8 mushrooms, quartered
6 spears asparagus, chopped
Salt and freshly ground black pepper
12 large eggs
1/2 cup grated Monterey Jack
1/4 cup grated Parmesan
2 dashes hot sauce
2 tablespoons butter
1 medium onion, halved and sliced thin
1 cold baked potato, diced
1/4 cup chopped green olives with pimentos
2 jarred roasted red peppers, sliced thin
8 fresh basil leaves, chopped

Steps:

  • Preheat the oven to 450 degrees F.
  • Drizzle olive oil over the mushrooms and asparagus on a baking sheet, sprinkle with salt and pepper and roast until a nice color is achieved, about 12 minutes. Set aside.
  • Beat together the eggs with some salt and pepper in a bowl. (Do not over-beat; just mix until the eggs mostly come together.) Stir in the Monterey Jack, Parmesan and hot sauce and set aside.
  • In a large ovenproof nonstick skillet, melt the butter over medium-high heat. Add the onions and cook, stirring frequently, until soft and golden brown, several minutes. Add the diced potatoes, sprinkle with salt and pepper and stir to cook for a couple of minutes. Finally, add the asparagus, mushrooms, olives and roasted red peppers and cook, stirring, until everything is hot.
  • Make sure all the ingredients are evenly distributed across the bottom of the skillet, then pour in the egg mixture so that it evenly coats everything. Let it sit on the burner for 30 to 45 seconds to set the edges, then put the skillet in the oven. Cook, watching it carefully, until the eggs are set but not very brown on top, 10 to 12 minutes.
  • Slide the frittata out of the skillet and onto a cutting board. Sprinkle on the basil and slice into wedges with a long serrated knife.

The frittata is an Italian dish that makes good use of whatever ingredients you have on hand. Sometimes referred to as an "egg pizza," the frittata has many variations. Try an all-vegetable version, or add chopped meat, seafood, or a combination of all three!

½ cup ( 125 mL ) water
Fresh or dried herbs, to taste (optional)
1/8 tsp ( 0.5 mL ) salt
1/8 tsp ( 0.5 mL ) pepper
2 cups ( 500 mL ) chopped vegetables, meat, poultry, or seafood, or a combination
½ cup ( 125 mL ) shredded cheese

Steps:

  • Preheat oven to broil.
  • Whisk eggs, water, herbs, salt and pepper in medium bowl. Set aside.
  • Lightly spray 10-inch (25 cm) non-stick ovenproof skillet or cast iron pan with cooking spray. Heat skillet over medium heat. Add filling ingredients, sauté or heat, stirring frequently.
  • Pour in egg mixture. As eggs set around edge of skillet, using spatula, gently lift cooked portions to allow uncooked egg to flow underneath. Cook until bottom is set and top is almost set, about 8 to 10 minutes.
  • Sprinkle cheese over top. Place skillet under preheated broiler for 2 or 3 minutes to melt cheese and puff up frittata or cover with lid and cook for a couple minutes on stovetop.
  • Loosen around edge of frittata. Cut into wedges and serve.

This looks so nice when it's done, with the cheese bubbling on top. And it tastes as good as it looks! You could also use left over cooked potatoes, sliced, instead of cooking them especially for this dish.

2 potatoes, cubed
6 strips bacon, cut into bite-sized pieces
1 onion, chopped
4 mushrooms, sliced
4 eggs, beaten
1/2 cup cheddar cheese, grated
1 pinch dill or 1 pinch other herbs
salt and pepper
1 teaspoon olive oil

Steps:

  • Boil potatoes in a small saucepan until tender.
  • Meanwhile, heat oil in a pan and fry the onions, mushrooms and bacon until onions are clear and bacon is cooked.
  • Drain potatoes and put into frying pan, cooking for another 2 minutes.
  • Make sure ingredients are spread evenly over the pan and then pour eggs evenly over the base.
  • Season with herbs, salt and pepper, to taste.
  • Let cook for 2 minutes or until eggs start to set.
  • Sprinkle cheese over the top and bake under a grill until eggs are cooked and cheese is bubbling and brown (3-5 minutes).
  • Serve with a tall glass of orange juice and some toast.

8 ounces cream cheese, at room temperature
4 ounces goat cheese, at room temperature
1/4 cup finely chopped fresh chives
1/4 cup fresh parsley leaves, finely chopped
Kosher salt and freshly ground black pepper
1 1/2 bunches jumbo asparagus (24 to 26 spears)
1/2 cup heavy cream
1/2 cup grated Parmesan (1 1/2 ounces)
1/2 cup shredded mozzarella (2 ounces)
1/4 cup finely chopped fresh dill
1/4 cup fresh mint leaves, finely chopped
6 large eggs
2 scallions, thinly sliced
1/2 cup heavy cream
1/2 cup grated Parmesan (1 1/2 ounces)
1/2 cup shredded mozzarella (2 ounces)
1/2 cup baby spinach
1/4 cup finely chopped fresh chives
1/4 cup fresh parsley leaves, finely chopped
6 large eggs
2 scallions, thinly sliced
Kosher salt and freshly ground black pepper
4 heirloom grape tomatoes, thinly sliced

