- In a saucepan, saute onion and garlic in olive oil over medium heat. Make sure it doesn't burn. Add tomatoes, basil, sugar, oregano, salt and pepper. Bring to boil and continue to boil 5 minutes or until most of the liquid evaporates. Remove from heat; stir in whipping cream and butter. Reduce heat and simmer 5 more minutes.

QUICK, EASY, CREAMY, TOMATO PASTA SAUCE
A delicious and simple tomato pasta sauce which I've been using for years and is the first one I taught my kids how to make. The fresh garlic at the end, uncooked, is what makes it really tasty. I hesitate to post it because the cream will curdle if the heat is too high. It sometimes takes a couple of times before you get the feel of how much heat it will take. It will still taste ok, but won't look really yummy. Do remember to dilute the paste with water first. Very important. All quantities are flexible. Substituting with milk or garlic powder will absolutely not work.

Steps:
- Heat a saute pan on medium heat.
- Pour in the olive oil.
- Stir the tomato paste gently into the oil.
- It may not completely mix just yet.
- (Don't get the heat too high).
- Add the cream and stir into the tomato mixture.
- Heat it gently so that it almost starts to simmer.
- At this point it is done.
- Add the crushed garlic and fresh ground pepper.
- Serve immediately over or in your pasta, and garnish with lots of fresh chopped basil.
CREAMY TOMATO PASTA SAUCE
I adapted this recipe from one I found in a cookbook a few years ago; it's now become my signature pasta sauce. I love it because it mixes my two favorite sauces -- red tomato sauce and cheese! It takes a little more effort than just opening up a jar of Ragu, but the end product is SO worth it, I think. Good for special occasions when you want to WOW your guest(s).

Steps:
- Saute the garlic in the oil for 2 minutes.
- Add the chicken (optional) and cook.
- Next add the mushrooms (or other veggies) and saute until tender.
- Add the tomatoes or pesto sauce, wine, spaghetti sauce, vinegar and crushed red pepper flakes. Simmer 7-10 minutes.
- Add the cream cheese, and stir until it's melted throughout.
- Add the shrimp (optional).
- Cook your pasta of choice (I like penne).
- Top the pasta with this sauce, add some parmesan and whatever else you like (pine nuts, parsley, etc.) and serve. Yum!

- Finely chop onion and and garlic clove.
- Sautee onion in butter and olive oil first until golden, then add garlic.
- Cook until garlic is brown and olive oil and butter are absorbed.
- Add 1 1/2 cups of water and boil for a few minutes.
- Add the 2 containers of tomato paste and stir until well mixed.
- Add all spices one at a time and stir until incorporated.
- Add 1 cup of heavy cream and stir until sauce is a light orange color.
- Pour over any pasta and finish with Parmesan cheese topping.
- Enjoy!

- Heat the oil in a large, shallow, flameproof casserole or frying pan over a low-medium heat and fry the onion with a pinch of salt for 10-15 mins until softened and translucent. Add the garlic and fry for 1 min more. Remove from the heat and leave to cool slightly.
- Meanwhile, cook the pumpkin in a pan of boiling salted water for 10-15 mins until tender when pierced with a cutlery knife. Drain and tip into a blender (or use a hand blender). Blitz with 50ml milk and the onions until completely smooth, gradually adding more milk until the mixture is thick enough to just coat the back of a spoon (you may not need all the milk). Tip into a large frying pan with the tomato purée and mascarpone, and bring to a simmer over a low heat.
- Cook the pasta in a large pan of boiling, salted water following pack instructions. Drain, reserving a cupful of the cooking water. Toss the pasta with the pumpkin sauce, parmesan and 50-100ml of the reserved water to loosen. Season and scatter with extra parmesan.

DELICIOUS AND SIMPLE RICOTTA AND TOMATO PASTA SAUCE
I just love this recipe! Mum used to make this for us when we were kids. It's apparently a traditional Roman dish, great for vegetarians and very easy and quick to whip up, an awesome dish with a real 'rustic' feel to it! The kids will love it! It is to be served on top of steaming, hot pasta...wholemeal pasta works quite well with this recipe too! Enjoy!

- Firstly, put on a large pot of salted water and bring to the boil, add pasta to water and cook until'al dente' approximately 8- 10 minutes.
- While pasta is on the go, finely dice your onion and crush your garlic.
- In a saucepan, put in the olive oil, when the oil is warm, add your garlic and onion and gently saute these until they are transparent.
- Add the ricotta to the pan, and stir through the onions and garlic well.
- At this stage, add your salt and pepper, parmesan, crushed tomatoes and tomato paste.
- Mix well and let simmer gently for 10 minutes.
- Drain pasta.
- Turn the ricotta sauce off from the heat, add your fresh basil leaves, roughly torn, into the sauce.
- Dish up some pasta into a bowl, put some of the ricotta sauce on top of the pasta, and finish off with some extra shavings of parmesan if desired.

TOMATO AND CREAM PASTA SAUCE
Who says pasta sauce has to take a long time to make or involve a lot of ingredients? I made this to be a compromise between my husband's love of red sauces and my love of white sauces. I also wanted something that was not as fattening as white sauces tend to be. Don't get me wrong, with the use of real butter and cream there is still plenty of fat. But hey, what can I say? I am just that kinda girl. I think this sauce could be adaptable to have more veggies in it (mushrooms, artichokes) and even some meat if desired. Amount of servings is an estimate. I don't like a lot of sauce, but my husband likes to drown his pasta.

- In 10 to 12 in skillet melt butter and add olive oil.
- Add onion and garlic and cook on medium heat for 2 to 3 minutes.
- Add tomatoes with their juices to the skillet and heat to a low boil for about 7 minutes.
- Reduce heat and stir in cream until heated through. 1/4 cup if you like a very light sauce or 1/2 cup if you like it more creamy.
- Salt and pepper to taste.

CREAMY TOMATO SAUCE FOR PASTA
I made Ceil in NJ's homemade ravioli and was looking for a rich but smooth sauce to accompany it. Tomato based with cheese, cream, pesto, and garlic. A great combination! This sauce is also excellent in lasagna! Easy and quick to make. A little goes a long way. Enjoy!
