Homemade Strawberry Popsicles image

Homemade Strawberry Popsicles are a delicious frozen popsicle treat made with three simple ingredients; strawberries, water, and sugar.

2 pounds fresh strawberries, washed, hulled and roughly sliced
1/4-1/2 cup sugar (start with 1/4 cup and add more to taste)
1 cup water

Steps:

  • Mix together strawberries and sugar and allow to set for 15-20 minutes. You want the sugar to draw out the juices from the strawberries. Add more sugar to taste if desired.
  • Pour strawberries into blender and blend with 1 cup water. Blend until desired textured is achieved. We prefer our popsicles to have some tiny strawberry pieces in them.
  • Pour into ice cream molds and freeze until solid.

These Strawberry Ice Cream Popsicles are an easy sugar-free popsicle recipe with delicious strawberry ice cream flavors.

1 cup Full-fat Plain Yogurt ( Greek yogurt or plain dairy-free coconut yogurt)
1 cup Heavy Cream (or canned coconut cream)
1/4 cup Liquid Sweetener of Choice (I used sugar-free maple-flavored syrup or powdered erythritol)
1 1/2 cup Strawberry
1-2 tablespoons Lime Juice
1 teaspoon Vanilla Extract
1 teaspoon Vodka (or spirit of choice)

Steps:

  • Place all the ingredients into a high-speed blender and blend at high speed until smooth. Adjust sweetener and lemon juice if desired.
  • Fill the popsicles mold up to the top and insert a popsicle wooden stick in the center of each popsicle.
  • Freeze overnight and store up to 3 months in the freezer.
  • Release one popsicle from the fridge at a time, place the mold under hot tap water to pull out the popsicle from its mold.

2 cups strawberry ice cream

Steps:

  • Add 2 cups (295 g) of softened chocolate ice cream to a tin foil tub, and freeze for 15-20 minutes.
  • Layer with 2 cups (295 g) of softened vanilla ice cream, and freeze for another 15-20 minutes.
  • Top with 2 cups (295 g) of softened strawberry ice cream and freeze for 1-2 hours.
  • Lastly, add 10 popsicle sticks to the frozen rub. Cut the sides of the tub at appropriate distances.
  • Slice the popsicles and serve.
  • Enjoy!
