A buttery cake loaded with flavour and dotted with colorful gumdrops.

Number Of Ingredients 11

1 cup butter, softened
1 2/3 cups granulated sugar
3 eggs, room temperature
1¼ tsp vanilla
1 tsp almond flavouring
1 tsp lemon flavouring
3 cups flour (reserve 1/4 cup for dredging cut gumdrops)
2½ tsp baking powder
½ tsp salt
1 cup milk, room temperature
1 lb gumdrops, cut into 3-5 pieces each

Steps:

  • Place oven rack in center of oven and preheat oven to 300°F. Grease large funnel pan and line bottom with parchment paper.
  • In medium-sized bowl, dredge the cut gumdrops with 1/4 cup of the flour, making sure that the cut edges of each gumdrop are well floured. Set aside. In separate bowl, sift together the remaining flour, baking powder and salt. Set aside.
  • In bowl of stand mixer, cream the butter. Gradually add the sugar, beating until well incorporated. Add the eggs, one at a time, beating well after each addition. Beat in the vanilla along with the almond and lemon flavourings. Add the dry and wet ingredients in three parts (3 parts dry and 2 parts wet) starting and ending with the dry ingredients. After all ingredients have been added, beat batter on medium speed for 1 minute.
  • Remove bowl from stand mixer and, by hand, gently fold in the floured gumdrops just until incorporated and no dry flour remains visible. Do not overmix.
  • Transfer batter to prepared pan and, with knife, smooth batter out even. Bake for approximately 2¼ hours or until cake tester inserted near funnel center of pan comes out clean. Remove cake from oven and let cool in pan for 20-30 minutes then turn cake out onto wire rack to cool completely. Cake will slice better a day or two after baking.

Great Grandma Pearl's Angel Food Cake with Peaches and Cream image

My great-grandmother Pearl was famous for her angel food cake. She would enter baking contests with this recipe and always took home the blue ribbon. Among her bounty of prizes? A KitchenAid stand mixer (which came in very handy for this recipe, considering she used to beat the egg whites by hand) and a new stove! Not to mention a mighty fine sash and a ribbon proclaiming her the queen of cakes.

Number Of Ingredients 9

2 cups egg whites (from about 16 large eggs)
2 teaspoons cream of tartar
1/2 teaspoon salt
2 1/2 cups sugar
2 cups cake flour
1 teaspoon pure vanilla extract
1 teaspoon almond extract
6 to 8 canned peach halves in syrup, cut into thin wedges, syrup reserved
Lightly sweetened whipped cream

Steps:

  • Preheat the oven to 325 degrees F.
  • In a standing electric mixer, beat the egg whites at medium speed until foamy. Add the cream of tartar and salt and beat until stiff peaks form. Beat in the sugar, a few tablespoons at a time, until smooth and glossy, about 4 minutes.
  • Transfer the egg whites to a large, wide bowl. Using a fine sieve, gradually sift the flour over the egg whites, gently folding in the flour with a spatula. Fold in the vanilla and almond extracts.
  • Scrape the batter into a 10-inch angel food cake pan. Using a table knife, slice through the cake batter several times to release any large air bubbles. Tap the cake pan once or twice on a flat surface. Bake in the center of the oven for 20 minutes. Increase the oven temperature to 350 degrees F and bake for about 35 minutes longer, until a toothpick inserted in the center comes out clean. Invert the pan onto the neck of a wine bottle and let cool completely.
  • To loosen the cake, run a thin-bladed knife around the side and tube of the pan. Unmold the cake and transfer to a platter. Cut the cake into wedges and drizzle with some of the reserved syrup. Serve with the sliced peaches and whipped cream.

I remember liking a gumdrop cake my Mom used to make, I do not have her recipe, so when i saw this one in a magazine i hung onto it,have not made it yet, but it sounds good. Would be nice at Christmas time for the kiddies. The intro to the recipe recommends using sugar coated gumdrops that you can find in the bulk food stores and using only the red, green, white & yellow ones.

