Creamy Herbed Feta Cucumber Bites Food

CREAM CHEESE 'N HERB CUCUMBER BITES

Steps:

• Reserve 2 Tbsp. carrots. Mix remaining carrots with cream cheese; spoon into cucumber shells. Top with reserved carrots.
• Cut each cucumber half into 5 pieces to serve.

CREAMY HERBED FETA CUCUMBER BITES

Steps:

• Cut the cucumber into 1-cm-thick (0.4-in) slices. Set the slices on a serving plate.
• In a food processor, combine the Feta cheese, extra-virgin olive oil, garlic flowers, lemon zest and juice, and fresh herbs, and process until the mixture is creamy. If the mixture seems too thick, add an additional spoonful of extra-virgin olive oil. Season with black pepper, to taste.
• Top each cucumber slice with a spoonful of the creamy herbed feta mixture. Decorate with Kalamata olives and serve.

FETA & CUCUMBER BITES

Steps:

• Add the garlic, feta, ricotta and dill to a food processor and whizz until smooth but thick.
• Fill the middle of the cucumber with the cheese mix and smooth over. Cut into 3cm-thick slices. Sprinkle with cracked pepper and garnish with the dill fronds.

FETA CUCUMBER SALAD

Steps:

• Cut cucumbers in half lengthwise. Using a spoon, remove seeds and discard. Cut cucumbers into 1/2-in. cubes; place in a bowl. Sprinkle with salt. Stir in onions. Combine the cheese, lemon juice, oil and pepper; add to cucumber mixture and stir gently.
