This is similar to marshmallow fluff in texture, I use this on my recipe#120178 it will also work on any cake, use any flavor extract for this and add in food colouring of choice if desired, I like to use coconut extract and add in shredded coconut to the icing and sprinkle more on top of the cake for decoration :)

2 egg whites, room temperature (use whites from exta large or jumbo eggs)
3/4 cup white sugar
1/3 cup light corn syrup
2 tablespoons water
1/4 teaspoon cream of tartar
1/8 teaspoon salt
1 1/2 teaspoons vanilla extract (or use extract flavor of choice)
food coloring (optional)

Steps:

  • Combine the egg whites, sugar, corn syrup, water, cream of tartar and salt in the top of a double boiler over water that is at a hard boil.
  • Start beating immediately with a beater until the mixture stands at stiff peaks (this may take a while so do not give up!).
  • Remove from heat and add in vanilla or almond extract and food colouring (if using) continue to beat until the mixture is thick enough to spread easily on a cake.

If you have a microwave oven, this recipe will become as basic for you as baked potatoes. It is SO easy, yet tasty and impressive, too. The onions may also be baked in a conventional oven.

4 large sweet onions, preferably Vidalias
salt
fresh ground black pepper
butter
shredded cheddar cheese

Steps:

  • Peel onions and cut in half horizontally. Place in a 1-quart casserole dish.
  • Top each onion half with salt and pepper to taste. Add a pat of butter, using 1/2 teaspoon to 1/2 tablespoon per onion.
  • Cover and cook at 100% power (HIGH) for 8 to 10 minutes, or until onions are soft.
  • Uncover and top each half with shredded cheese to taste.
  • Pop back in microwave and zap just long enough to melt the cheese.
  • If you prefer, bake the onions one hour in a conventional 350-degree oven, topping with cheese when baking has finished.
  • An alternate topping: Prepare onions as above, but top each half with 1/2 tablespoon EACH butter and brown sugar.

Green Bean Casserole is a must for Thanksgiving dinner, some think. Your local Asian grocer may carry fried red onions (shallots), but if not, the only way to make it gluten-free is to fry your own onions. If you don't own a mandoline or v-slicer, this might be a good time to purchase one. The good news is that the rest of the ingredients are store-bought, thanks to canned french-style green beans and a vegan gluten-free mushroom soup from Imagine Foods.

Yield 1 Pile of fried onions for going into and on a green

Number Of Ingredients 5

1 large onion
1 1/2 cups soymilk (or other non-dairy milk)
1 1/2 cups all-purpose flour (Bob's Red Mill makes a gluten-free A-P flour)
salt, to taste
oil, for frying

Steps:

  • Slice onions with a mandoline.
  • Soak in milk for 8 minutes.
  • Drain.
  • Heat oil to 375 degrees over medium heat for 10 minutes.
  • Toss onions with flour and salt and separate on parchment paper.
  • Let sit while oil heats.
  • Fry by spoonful until golden brown.
  • Drain.
  • When cool, transfer to a super-airtight container.
