6 slices bacon, diced
2 stalks celery, diced
1 onion, diced
1/4 cup butter
2 tablespoons flour
3 (8 ounce) jars clam juice
1 quart half-and-half cream
4 cups clams, minced
white pepper, to taste

Steps:

  • In a medium skillet over medium heat, cook bacon, celery, and onion until onion is translucent.
  • Remove from heat and set aside.
  • In a large saucepan, melt butter over medium heat.
  • Whisk in flour to form a roux, cooking until bubbly.
  • Whisk in 1 jar of clam juice, until smooth.
  • Stir in onion mixture.
  • Pour in half-and-half,and rest of clam juice, stirring constantly.
  • Stir in clams, reduce heat and simmer 30 minutes.
  • Season with pepper and serve.

1 medium onion, finely diced
2 celery stalks (reserve tender leaves) trimmed, quartered lengthwise, then sliced into 1/4-inch pieces
3 tablespoons all-purpose flour
2 cups chicken or vegetable stock
2 (10-ounce) cans chopped clams in juice
1 cup heavy cream
2 bay leaves
1 pound Idaho potatoes, cut into 1/2- inch cubes
Salt and freshly ground black pepper
2 to 3 tablespoons unsalted butter
1/2 baguette, cut into 1-inch cubes
3 tablespoons freshly chopped flat-leaf parsley
Salt and freshly ground black pepper

Steps:

  • Heat the butter in a large pot over medium-high heat. Add the onion and celery and saute until softened, mixing often. Stir in the flour to distribute evenly. Add the stock, juice from 2 cans of chopped clams (reserve clams), cream, bay leaves, and potatoes and stir to combine. Bring to a simmer, stirring consistently (the mixture will thicken), then reduce the heat to medium-low and cook 20 minutes, stirring often, until the potatoes are nice and tender. Then add clams and season to taste with salt and pepper, cook until clams are just firm, another 2 minutes.;
  • Melt the butter in a large skillet and toss the bread cubes in the butter until browned and toasted, about 2 to 3 minutes. Add parsley and season with salt and pepper.;

1 small onion (diced)
3 stalks celery (diced)
3 cloves garlic (minced)
1/2 cup flour
4 (6.5 ounce cans) chopped clams
1 cup chicken broth
1 cup milk
1 cup half and half
4 medium russet potatoes (peeled and diced)
salt and pepper to taste

Steps:

  • In a large pot over medium-high heat add the bacon and cook until slightly crisp and no longer pink. Remove it to a plate with a slotted spoon.
  • Add the onion, celery, and garlic and cook until tender. Add the flour and stir.
  • Add in the juice from the clams, chicken broth, milk, and half and half, then stir until there aren't any clumps. Add in the potatoes.
  • Bring the pot to a boil and reduce heat to a simmer until the potatoes are tender and the soup is thick. Stir in the clams and salt and pepper to taste. Top with crumbled bacon and serve.

  • In a large saucepan, saute the onion, carrots and celery in butter until tender. Stir in potato soup and two cans of undrained clams. Drain and discard juice from remaining can of clams; add clams to soup. , Combine cornstarch and a 1 cup of cream until smooth; stir into soup. 4 tablespoons butter
1 stalk celery, finely chopped
1/2 small sweet onion, finely chopped
1 teaspoon salt

4 slices bacon
One 6-ounce bottle clam juice
5 medium potatoes, cooked, peeled, chopped
3 scallions, sliced

Steps:

  • First, shuck the clams and remove the bellies. Clean the clams and then chop them into small pieces. Put to the side until ready to add to the pot.
  • Heat the butter in a stockpot over medium-high heat. Add the celery and sweet onion and cook, mixing often, until they begin to soften. Next, sprinkle in the salt, black pepper and seafood boil seasoning. Add the self-rising flour to make a roux. Reduce the heat to medium-low. Stir in the clams and clam juice.
  • Meanwhile, cook the bacon and finely chop. Add to the pot. Add the potatoes along with the scallions. Stir to combine. Lastly, add the milk and half-and-half. Stir to warm. Serve in a bowl with parsley as a garnish.

Clam chowder is one of my all-time favorite comfort soups. Luckily it's very easy to make. This recipe is a keeper. I can confidently say this New England Style Clam Chowder rivals my favorite restaurant version! P.S. this recipe has a much lower fat content. This lighter clam chowder only has 1 cup of cream for the entire pot but maintains it's super creamy appeal and has incredible satisfying flavor.

