12 ounces fresh, whole-milk ricotta (about 1 1/2 cups)
3/4 cup freshly grated Parmesan, plus more for serving
1/2 cup extra-virgin olive oil, plus more for serving
1 tablespoon coarsely ground black pepper, plus more for serving
2 1/2 cups coarsely chopped soft herbs, such as basil, chives, fennel fronds, parsley, mint, tarragon, chervil or dill (try for a combination of at least 3 kinds)

Steps:

  • Bring a large pot of well-salted water to a boil over high heat. Add the pasta and cook until al dente, according to package instructions. Reserve 2 cups pasta cooking water, then drain the pasta.
  • In the same pot, make the sauce: Add ricotta, Parmesan, olive oil, pepper and a large pinch or two of salt, and stir until well combined.
  • Add 1 cup pasta water to the sauce and stir until smooth. Add the pasta and herbs, and continue to stir vigorously until the noodles are well coated. Add more pasta water as needed for a smooth, soupy sauce. Taste and add more salt if needed.
  • To serve, spoon the pasta into bowls and finish with more Parmesan, olive oil and pepper.

I came up with this recipe when trying to figure out what to do with leftovers from last night's beer butt chicken. Everything in here is fresh - from the organic chicken to the bright herbs from my garden. One of the reasons it came out so well, I think, is that the herbs in the pasta are the same one's that were used when roasting the chicken, so it was already infused with the flavors. You could use a store bought rotisserie chicken to make life really easy. I didn't really measure anything, so this is a loose approximation...

3 large garlic cloves, rough chopped
1/2 small onion, finely minced
1/2 small red bell pepper, small dice
2 teaspoons olive oil
1 teaspoon butter
1/2 cup white wine
2 tablespoons fresh basil, minced
2 tablespoons fresh oregano, minced
2 teaspoons fresh rosemary, minced
1 large tomatoes, diced
1 1/4 cups chicken broth, preferably homemade
1/2 teaspoon pepper
salt
2 cups cooked chicken, cubed
1/2 cup heavy cream
1/3 lb penne pasta, cooked
1 tablespoon fresh parsley, minced

Steps:

  • Place garlic, onion, bell pepper, olive oil and butter in a 3 qt saucepan, cook over medium heat until onion is translucent and pepper is soft, about five minutes, stirring frequently so it doesn't scorch.
  • Add wine, stir, let simmer about three minutes to eliminate the alcohol.
  • Add basil, oregano, rosemary and tomato, simmer for five minutes.
  • Add broth and pepper, then salt to taste. Return to boil and then simmer for three minutes.
  • Add chicken, return to boil and simmer for five minutes to allow flavors to meld.
  • Add cream, stir well.
  • Add cooked pasta and parsley, stir to combine. Adjust salt to taste and serve immediately in pasta bowls.
  • The sauce will be thin, so serve this with spoons and a good loaf of crusty french bread to mop it up.

This cozy pasta is the perfect place to use up any hard-stem herbs like sage, thyme or rosemary that are languishing in your fridge. Add the herbs and a cinnamon stick to a pot of heavy cream. As they bubble together, the cream takes on a surprising but subtle herbaceousness. Use it to sauce pasta noodles and winter greens. If you don't have the herbs listed, leave them out or swap in marjoram or bay leaves, or even dried chile, lemon peel, garlic, shallot or leeks. The method of infusing cream with flavorings, then using it to sauce pasta, is open to adaptation. 1 1/2 cups heavy cream
3 sage leaves
3 sprigs thyme or oregano
1 small rosemary sprig
1 cinnamon stick (or a grating of nutmeg)
Black pepper
1 pound linguine, fettuccine or another long noodle
1 bunch dark leafy greens, such as kale, mustard greens, broccoli rabe or mature spinach, stems removed and cut or torn into 2- to 3-inch pieces

Steps:

  • Bring a large pot of salted water to a boil. In a small saucepan, combine the heavy cream, sage, thyme, rosemary, cinnamon and a pinch of salt and pepper. Bring to a simmer over medium and cook until the cream has thickened slightly and is reduced to about 1 cup, 12 to 15 minutes, adjusting the heat as needed to maintain a gentle simmer. Remove from heat until the pasta's ready.
  • When the cream is at the halfway point, add the pasta to the boiling water and cook until a minute or 2 shy of al dente. About 3 minutes before draining the pasta, add the greens to the water. Reserve 1/2 cup pasta water, then drain the pasta and greens with a colander and return to the pot.
  • Place the just-used colander over the pot of pasta, then strain the infused cream through the colander into the noodles. (Discard or compost the herbs and cinnamon stick.) Add the 1/2 cup pasta water to the pasta, set over medium-high heat, and cook, tossing, until the sauce glosses the noodles, 3 to 4 minutes. Season to taste with salt and pepper.

  • Add remaining 2 tbsp of olive oil and garlic, cook for 30-seconds to 1-minute. Add pasta, cooking water, fresh herbs, Parmesan cheese and lemon juice . Toss to coat, serve with freshly cracked pepper and additional cheese.
