This dish is so simple to make - easy, creamy, dreamy chicken!

4 skinless, boneless chicken breast halves
½ teaspoon salt
½ teaspoon ground black pepper
½ teaspoon garlic powder
1 (10.75 ounce) can condensed cream of chicken soup

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Clean chicken breasts and season with salt, pepper and garlic powder (or whichever seasonings you prefer) on both sides of chicken pieces.
  • Bake for 25 minutes, then add cream of chicken soup and bake for 10 more minutes (or until done). Serve over rice or egg noodles.

1/2 pound fresh baby carrots, cut in half lengthwise
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted

Hot cooked rice, optional

Steps:

  • Place chicken in a 1-1/2-qt. slow cooker. Top with carrots, soup and mushrooms. Cover and cook on low for 4-5 hours or until chicken is tender. Serve over rice if desired.

1 head broccoli, cut into florets
1 can chicken broth
0.75 (8 ounce) package cream cheese
1 teaspoon garlic, chopped
1 small red bell pepper, diced or strips
1/2 teaspoon pepper
2 tablespoons butter
1 lb bow tie pasta, cooked

Steps:

  • Melt butter and add chicken, cook till done.
  • Remove chicken from pan.
  • add broth, broccoli, red pepper, garlic& pepper.
  • Cook till tender, add chicken.
  • Cook additional 2-3 minutes.
  • Add cooked bowties and cook another 1-2 minutes.

1/4 cup extra-virgin olive oil, separated
1 1/2 lbs chicken thighs, skinless and boneless, cut into 1/2 inch strips (or skinless, boneless chicken breasts, cut into 1 1/2 inch chunks)
salt & freshly ground black pepper, to taste
1/2 lemon, seeded and very thinly sliced
3 large carrots, very thinly sliced (preferably on a mandoline)
3 large garlic cloves, very thinly sliced
1 tablespoon water
1 teaspoon ground cumin
1 teaspoon sweet paprika
1 pinch cinnamon
1 cup chicken stock
3/4 cup mixed herb-marinated pitted olive (3 ounces)
chopped roasted almonds, for serving
couscous, for serving

Steps:

  • In a large skillet, heat 2 T. of olive oil, over medium-high heat. Season chicken with salt and pepper to taste. Add the chicken to the heated skillet, in a single layer. Cook chicken, turning once, until it is browned but not fully cooked through. This should take about 4-5 minutes. Transfer the chicken to a plate, trying to leave as much oil in the skillet as possible.
  • Add the lemon to the skillet in a single layer. Cook them, turning once, until browned on both sides - about 2 minutes. Add the remaining 2 T. olive oil, the carrots and garlic and cook over medium heat, stirring occasionally until carrots are just slightly soft - this should take about 2 minutes. Add the water and cook until carrots are crisp tender and the liquid has evaporated - this should take about 2 minutes. Stir in the cumin, paprika and cinnamon and cook for about 1 minute more.
  • Return chicken to the skillet, and any accumulated juices. Cook, stirring, for about 1 minute. Add the chicken stock, olives and seson with salt and pepper. Simmer over medium heat until the chicken is cooked through - this should take about 5 minutes.
  • Transfer the chicken to a serving bowl and sprinkle with almonds.
  • Serve with couscous.

salt
8 fresh asparagus spears, trimmed and tough base discarded
1 carrot, cut in julienne strips
2 boneless skinless chicken breasts, cut in half (about 1 1/2 pounds)
fresh ground black pepper
2 tablespoons flour
2 tablespoons butter, divided
1 tablespoon olive oil
1 tablespoon shallot, minced
1/2 cup dry white wine
1 tablespoon tomato paste
1/4 cup chicken broth
2 tablespoons heavy cream

Steps:

  • Bring 4 cups of salted water to a boil. Drop in asparagus and carrots and cook about 4 minutes until crisp tender. Do not overcook. Drain and set aside.
  • Season the chicken with salt and pepper, then dredge in flour, shaking off excess. Heat 1 tablespoon butter and 1 tablespoon olive oil in a skillet over medium high heat. Place chicken in skillet and cook about 4 minutes on each side until golden brown. Cover and cook an additional 4 to 5 minutes until done. Remove chicken to a warm serving platter.
  • Add shallot to skillet, stir and cook briefly. Add wine and cook until reduce by half. Add tomato paste, chicken broth, and cream, stirring to combine.
  • Heat 1 tablespoon butter in another skillet and add asparagus and carrots to combine and coat with butter. Arrange around chicken on serving platter. Pour wine sauce over chicken and serve.