6 slices bacon (sliced into 1/2" strips)
2 carrots (sliced into thin rings or half rings)
2 celery stalks (diced into 1/4" pieces)
1 small onion (finely diced)
4 Tbsp all-purpose flour
2 cups Chicken broth (reduced sodium)
1 bay leaf
1/2 tsp Tobasco
1 cup chopped clams with juice (I used 2 small cans)
1 1/2 tsp worchestershire sauce
1/2 tsp dry thyme
1/4 tsp black pepper & Salt to taste (1/2 to 1 tsp salt)
1 1/2 lbs potatoes (about 6 medium potatoes, cubed into bite-sized pieces)
2 cups milk (any kind; I used 2%)
1 cup heavy whipping cream
1/8 bunch of Cilantro (finely chopped)
Crackers or fresh crusty bread to serve

Steps:

  • In a heavy bottomed soup pot or dutch oven, Saute chopped bacon over med/high heat until browned, then remove with a slotted spoon and set aside on paper towels. You should have about 3-4 Tbsp bacon fat in the pot; remove extra fat if you wish, but I left it in ;).
  • In the same pot with bacon fat add in 2 sliced carrots, 2 stalks celery (diced), 1 small onion (finely diced) and saute over med/high until soft and golden (7-8 min). Sprinkle with 4 Tbsp flour and stir to combine. Sautee another minute.
  • Stir in 2 cups chicken broth, 1 bay leaf, 1/2 tsp tabasco, 2 cans chopped clams with juice, 1 1/2 tsp worcestershire sauce, 1/2 tsp thyme, 1/4 tsp pepper, and about 1 to 1 1/2 tsp salt or to taste. Bring to a light boil.
  • Add 1 1/2 lbs cubed potatoes, 1 cup heavy cream and 2 cups milk. Stir to combine, cover and lightly boil until potatoes are easily pierced with a fork, stirring occasionally (17-20 mins). It will thicken as it cools. If it's too thick, you can add a little milk to thin it out.
  • To serve, garnish with your browned bacon, finely chopped cilantro (cilantro takes it to the next level) and serve with crackers or crusty bread.

2 (5 ounce) cans baby clams, with juice reserved
6 -7 potatoes, cubed

1 teaspoon dried dill weed

  • Add bacon to sauce pan and cook on medium low heat until crispy.

This classic chowder recipe just got a dairy free remake and it couldn't be creamier or tastier!

4 strips of bacon, 5 ounces, thinly sliced
1 cup diced onion, 1/4″, 1/2 medium onion
1 clove garlic, minced
1 cup thinly sliced celery, 2 stalks
1 tablespoon chopped fresh thyme, or 1 teaspoon dried
1 bay leaf
1 - 10 ounce can clams, juices drained and reserved
1 - 8 ounce bottle clam juice
1 cup chicken stock, I used my homemade unsalted recipe
5 cups cubed potatoes 1″, 1 1/2 pounds
1 cup coconut cream, see notes
Sea salt and pepper to taste, see notes

Steps:

  • Place a large pot over medium heat, and when the pan is hot, add the bacon. Sauté until the bacon renders it's fat and is crispy.
  • Scoop out the bacon bits and set them aside. Pour out some of the bacon fat if there's too much, you'll need around 2-3 tablespoons in the pan.
  • Add the onion, garlic, and celery to the pan. Sauté over medium low temperature until the onion begins to turn translucent and is soft.
  • Add the thyme, stir to combine, then add the bay leaf, reserved juice from the clams, the bottle of clam juice, and the chicken stock.
  • Stir to combine again, then add the potatoes and bacon bits. Bring to a boil, then lower the heat to maintain a simmer. Cook until the potatoes are tender, 15-20 minutes. When the potatoes are done, remove the bay leaf.
  • Then using a ladle, scoop out 2 cups of the cooked potatoes, draining off excess liquid, and add them to a blender. Don't worry about spooning out the other ingredients with the potatoes, this won't matter.
  • Add the coconut cream to the blender with the potatoes, then blend on low speed just until the potatoes are mostly smooth.
  • Add the potato/coconut cream mixture back to the chowder and stir to combine. Turn the heat off and add the clams. Stir again, then season to taste with salt and pepper.
  • Serve immediately. Any leftovers reheat well on the stove top. This soup doesn't freeze super well because the potatoes tend to come out with a mushy texture.

WINTER NIGHT CREAMY CLAM CHOWDER

1 (10 ounce) can baby clams
clam juice, all the juice reserved from all clams
8 -16 slices bacon, fried crisp and chopped, 2 Tablespoons fat left in the pan
1 large onion, chopped
2 -3 stalks celery, chopped
2 tablespoons butter
4 large garlic cloves, crushed
4 medium peeled yukon gold potatoes, 1/2 inch dice (or russets, any potato will do)
1 teaspoon crushed dried thyme or 1 1/2 tablespoons fresh thyme
3 1/2 cups clam juice, reserved, make up the 3 1/2 cups with chicken stock (preferably)
1 cup 2% low-fat milk
2 cups half-and-half
1/3 cup flour
1/2 cup dry white wine, Chardonnay wine (drinkable)
1 tablespoon fresh lemon juice
salt & pepper

Steps:

