1 1/2 pounds large shrimp (peeled and deveined, tails removed)
½ teaspoon kosher salt
¼ teaspoon black pepper
4 Tbsp butter
4 Garlic cloves (minced)
2 Tbsp all-purpose flour
1 Cup half & half
1 Lemon (sliced)
1/2 Cup parmesan cheese (plus more for garnish)
Zest of 1 lemon
Chopped parsley as a garnish

Steps:

  • Toss the shrimp with the salt and pepper in a medium-sized bowl, set aside.
  • In a large pan over medium heat, melt the butter.
  • Add the shrimp and saute for 2 minutes until they start to turn pink.
  • Add the garlic and cook for 1 more minute, stirring constantly until fragrant.
  • Add the flour and stir to coat the shrimp. Add the lemon slices to the pan.
  • Slowly, pour in the half & half, stirring constantly and cooking until the sauce thickens, 2-3 minutes.
  • Add the parmesan cheese and stir to incorporate. Cook for 30 seconds to 1 minute more and remove from heat. Taste and adjust seasoning if necessary.
  • Stir in the lemon zest. Add more parmesan, cracked pepper and chopped parsley as an optional garnish. Serve over pasta, rice, polenta, or however you wish!

8 ounces whole-wheat fettuccine
1 tablespoon extra-virgin olive oil
12 ounces peeled and deveined raw shrimp (21-25 count)
2 tablespoons unsalted butter
1 tablespoon finely chopped garlic

4 cups loosely packed arugula
¼ cup whole-milk plain yogurt
1 teaspoon lemon zest
2 tablespoons lemon juice

Steps:

  • Bring 7 cups of water to a boil. Add fettuccine, stirring to separate the noodles. Cook until just tender, 7 to 9 minutes. Reserve 1/2 cup of the cooking water and drain.
  • Meanwhile, heat oil in a large nonstick skillet over medium-high heat. Add shrimp and cook, stirring occasionally, until pink and curled, 2 to 3 minutes. Transfer the shrimp to a bowl.
  • Add butter to the pan and reduce heat to medium. Add garlic and crushed red pepper; cook, stirring often, until the garlic is fragrant, about 1 minute. Add arugula and cook, stirring, until wilted, about 1 minute. Reduce heat to low.   • Make the pasta: Cook the pasta in a large pot of boiling salted water until tender but still firm to the bite, stirring occasionally to prevent sticking, about 8 minutes. 500 g/1lb tagliatelle (or pasta of your choice)
3 tbsp butter
500 g/1lb shrimp/prawns (deveined and shelled)
4 garlic cloves (crushed)
1 cup/250ml cream
2-3 tbsp fresh lemon juice
handful fresh parsley (finely chopped)
salt (to taste)
pepper (to taste)

Steps:

  • Cook the pasta in a large pot of salted boiling water until al dente. Drain and reserve 1 cup of cooking water.
  • In the meantime, melt 2 tablespoons of butter in a large skillet/frying pan and cook the prawns in batches until golden brown and opaque. Season the prawns to taste.
  • Remove from the pan and set aside.
  • Add the remaining butter and garlic and cook for a few seconds, until the garlic is fragrant then pour in the cream, lemon juice (start with 2 tablespoons and add more if you wish), parsley and season to taste.
  • Allow to simmer over gentle heat until the sauce coats the back of a spoon. Add the shrimp back in and adjust seasoning.
  • Add the pasta and a little of the cooking water and toss until the pasta is coated in the sauce.

And, I also don't have too bad of luck with some frozen scallops. As these are poached in this dish rather than seared, the frozen scallops will work ok, if fresh are not available. The spinach fettuccini or linguini is really the key to bring all the flavors together. The last time I used fresh pasta which really made a big difference. My Dad and friends love this dish and request it all the time. It is creamy and rich, but the zucchini and lemon really lightens the richness.

