8 slices white bread
2 eggs
2 tablespoons milk
2 teaspoons vanilla extract
¼ teaspoon cinnamon
4 oz cream cheese
¼ cup honey
¼ teaspoon cinnamon
powdered sugar
syrup

Steps:

  • Mix the filling ingredients together in a small bowl until consistency is smooth. Chill 30 minutes.
  • Roll each slice of bread flat with a mason jar or rolling pin.
  • Put about 1 tablespoon of filling in the center of a slice. Place another slice directly on top, as if you were making a sandwich.
  • NOTE: Be careful not to press down on the center so the filling doesn't spread.
  • Using a wide-mouth mason jar lid or biscuit/cookie cutter, press firmly down on the sandwich and remove the crust around the lid.
  • Use a knife to refine the edges of the circle. Gently release pocket from lid.
  • Press down firmly on the outer edges of the pocket with a fork to make indentations.
  • Repeat steps 3-8 for each pocket. Set pockets aside.
  • Preheat oven to 400˚F (200˚C).
  • Line baking sheet with parchment paper. Place baking rack on top of parchment paper and coat with cooking spray.
  • Whisk eggs, milk, vanilla extract, and cinnamon together in a small bowl.
  • Separately dip each pocket in egg mixture, flipping to ensure it gets entirely coated. Let excess drip off.
  • Arrange 4 pockets on baking rack. Bake for 15-25 minutes or until golden brown.
  • Let cool 5-10 minutes.
  • Garnish with powdered sugar and syrup.
  • Enjoy!

4 (2-inch thick) pieces challah bread

Steps:

  • Batter:
  • Combine all ingredients in a large bowl, mixing well until incorporated. Keep refrigerated until ready to use.
  • Filling:
  • Fold all ingredients together in a bowl until well incorporated but not completely smooth.
  • Syrup:
  • Combine all ingredients in a saucepan over medium-high heat. Stir until sugar dissolves. Bring to a boil and let reduce by 1/3.
  • French Toast:
  • Preheat oven to 350 degrees F.
  • Heat a large saute pan and then add butter. Dredge the bread in the batter and place in the pan. Cook until golden brown on both sides, approximately 2 minutes. Remove from pan and let cool. Divide filling between 2 pieces of the bread top with the remaining 2 pieces of bread. Transfer French toast to oven and bake for 8 minutes.
  • Cut each French toast in half and serve with the cinnamon syrup and, if desired, a large scoop of vanilla ice cream and fresh berries.

1 loaf brioche bread, cut into 3 in slices
1 cup granulated sugar
8 cups heavy cream
2 vanilla beans, seeds scraped
6 large eggs, beaten
½ cup cream cheese, softened
½ cup ricotta cheese
½ cup strawberry, quartered
½ cup strawberry, quartered
½ lemon, juiced
1 teaspoon granulated sugar
½ lemon
½ cup blueberry
¼ cup maple syrup
1 cup heavy cream
2 tablespoons granulated sugar
½ teaspoon vanilla extract
½ cup turbinado sugar
4 fresh mint leaves
kitchen torch

Steps:

  • Make the French toast: Using a paring knife, make a small slit in the side of each slice of bread, going almost to the other side, but not all the way through. Set aside.
  • In a large pot over medium heat, combine the granulated sugar, heavy cream, and vanilla bean seeds and bring to a simmer. Whisk until the sugar is dissolved and the mixture is warmed through, about 5 minutes.
  • Add the eggs to a large bowl. Slowly a ladleful of the cream mixture and whisk to temper the eggs so they do not scramble. Remove the cream mixture from the heat and slowly stream the egg mixture into the pot, whisking to combine. Let cool to room temperature.
  • Arrange the sliced brioche in a 9 x 13-inch (19 x 27 cm) baking dish. Pour the cooled custard mixture over the bread. Let soak for at least 1 hour.
  • Preheat the oven to 350°F (180°C).
  • Transfer the soaked brioche to a clean 9 x 13-inch (19 x 27 cm) baking dish. Bake for 35-40 minutes, or until golden brown on top. Remove from the oven and let cool to room temperature.
  • While the toast bakes and cools, make the filling: In a medium bowl, combine the cream cheese, ricotta cheese, and strawberries. Beat with an electric hand mixer on medium speed until fully combined and fluffy. Transfer to a piping bag fitted with a large round tip and chill in the refrigerator until ready to use.
  • Make the macerated strawberries: In a separate medium bowl, combine the strawberries, lemon juice, sugar, and lemon zest. Stir well, then set aside to macerate for 10 minutes.
  • Make the chantilly cream: In a separate medium bowl, combine the heavy cream, sugar, and vanilla. Beat with an electric hand mixer on medium speed until soft peaks form.
  • Pipe the ricotta and cream cheese mixture into the center of each slice of French toast, being careful not to overfill.
  • Top each slice of French toast with a generous sprinkle of turbinado sugar. Brûlée the sugar with a kitchen torch until melted and golden brown.
  • Add the blueberries and maple syrup to the macerated strawberries and stir to combine.
  • Garnish each slice of brûléed French toast with a spoonful of the berry mixture, a dollop of chantilly cream, and a mint leaf. Serve immediately.