Steps:

  • Preheat the oven to 300 degrees F. Tightly wrap the bottom and sides of two 6-inch round springform pans with aluminum foil and transfer to a baking sheet.
  • For the cheese filling: Beat the cream cheese and goat cheese in the bowl of a stand mixer fitted with the paddle attachment on medium speed until smooth, about 2 minutes. Reduce the speed to low, add the chives and parsley and mix until just combined. Cover and chill until firm and cold, at least 1 hour and up to overnight. (You want the cheese to be cold enough so it doesn't seep out the sides when the frittatas are stacked on top of each other).
  • For the asparagus frittata: Meanwhile, bring a medium pot of heavily salted water to a boil. Fill a large bowl with ice water.
  • Trim and discard the woody stems from the asparagus. Cut 3 inches off the top of each asparagus spear (measuring from the tip) and set aside. Thinly slice the remaining parts of the stalks. Set aside 1/2 cup and reserve the remaining asparagus for another use.
  • Add the 3-inch asparagus pieces to the boiling water and cook until tender but still very bright green, about 2 minutes. Use a slotted spoon to immediately transfer them to the ice water to stop the cooking. Remove them to a cutting board and slice each stalk lengthwise down the middle. Reserve for decorating.
  • Whisk the heavy cream, Parmesan, mozzarella, dill, mint, eggs, scallions, reserved 1/2 cup asparagus, 1/2 teaspoon salt and a few grinds of pepper in a medium bowl. Pour into one of the prepared springform pans. Reserve the bowl for the second frittata.
  • For the spinach frittata: Whisk the heavy cream, Parmesan, mozzarella, spinach, chives, parsley, eggs, scallions, 1/2 teaspoon salt and a few grinds of pepper in the reserved bowl until well combined. Pour the mixture into the other prepared springform pan and scatter the tomatoes over top.
  • Bake both frittatas until they are set but still have a very slight jiggle in the center, 1 hour to 1 hour 15 minutes. Transfer to a rack to cool to room temperature, about 1 hour.
  • To assemble: Release the latches of the springform pans, remove the plates from the bottom of each and place the asparagus frittata on a cake stand or serving platter. Spread 3/4 cup of the cold cheese mixture over top of the frittata. Top with the spinach frittata. Spread the rest of the cheese mixture around the perimeter of the frittatas as if you were frosting a cake. Press the asparagus pieces around the frittatas with the flat sides touching the cheese and the pointed tips facing up to look like grass. (The asparagus should be touching, side by side, so that no cheese is visible.). Refrigerate until chilled, about 30 minutes. Slice and serve cold.

12 eggs
1/4 cup water
1/4 cup half-and-half
1 tablespoon garlic powder, to taste
1/4 teaspoon low sodium salt, to taste
1/4 teaspoon cayenne pepper, ground, to taste
1 tablespoon lemon pepper, mrs. dash, to taste
2 tablespoons unsalted butter
1 orange bell pepper, chopped
10 ounces frozen spinach, thawed
1 chicken breast, rotisserie, chopped
4 slices cheese (we use pepper jack)

Steps:

  • Melt the butter in a 10 inch oven-proof skillet on low heat.
  • Saute the raw veggies for about 5 minutes on med-low heat.
  • Meanwhile microwave the frozen spinach and squeeze out the water and separate
  • Add chopped rotisserie chicken to skillet and turn to medium.
  • Break eggs and add the water and half and half. Beat with a wire whisk until it's uniform in color. Add the seasonings while whisking to keep them from clumping.
  • Pour egg mixture into the skillet. Gently add the spinach and cover.
  • Cook on the stovetop for 8-10 minutes covered.
  • Meanwhile turn the oven on to 400°F Uncover the skillet and place in the oven center. Cook in 7 minute intervals, checking for doneness after each. The frittata will puff up and be solid in the center when finished.
  • Remove from the oven and allow to cool slightly.
  • Place a dinner plate on top of the skillet and invert them so that the egg frittata is plated.
  • Place the sliced cheese on top and allow frittata to slowly cool. It can be eaten hot, room temperature or cool. It makes a lovely happy hour snack (tapas). Enjoy!

2 teaspoons olive oil
2 red bell peppers, seeded and thinly sliced
1 onion, thinly sliced
2 garlic cloves, minced
1 small white potato, cooked and thinly slice
1/2 teaspoon dried thyme leaves, crumbled
4 eggs
2 egg whites
1/2 teaspoon salt
1/4 teaspoon ground pepper

Steps:

  • In a medium nonstick skillet with an oven proof handle, heat the oil.
  • Saute' the bell peppers, onion and garlic until softened, 7-8 minutes.
  • Stir in the potato and thyme; cook, stirring as needed, about 5 minutes longer.
  • Preheat the broiler.
  • In a small bowl, lightly beat the eggs, egg whites, salt and pepper; pour over the vegetables, stirring gently to combine.
  • Reduce the heat and cook, without stirring, until the eggs are set, 12-15 minutes.
  • Broil the frittata until the top is lightly browned, about 2 minutes.
  • Let stand 5 minutes before serving.