8 ounces spinach fettuccine (linguini will also be a nice substitute, but spinach really is what makes this dish)
1/2 shrimp, I used ex-large, but use whatever is on sale (un-cooked, peeled and deveined)
1/2 lb sea scallops, if you can't get sea scallops, bay scallops will be just fine
2 cups zucchini, coarse shredded (I just use my cheese grater rather than dirtying up the food processor, but both work)
1 small onion, cut in quarters and thin sliced
1 -1 1/2 teaspoon garlic, minced
1/2 cup dry white wine
1 cup vermouth
1 cup heavy cream
1 lemon, zested
1 tablespoon fresh lemon juice
2 tablespoons butter
1 teaspoon fresh dill (feel free to add (to taste)
salt
pepper
fresh lemon slice
dill

Steps:

  • Vegetables -- In a medium size sauce pan, heat to medium and add the butter. Then add in the onion, garlic and saute 1-2 minutes. Add in the zucchini and cook just another minute until the zucchini begins to slightly soften. It only takes a minute or less. Remove the vegetables immediately to a bowl and cover to keep them warm.
  • Scallops and Shrimp -- Add the wine and vermouth to the same pan and bring to a light boil (medium / medium high heat). Add the shrimp and scallops and cook 1-2 minutes. Once the shrimp begin to turn pink and curl immediately take off the heat and use a slotted spoon and remove the shrimp and scallops to the bowl with the zucchini and onion. Cover with foil to keep warm.
  • Sauce -- Return the pan back to stove and add the cream to wine and vermouth sauce and bring to a boil. Reduce the heat to medium and simmer about 10-12 minutes until reduced by half. This is the perfect time to cook your pasta. Once the sauce is finished, remove from the heat and add in the lemon zest and lemon juice. Add the sauce to the bowl with the vegetables and seafood and toss well. The sauce will heat everything back up.
  • Pasta -- As the sauce cooks, make your pasta according to package directions. Drain well.
  • Finish -- In a large serving bowl or serving platter, toss the pasta with the seafood sauce. Season with the dill, salt and pepper to taste.
  • Serve -- Garnish with some fresh dill and lemon slices. Serve some crusty bread and if you want some fresh greens for a salad. ENJOY!

1 tablespoon olive oil
1 tablespoon garlic
2 cups heavy cream
2 lemons, zest of
2 lemons, juice of

1 cup halved cherry tomatoes
1/2 cup chopped fresh arugula
cooked shrimp (quantity desired by cook)
parmigiano-reggiano cheese (to garnish)
1 lb of your favorite macaroni (I used Cellentani)

Steps:

  • Bring water to boil with salt.
  • Add broccoli for 3 minutes to cook. Remove and blanch in cold water.
  • Add pasta to water and cook to desired taste.
  • Meanwhile, sauté 1 TBS garlic (I probably used 2 TBS I like a lot of garlic) in olive oil, cooking 1 minute on low heat.
  • Add 2 cups heavy cream and reduce over medium heat.
  • Add juice of 2 lemons and zest of 2 lemons along with 2 TSP salt and 1 TSP pepper.
  • Allow to reduce by half 10-12 minutes.
  • When sauce is close to ready, add cooked shrimp to sauce just to warm the shrimp.
  • Drain pasta.
  • Toss in cherry tomatoes, broccoli, arugula and the Lemon Cream Sauce.
  • Garnish with fresh Parmiganio Reggiano.
  • Serve immediately.

¾ (16 ounce) package spaghetti
1 pound uncooked medium shrimp, peeled and deveined
salt and ground black pepper to taste
2 tablespoons finely chopped shallots
1 tablespoon crushed garlic
¼ cup chicken broth
1 medium lemon, zested and juiced
½ cup heavy cream
5 large basil leaves, chopped
1 pinch red pepper flakes

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes.
  • While the pasta is cooking, heat oil in a large skillet over medium heat. Season shrimp with salt and pepper; add to the pan and cook 30 seconds per side. Remove to a plate.
  • Add shallots to the skillet and cook for 2 minutes. Add garlic and cook until fragrant, about 1 minute. Stir in chicken broth, lemon zest, and 1/2 of the lemon juice; heat for 2 minutes. Reserve remaining lemon juice for another use.
  • Add cream and bring to a simmer. Return shrimp to the skillet and cook until heated through and pink, 2 to 3 minutes. Add basil.
  • Drain spaghetti, reserving 1/4 to 1/2 cup pasta water.
  • Add spaghetti to the skillet. Add pasta water as needed and pepper flakes; toss to coat. Season with pepper if desired.
