GRILLED CHICKEN PENNE AL FRESCO



Grilled Chicken Penne al Fresco image

Preparing a tomato-garlic sauce from scratch in the microwave will fill your kitchen with the aromas of an upscale Italian restaurant.

Yield 8 servings of about 1 cup, excluding optional ingredients

Number Of Ingredients 11

1 tbsp (15 mL) Garlic & Herb Rub or 4 garlic cloves, sliced
2 cups (500 mL) grape or cherry tomatoes
3 cups (750 mL) uncooked mezze penne pasta
3 cups (750 mL) chicken broth
½ cup (125 mL) dry white wine such as Chardonnay
½ tsp (2 mL) each salt and coarsely ground black pepper
1¼ cups (300 mL) lightly packed fresh basil leaves, divided
1 oz (30 g) Parmesan cheese, grated (about ¼ cup/60 mL cup packed)
2 cups (500 mL) diced grilled chicken breasts
oil for spritzing
Additional grated fresh Parmesan cheese and coarsely ground black pepper (optional)

Steps:

  • Spray Deep Covered Baker with olive oil using the Kitchen Spritzer. Add rub or sliced garlic and tomatoes. Microwave, covered, on HIGH 4-5 minutes. Add pasta, broth, wine, salt, and black pepper.Return baker to microwave; cover and microwave on HIGH 10-12 minutes or until pasta is tender, stirring after 5 minutes. Meanwhile, use the Herb Mill to grate basil, reserving 2 tbsp for garnish. Grate the cheese with the Microplane® Adjustable Fine Grater.Carefully remove the baker from the microwave and remove the lid, lifting it away from you. Add the basil, cheese, and chicken to baker; mix well. Garnish with reserved 2 tbsp basil, additional Parmesan cheese, if desired.

This fast and easy dish is a wonderful way to keep your kitchen cool in the hot months while serving up a delicious meal! Adapted from Pampered Chef.

Number Of Ingredients 11

4 garlic cloves, peeled
2 cups grape tomatoes (can probably even use a drained can of tomatoes) or 2 cups cherry tomatoes (can probably even use a drained can of tomatoes)
3 cups penne pasta (I use mezze which is the small penne )
3 cups chicken broth
3/4 cup dry white wine (I use Pinot Grigio)
1/2 teaspoon salt
1/2 teaspoon fresh coarse ground black pepper
1 1/4 cups fresh basil leaves, lightly packed, divided
1 ounce parmesan cheese, grated (about 1/4 cup packed)
2 cups grilled chicken breasts, diced (if you dont have leftovers just cook up a breast or two using any quick method, I cut up and mw for )
additional grated fresh parmesan cheese (optional)

Steps:

  • Spray a mw safe lidded casserole. Add garlic and tomatoes. Cover; microwave on HIGH 4-5 minutes or until tomatoes begin to burst, stirring after 2 minutes. Crush tomatoes with fork and add uncooked pasta, broth, wine, salt and black pepper.
  • Return baker to microwave; cover and microwave on HIGH 16-18 minutes or until pasta is tender, stirring after 10 minutes.
  • Meanwhile, grate cheese and coarsely chop basil, reserve about 1/4th for later.
  • Carefully remove baker from microwave and remove lid, lifting away from you. Add remaining basil, cheese and chicken to baker; mix well.
  • Garnish with reserved basil, additional Parmesan cheese and black pepper, if desired.
  • Tips: An additional 3/4 cup chicken broth can be substituted for the wine, if desired.
  • Any tube-shaped pasta requiring 9-11 minutes cook time, such as penne or rigatoni, can be substituted for the mezze penne pasta.
  • To grill chicken in the Grill Pan, season 2 chicken breasts, about 6 oz each, with salt and black pepper. Heat Grill Pan over medium-high heat 5 minutes. Spray pan with oil. Cook chicken 4-6 minutes or until grill marks appear. Turn chicken over; cook 4-6 minutes or until center of chicken is no longer pink and Pocket Thermometer registers 170°F.

1 pound penne
3 cloves garlic, minced
1 whole medium onion, chopped finely
3 tablespoons butter
2 tablespoons olive oil
1 cup vodka
One 14-ounce can tomato puree or tomato sauce
1 cup heavy cream
1 generous pinch red pepper flakes, plus more if needed
1/4 to 1/2 teaspoon salt
Freshly ground black pepper
Grated Parmesan, for serving

Steps:

  • Cook the pasta according to package directions.
  • Saute the garlic and onions in 2 tablespoons butter and the olive oil in a saucepan over medium heat until soft. Pour in the vodka, being careful if your stove has an open flame (remove the pan from the heat before adding). Cook and reduce for 2 to 3 minutes, then pour in the tomato puree. Stir the mixture until it's thoroughly combined, then reduce the heat to low. Pour in the heavy cream. Stir to combine, then turn heat to the lowest simmer possible. Sprinkle in the red pepper flakes and add salt and pepper to taste. Finally, stir in the remaining 1 tablespoon butter. Pour the drained pasta into the sauce and toss to combine. Sprinkle on the Parmesan, then sprinkle on more red pepper flakes if desired.

1 1/2 lbs Italian sausage, I used sweet, and cut out of the links into bulk style
1 cup diced yellow onion
1 -2 tablespoon olive oil
1 cup white wine
28 ounces whole tomatoes, San Marzano if you can find them
1 cup sun-dried tomato, drained and chopped
1 teaspoon red pepper flakes
1 tablespoon oregano
1 tablespoon basil
3 cups heavy cream
1 cup parmesan cheese, grated
1 lb penne or 1 lb ziti pasta
fresh basil

Steps:

  • Saute sausage in 1 T. olive oil until thoroughly cooked. Drain and reserve.
  • Add 1 T. olive oil and saute onion until translucent.
  • Add white wine and reduce by half.
  • Add both kinds of the tomatoes,spices,herbs and cooked sausage and cook 45 minutes.
  • Add cream and Parmesan and cook until thickened.
  • Cook pasta according to package directions. Toss pasta with sauce until coated. .
  • Garnish with fresh basil and serve.

  • Option- cook chicken in deep covered baker 6-7 min and chop with salad chopper. rub oil on Deep Covered Baker. Slice garlic or crush with garlic press into baker. Add tomatoes. Cover, microwave on High 4-5 min. Stir after 2 min. Add Pasta, broth, wine, salt and pepper. Cover and microwave on HIGH 16-18 min or until pasta is tender, stirring after 10 min. Meanwhile, coarsley chop basil. Reserve 2 tbsp for garnish. Grate cheese. Remove baker from microwave and remove lid. Add remaining basil,cheese and chicken to baker; mix well.   • Heat oil over medium high heat until hot. Add sausage and onions. Cook and break up sausage until almost no pink is showing. Add garlic and cook until sausage is cooked.
  • Use wine to deglaze pan then turn heat to medium low. Stir in tomato paste, then add heavy cream. Bring to a low simmer and whisk gently until tomato paste is blended in. The sauce will be thick. I usually stir in some pasta water to loosen up the sauce. You could also add more cream. Your choice!
  • Stir in sun dried tomatoes and simmer for a few minutes. When almost done, stir in the chopped basil.