Number Of Ingredients 14

1 cup sugar
1/2 cup butter
2 eggs
1 tablespoon grated fresh lemon rind
1 teaspoon vanilla
2 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup milk
2 cups gumdrops, chopped (omit black ones)
1 cup sweetened flaked coconut
1 cup icing sugar
2 tablespoons lemon juice
1/4 cup chopped gumdrop

Steps:

  • Grease a 9x5 (2 L) loaf pan.
  • Line with parchment paper, cutting to fit.
  • In large bowl,beat sugar& butter until light& creamy,beat in the eggs,lemon rind& vanilla until fluffy.
  • In a separate bowl,stir together flour,baking powder& salt.
  • Gradually beat the flour mixture into sugar mixture alternately with the milk until mixture is smooth.
  • Stir in gumdrops& coconut until well combined.
  • Spoon into prepared pan and bake at 350 for 1-1 1/4 hrs.
  • or until tester in centre comes out clean.
  • DON"T OVERBAKE.
  • Let cool in pan for 5 minutes.
  • Turn out and let cool on wire rack completely.
  • Lemon Glaze: In small bowl,whisk icing sugar& lemon juice until smooth.
  • Drizzle glaze evenly over top of the cake& sprinkle with the chopped gumdrops.
  • Can be refrigerated loosely covered for up to 1 week.
  • If you would like to store longer, freeze the cake UNWRAPPED, then wrap carefully& store in freezer up to three months.

3 lbs (1.36kg) sultana raisins
1 lb (454gms) dried currants
1 lb (454gms) baker's gumdrops ((sometimes called 'fruitlets'))
1 lb (454gms) red candied cherries, plus a few extras for garnish
1 lb (454gms) blanched slivered almonds, plus a few extras for garnish
8 oz (½lb/225gms) mixed glacéed fruit and peel
1 cup (140gms) flour ((or brown rice flour for gluten-free))
2 cups (400gms) sugar
1 lb (454gms) salted butter, room temperature
12 large eggs
1 teaspoon fine sea salt
½ cup (120ml) orange juice or brandy ((I use ¼ cup/60ml thawed frozen orange juice concentrate plus ¼ cup brandy or rum))
1 tablespoon pure vanilla extract
1 tablespoon rum extract or brandy extract (optional)
2¾ cups (385gms) regular flour or gluten-free flour blend
cheesecloth and additional brandy or rum to soak the cakes (optional)

Steps:

  • Preheat the oven to 275°F (140°C).
  • Grease and flour 3 loaf pans (4½ x 8½ inches/11.5cmx21.5cm) and 3 small loaf pans (3 x 6 inches/7.5cmx15cm). If they are non-stick pans, you can just grease them and omit the flouring. Mine slide out easily, but if your pans have lost the non-stick ability and you think the cakes may stick, you could line the pans with parchment paper as an extra precaution. You can also prepare 4 large loaf pans and 1 small one. Or 3 loaf pans if you have even larger sized ones.

1 lb sultana raisin (approx. 3 cups)
1 cup applesauce
1 lb gumdrop, cut into small pieces (NO BLACK)
1 cup butter or 1 cup margarine
1 cup white sugar
2 eggs
3 cups flour
1 teaspoon salt
2 teaspoons baking powder

Steps:

  • Boil the raisins for 5 minutes, strain & cool.
  • In a large bowl cream butter & sugar. Add well beaten eggs.
  • Add 1 cup flour then applesauce & raisins, mix.
  • Add the rest of the flour (2 cups), baking powder, salt & gumdrops, mix.
  • Bake for 2 1/2 hours @ 300F in pan(s) double lined with foil (I recommend having a pan of water on the bottom shelf of the oven while cooking).
  • DO NOT cut for at least 7 - 10 days.

1/2 cup unsalted butter
1/2 cup margarine
1 cup sugar
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 cups quick-cooking oatmeal
1 cup flaked coconut
1 cup pecans, coarsely chopped
1 cup gumdrop, cut into pieces

Steps:

  • Cream the butter, margarine and sugar together.
  • Add vanilla and the eggs one at a time until well blended.
  • Sift the flour, baking powder, baking soda and salt together and add to egg mixture.
  • Stir until mixed well.
  • By hand, stir in the coconut flakes, chopped pecans, oatmeal and sliced gumdrops until just mixed.
  • Refrigerate the dough until it is thoroughly chilled (at least 3 hours).
  • (Chilling the dough will help the cookies keep their shape).
  • Once the dough is chilled, preheat the oven to 350°F.
  • Take a heaping tablespoon of dough and roll into a ball about the size of a walnut.
  • Place on a greased or parchment lined cookie sheet about 6 inches apart.
  • Bake for about 10 minutes or until light brown.