  • Drain clams in colander, reserving liquid in large bowl. Allow liquid to sit still to let any sand that may be in it to drop to the bottom of the bowl.
  • In a large, heavy pot, in the rendered fat and 2 Tablespoons of butter, sweat the onions and celery until tender.
  • Add garlic, thyme, potatoes, clams, clam juice and cooked bacon.
  • Simmer until potatoes are tender, about 15-20 minutes.
  • In the meantime, whisk the flour and the cup of milk together and let stand, whisking occasionally, until the flour and milk are completely smooth. Then add the 2 cups of half & half and the white wine.
  • Add this mixture to the pot and slowly bring to a simmer, stirring all the time! Simmer for 5 minutes or more, tasting to make sure the flour has cooked.
  • Now add the fresh lemon juice and let this wonderful chowder sit on your stovetop for about 1 hour, to let the flavors marry and use the time to heat up a crusty bread, make a salad if you want, and serve.
  • It's always way better the next day! So you can cool it off in the refrigerator uncovered and stir now and again, then cover and store till the next day.
  • This freezes well, but is better fresh!

12 cherrystone clams (1 1/2 pounds), scrubbed well
2 slices bacon, finely chopped

1 pound new potatoes, peeled and cut into 1 1/2-inch chunks
3/4 cup heavy cream
Dash of hot sauce, such as Tabasco
Coarse salt and ground pepper

Steps:

  • In a large skillet, bring clams and 1 cup water to a boil. Cover; cook until clams have opened, 3 to 5 minutes (discard any that do not open). Transfer clams to a bowl. Strain liquid into a measuring cup; add water to yield 1 cup. Remove clam meat from shells; coarsely chop.
  • In a large saucepan, cook bacon over medium-low heat until crisp, 8 to 10 minutes. Pour off all but 1 tablespoon fat. Add onion and celery; cook until soft, about 5 minutes. Add thyme, potatoes, cooking liquid, and 1 more cup water. Bring to a boil; reduce heat, and simmer until potatoes are tender, about 20 minutes.
  • Puree about 1 cup mixture in a blender until smooth. Stir puree back into soup; add cream. Simmer over low heat until warmed through, about 5 minutes. Add clams and hot sauce; season with salt and pepper.

1 cup white wine or 1 cup water
3 tablespoons butter
1 slice bacon, chopped into small pieces
1 large onion, chopped

1/4 cup flour
4 cups clam juice (from steaming clams and bottled juice)
1 (8 ounce) can baby clams
1 cup light cream

1 cup shredded cheddar cheese

  • Steam clams open in a cup of wine in a heavy pot.
  • Remove from pot and cool.
  • Remove clams from shells.
  • Rinse the clams well.
  • Strain clam broth through a mesh screen or cheesecloth.
  • Add strained broth, broth from canned baby clams, and enough bottled clam juice or water to equal 4 cups.
  • Set aside.
  • In a heavy pot over MEDIUM heat,cook bacon pieces till crisp add butter melt and cook the onion,celery, carrots, and garlic until translucent.
  • Slowly stir in the flour and cook for two minutes, stirring well.
  • Add reserved clam juices to the sauté mixture.
  • Bring to a boil; whisking thoroughly to break up any lumps, and then reduce heat.
  • Add creams and simmer 20 minutes.
  • Add white pepper, thyme, potatoes, peas, and steamed clams& the can of baby clams.
  • Add cheese till melted through.
  • Do not allow to boil as this will toughen the clams.
  • Season with salt and hot pepper sauce to taste.

Slowly stir in the milk until smooth, then stir in the cream. Add the reserved cooking liquid, stopping before you reach the grit on the bottom. Bring the chowder to a simmer over moderate heat, then reduce the heat to low and simmer for 15 minutes, stirring occasionally.
  • Add the potatoes to the chowder and cook until heated through. Add the chopped clams and simmer for 5 minutes. Stir in the dill and parsley and season with salt and Tabasco. Ladle into soup bowls and serve piping hot.

  • Drain clam juice from cans into a measuring cup. Add enough bottled clam juice to equal 2 ½ cups. Set aside.
  • In a Dutch oven, cook bacon over medium heat until fat is rendered and slightly brown. Remove half of the bacon with a slotted spoon to a paper towel lined plate. To the remaining bacon and drippings, melt in 1 tablespoon butter over medium heat.
  • Increase heat to medium high and add celery and onion. Saute for 5-7 minutes or until onions are soft. Add potatoes, garlic, red pepper flakes (if using) and sauté 30 seconds. Sprinkle in flour and cook an additional 1 minute. Stir in chicken broth, reserved 2 ½ cups clam juice, chicken bouillon, bay leaves and all seasonings. Bring to a boil then reduce to a simmer. Simmer, uncovered, for 15-20 minutes or until potatoes are very tender.
  • Stir in heavy cream and bring to a simmer to heat through. Discard bay leaves. Remove from heat and stir in clams. Taste and add salt/pepper to taste. (You may or may not need additional salt depending on how salty your clams and bacon are.) For a thinner or less chunky soup stir in additional heavy cream/milk or chicken broth.
