COWBOY BEANS AKA CHURCH BEANS
This is a recipe from a neighbor of our when I was a little girl. She was a great cook and I remember her being thrilled to find out these did great in the newest kitchen appliance, the Crock Pot! There are several recipes close, but this is Thelma's.

EASY COWBOY BEANS
My family eats this as a main dish, usually with cornbread, but it's a wonderful side dish for picnics, potlucks, and camping. We like it sweet, so we add another 1/4 cup of brown sugar, but you could also spice it up by adding jalapenos or another kind of chilies. It's even good cold! It freezes very well, too.

- Cook bacon until crispy. Drain and crumble. Put in large pot.
- Brown ground beef and onions together. Drain. Add to pot. (Bacon can be cooked with the ground beef and onions if cut into chunks. I use kitchen shears to just cut through all the slices--into about 1-1/2" chunks.).
- Add the rest of the ingredients to the pot. DO NOT drain the beans! Stir everything together.
- Bring to a boil, then turn down heat and simmer for about an hour. If you're going to let it simmer, don't add the lima beans right away, as they tend to fall apart.
- These are generally better the next day, but are might fine the same day!

COWBOY CHILI AND BAKED BEAN POT

- Heat 1 tablespoon oil in a large Dutch oven over medium-high heat. Add the bacon, cook until browned, and remove with slotted spoon. Add the beef, brown well, and then add the potatoes, onions, chiles, carrot, garlic, chile powder, and bay leaf. Season the mixture liberally with salt and pepper, and cook 10 minutes more, stirring frequently.
- Add the beer and stir about 2 minutes, or until the beer almost cooks out completely. Stir in the stock, thick Worcestershire sauce, baked beans, and tomatoes, and thicken to desired consistency, about 20 to 45 minutes over a steady simmer for loose to super-thick chili. Cool and store for make-ahead meal.
- Reheat over medium heat with a little water, if necessary, to loosen up the chili, so it will heat through without scorching. Serve in shallow bowls topped with green onions.

- Place beans in a dutch oven: add water 2 inches above beans.
- Bring to a boil, boil 1 minute.
- Cover and remove from heat and let stand 1 hour Drain Bring beans and 8 cups water to a boil in dutch oven Cover, reduce heat and simmer 1 hour until beans are tender Add onion, and the next 7 ingredients simmer 30 minutes Add tomatoes simmer 30 minutes and serve.
COWBOY BEANS
My husband makes this in the crock pot and cooks all day long. We usually serve it a parties. It's delicious. The last time he put hot dogs and sausage in it and it didn't turn out very good. So we'll be keeping to the original recipe! We like to use Scoops tortilla chips and eat it as a dip as well. We've substituted ground beef for ground deer meat.

Steps:
- Preheat oven 350 degrees.
- In a saucepan brown the hamburger meat and the onion. Drain set aside.
- In a Pam sprayed casserole dish add the beans, ketchup, mustard, and brown sugar mixing well.
- Add the browned meat mixture to the bean mixture and stir mixing well.
- Cook beans until throughly hot maybe 15 minutes then add the velveeta cheese on top put back into stove until cheese is melted.
- Take out and stir.
- Enjoy!
- I had to really guess on measurements and cooking times because with this recipe I never measure exact amount. I know that I use way more Velveeta Cheese. I guess you can play with the recipe until you find your personal likings.

This is a great recipe for Cowboy Beans fixed in the slow cooker; and it is so EASY. It is from the "Fix-It and Forget-it Recipes for Entertaining". A friend of the family shared this recipe with me in the late 80's and it's been my go to recipe for baked beans for many a pot luck dinner. I often do it in the oven but it also works great in the crock pot.

- Preheat oven to 350 degrees F.
- Cook bacon, drain on paper towels and set aside to cool. Drain skillet.
- Cook ground beef, using same skillet as the bacon, draining well about half way through. Add onion and continue to cook until ground beef is completely done and onions are softened and opaque. Drain well.
- While ground beef is cooking, drain the kidney beans and butter beans. Discard the juice.
- Chop the bacon.
- When ground beef is done and onions are tender, mix all of the ingredients together in a large bowl. Mix well.
- Pour into a 9x13 or 12x15 casserole sprayed with non-stick cooking spray. Bake in 350 F oven for 1 hour or until most of the liquid is cooked out, and thickened.