1 cup blackberry
2 tablespoons maple syrup, divided
1 tablespoon black raspberry liqueur
4 oz cream cheese, softened
4 slices brioche bread
½ cup whole milk
1 large egg, beaten
2 tablespoons black raspberry liqueur
½ teaspoon salt
2 tablespoons butter
½ cup heavy cream
1 tablespoon maple syrup

Steps:

  • Make the filling: Add the raspberries, blackberries, black raspberry liqueur, and 1 tablespoon of maple syrup to a large bowl. Stir and let sit for 10 minutes for the berries to macerate.
  • In a medium bowl, mix together the cream cheese and remaining tablespoon of maple syrup until smooth.
  • Spread the filling evenly over the 4 slices of bread. Arrange some of the berries on 2 slices of the bread and top with the other slices of bread. Press to seal the pieces together.
  • In a shallow dish, whisk together the milk, egg, black raspberry liqueur, and salt.
  • Melt the butter on a griddle or in a large skillet over medium heat. Quickly dip both sides of the bread pockets in the milk mixture, then transfer to the pan and fry on each side for about 3 minutes, until golden brown.
  • In a large bowl, beat the heavy cream until soft peaks form. Add the maple syrup and continue beating until the cream holds medium peaks.
  • Serve the stuffed French toast with a dollop of maple whipped cream and a scoop of macerated berries with their soaking liquid.

This is a recipe I came up with after experimenting with several other recipes. My husband and I love Ihop's Stuffed French Toast and I decided I was going to come up with one for us. You can use any fruit topping and it will still be delicious, apples are just a personal favorite of mine. I used french vanilla ice cream because that tastes great with apples, but experiment and have fun, this can be kind of rich so you will only want to eat one or two yourself.

1 (8 count) can crescent rolls
3 eggs
1 tablespoon sugar
1 teaspoon vanilla
5 ounces cream cheese (softened)
3 tablespoons butter (softened) or 3 tablespoons margarine (softened)
3/4 cup powdered sugar
1/2 teaspoon vanilla
3 -4 medium apples (any variety)
1/4 cup apple juice
1/8 cup sugar
1 tablespoon lemon juice
2 tablespoons butter or 2 tablespoons margarine
1 teaspoon cinnamon
Cool Whip or ice cream, if desired

1 -2 tablespoon butter, for sauteing the toasts

Steps:

  • Preheat oven to 350°F Grease or spray with cooking oil a medium sized baking sheet.
  • Don't divide the crescent rolls. Lay them out completely flat on the baking sheet. Then separate them into four keeping two together to create four rectangles.
  • Beat together the cream cheese, butter, powdered sugar and vanilla. Spoon onto center of each rectangle, leave about a 1/2 inch space all around.
  • Fold the rectangles from one corner to the other and then fold up the other two corners to create a triangle. Try to even out the dough and make sure there are no holes otherwise your filling will leak out. Bake for 10-15 minutes until lightly browned.
  • While baking, cut up apples into slices. Melt the butter in a medium or large skillet. Add in the apples, apple juice, and lemon juice. Cook over medium heat, stirring the apples occasionally so they won't burn. When they are soft and almost translucent, add in the sugar and cinnamon, stirring a few minutes longer until sugar is melted and sauce is thick. Set aside.
  • When the toast is finished baking cool for 3-5 minutes. Beat the eggs, sugar, and vanilla until blended. In a small skillet, melt some butter, dip one of the toast into the egg mixture and turn over to coat each side. Brown in skillet about 2 minutes to each side, continue with other three pieces.
  • Sprinkle the finished french toast with powdered sugar if desired. Top with the apples, and cool whip or ice cream. Also sprinkle a little bit of cinnamon on top of the cool whip or ice cream.
  • * Stuffed french toasts can be made in advance and frozen until ready to serve. Bake about 10-15 minutes or until completely warmed through.

I made this for a Sunday School teacher appreciation breakfast a few years ago. It was definitely a hit. I prefer this over the fruit filled french toasts.

8 slices French bread, slices should be 1 1/2 inches thick
2 tablespoons butter, softened
8 ounces breakfast sausage, browned and drained
4 ounces shredded mozzarella cheese or 4 ounces swiss cheese
2 eggs, beaten
salt, to taste
pepper, to taste
maple syrup

Steps:

  • Cut each slice of bread horizontally almost all the way through.
  • Mix the sausage and cheese together.
  • Spoon mixture into the bread pockets.
  • Season the egg mix with salt and pepper.
  • Carefully dip both sides of the pockets in the beaten egg and fry in a hot skillet until cheese is melted.
  • Serve with warmed Maple syrup.

8 slices white bread, very thick
8 ounces softened cream cheese
6 tablespoons sugar, divided
2 teaspoons vanilla
8 tablespoons coarsely chopped pecans
7 large eggs
1 cup milk
1/2 teaspoon nutmeg
1 cup crushed corn flakes
1/2 cup shredded coconut

Steps:

  • Combine cream cheese, vanilla, chopped pecans and 2 tablespoons of sugar.
  • Set aside.
  • Combine eggs, milk, nutmeg and 4 tablespoons of sugar until well blended.
  • Set aside.
  • Combine crushed cornflakes with coconut and set aside.
  • Cut down through the top and along one side of each slice of bread.
  • Spread a generous tablespoon of cream cheese filling inside of each pocket.
  • Preheat a greased griddle.
  • Dip the bread pockets into the egg/milk mixture, then press them into corn flake/coconut mixture, coating both sides of each pocket slice.
  • Cook until golden on both sides.
  • Serve warm with syrup.
