Creamy Garlic Chicken Pasta {with Tomato & Spinach} image

Chicken pasta in a garlic tomato cream sauce is the ultimate comfort meal. Made with pasta, chicken, spinach, seasonings, lots of yummy garlic, and parmesan cheese, you can make this incredible dish in under 30 minutes!

10 ounces dry pasta ((any kind))
1 pound boneless skinless chicken breast
1 teaspoon garlic powder
1 teaspoon Italian seasoning
1 teaspoon paprika
salt & pepper (to taste)
2 tablespoons olive oil
1 tablespoon butter
4 cloves garlic (minced)
1 cup tomatoes (diced)
2 cups spinach (chopped, optional)
2 cups heavy cream ((or 16 oz))
1/2 cups Parmesan cheese (shredded or grated)
salt & pepper (to taste)

Steps:

  • Prep Pasta: Boil water in a large pot and cook pasta al dente according to package instructions.
  • Season both sides of chicken breasts with salt garlic powder, Italian seasoning, paprika, and a generous pinch of salt and pepper.
  • Heat olive oil in a large heavy duty pan over medium-high heat and cook chicken breasts 5 minutes per side or until cooked through. Remove from heat and set aside.
  • To the same pan, add the butter and garlic and cook for 1 minute or until fragrant. Add the tomato and spinach and cook 2-3 minutes or until the tomato and spinach are soft and wilted.
  • Reduce the heat and add the heavy cream and parmesan cheese. Whisk until fully incorporated and creamy. Add a pinch of salt and pepper to taste.
  • Drain pasta and slice chicken into thin slices or cubes and return to the same pan. Stir to combine and serve!

Creamy tomato sauce with some chicken and spinach. You can also serve this on a bed of rice, or by itself.

Number Of Ingredients 10

1 pound Chicken, broilers or fryers, thigh, meat only, raw
1 pinch chili powder, or to taste
salt and ground black pepper to taste
1 tablespoon olive oil, or as needed
5 cloves garlic, minced
1 (16 ounce) can tomato sauce
1 cup heavy cream
1 (8 ounce) package fresh spinach
1 tablespoon chopped fresh basil, or to taste
1 (16 ounce) package penne pasta

Steps:

  • Pat chicken dry and season with chili powder, salt, and pepper.
  • Heat oil in a pan over medium-high heat. Sear chicken in the hot oil until browned, about 3 minutes per side. Remove to a clean plate.
  • Place garlic in the leftover juices in the pan and saute over medium heat until aromatic, 30 seconds to 1 minute. Stir in tomato sauce and heavy cream; reduce heat to low. Add spinach and basil and cook and stir until spinach wilts. Add chicken to the sauce and cook until chicken is no longer pink in the centers.
  • While chicken mixture cooks, bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain.
  • Serve chicken mixture on top of pasta.

Number Of Ingredients 14

1 tablespoon olive oil
1 small onion
2 garlic cloves
15 ounces diced tomatoes
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1 pinch red pepper flakes
fresh ground pepper, to taste
1/2 teaspoon salt
2 tablespoons tomato paste
2 ounces cream cheese
1/4 cup parmesan cheese, grated
1/2 lb penne pasta
9 ounces fresh spinach

Steps:

  • Bring a large pot of water to a boil over high heat.
  • Add the pasta and cook until tender (7 to 10 minutes). Drain the pasta in a colander.
  • While waiting for the pasta to cook, dice the onion and mince the garlic.
  • Cook both in a large skillet with the olive oil over medium-low heat until softened and transparent, about 5 minutes.
  • Add the diced tomatoes with juices, oregano, basil, red pepper flakes, salt, and some freshly cracked pepper to the skillet with the onions and garlic.
  • Stir to combine. Add the tomato paste and a 1/2 cup of water to the skillet and stir until the tomato paste is dissolved into the sauce.
  • Turn the heat down to low. Cut the cream cheese into a few pieces and then add them to the skillet with the tomato sauce.
  • Use a whisk to stir the sauce until the cream cheese has fully melted in and the sauce is creamy.
  • Add half of the parmesan to the skillet and whisk until it is melted inches Add the remainder of the parmesan and whisk until melted in again.
  • Add the fresh spinach and gently stir it into the sauce until it has wilted (3 to 5 minutes). Add the pasta and stir until it is well coated with the creamy tomato sauce.
  • Taste and adjust the salt and pepper as needed. Serve warm.

My boyfriend "threw this together" one weekend for lunch. It's super easy to prepare, and even easier to eat!!!! He is SOOO proud of himself, and everyone that has tried it, has loved it!

200 g penne pasta
2 large chicken breasts, cut in to bite size pieces
6 slices bacon, cut in to bite size pieces
1 tablespoon olive oil
2 garlic cloves, chopped finely
1/2 onion, finely chopped
4 tomatoes, diced
2 tablespoons chicken stock
1 cup cream
1/2 cup parmesan cheese
fresh spinach (optional)
salt & pepper

Steps:

  • Cook the pasta, drain and set aside.
  • Pan fry the chicken and bacon in a little olive oil until cooked and set aside.
  • Saute the onions and garlic in a little olive oil until tender.
  • Add the diced tomatoes and heat through.
  • Add the chicken stock and allow to simmer for a few minutes.
  • Return the Chicken and Bacon to the pan and heat through.
  • Add the cream and bring it all to a simmer.
  • Add the cheese and stir through until melted.
  • Toss the pasta through the sauce and heat.
  • Add the spinach and then turn the heat off so it wilts.
  • Season with salt and pepper.
  • ENJOY!
