- Preheat oven to 400 degrees F and line a baking sheet with parchment paper.
- Mix all ingredients (except buns) together in medium bowl.
- Slice Kaiser buns in half and top each half with tuna mixture, dividing equally among all 4 buns halves.
- Divide 1/2 cup of garnish cheddar cheese in 4 and sprinkle on top of each half bun, dividing evenly between all 4.
- Bake for 10 minutes, then turn up to broil (500) for 2 minutes or until cheese is bubbly. Serve warm with raw veggies or soup.

Steps:
- Drain the tuna then place in a mixing bowl.
- Add finely diced onion and celery, mayonnaise, lemon juice and all the herbs and spices.
- Mix well, taste and adjust seasoning if necessary. Place slices of bread on a sheetpan then toast under a hot grill/broiler.
- Flip over then top half the slices with tuna filling, cheese and sliced tomatoes.
- Place back in the oven and allow the cheese to melt.
- Remove from the oven, sandwich with the remaining slices of bread and serve.

- For the tuna: In a large bowl, break up the tuna with a fork and add the mayonnaise, lemon juice, red onions, green onions, basil, cilantro, parsley, mint and vinegar. Mix well to combine. Taste and season with salt, pepper and extra lemon juice and mayonnaise as desired.
- For the sandwich: Brush the softened butter on 1 side of each slice of bread, setting aside some butter for cooking the sandwiches. Place the bread buttered-side down on a baking sheet. Divide the tuna among 4 slices of bread and top each with 2 slices of cheese. Complete the sandwich with the remaining 4 slices of bread, buttered-side up.
- Heat a large nonstick skillet over medium-high heat and add half of the remaining butter. When the butter melts, place 2 sandwiches in the pan and cook until toasted and golden brown on each side. - In a medium bowl, flake the tuna finely with a fork. Add the celery, scallions, and dill, and continue mixing and fluffing with the fork until combined. Add the lemon juice, 1 1/2 teaspoons salt, and 3/4 teaspoon pepper. Combine the mayonnaise and anchovy paste, if using, and mix into the tuna.
- Preheat the broiler. Toast the bread in a toaster and place the slices in a single layer on a sheet pan. Spread a quarter of the tuna mixture thickly and evenly on each piece of bread, covering the entire slice. Sprinkle the cheese evenly on the 4 sandwiches, covering the tuna completely. - Place broiler rack in position under broiler and turn on broiler.
- Saute garlic,celery and onion in a small amount of oil or butter in a skillet. Cook until onion is just tender.
- Drain tuna and add to skillet along with ricotta cheese, broccoli, mayonnaise, and lemon juice. Cook long enough to warm ingredients through, perhaps 3 minutes, stirring frequently.
- If you like your bagels to be a bit toasted, place them under broiler while tuna mixture is warming up.
