CREAMY CELERY ROOT AND PEARL ONIONS
For several years I made creamed onions for Thanksgiving, but I wanted to change the recipe. I decided to add celery root. Celery root is perfect with the onions, and the creamy sauce is addicting! I like to add additional fresh ground pepper before serving. -Tina Mirilovich, Johstown, Pennsylvania

- Place celery root in a 6-qt. stockpot; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, until tender, 4-6 minutes. Drain; set aside., In a large skillet or Dutch oven, heat butter over medium heat. Add pearl onions, broth, sugar and salt. Cook onions, stirring often, until onions begin to brown, 12-15 minutes. Add celery root and cream; simmer until slightly thickened, 3-5 minutes. Stir in parsley and pepper.

CELERY ROOT AND ONION GRATIN

Steps:
- Preheat oven to 400°F.
- Butter 11 x 7-inch glass baking dish.
- Mix together celery root, onion, garlic, salt, pepper, and whipping cream in a large bowl.
- Pour celery root mixture into baking dish; and spread to an even thickness and gently press to compact. Sprinkle with cheese. Bake until top is golden brown, about 60 minutes. Allow to rest for 10 minutes before serving.
PEARL BAKED CREAM ONIONS
Pearl onions are baked with butter, cream and crushed crackers.

EASY CREAMED PEARL ONIONS

- Place onions into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 10 minutes. Drain.
- Melt butter in a large skillet over medium heat; cook and stir flour and nutmeg in melted butter for about 5 minutes; season with salt and pepper. Add cream to flour mixture; cook and stir until bubbly and thick, about 5 minutes more. Stir onion and parsley into cream sauce until heated through, 2 to 3 minutes.

CREAMY CELERY AND ONION CASSEROLE
This dish is comforting and delicious, compliments pretty much any main course, and would also be a good dish for a brunch buffet. I made this up one evening when I needed a vegetable side dish, and it was so good I plan to continue making it for years to come! A good way to describe this dish is a healthier, more vegetable-y version of your favorite cream of celery soup in side dish form! So, tweak the recipe to adjust it to your tastes and what you have on hand, and enjoy!

- Clean the celery, washing off all dirt. Chop into desired size. I suggest cutting the ribs into approximately 1 inch pieces (I cut on the diagonal to try to make it look fancier). Include the ribs and as much of the leafy greens as you can--they're tasty too! (My cleaning approach for a particularly muddy head of celery was to chop first, discarding the dried out tops, dunk it all in a bowl of cold water and swish around to get the dirt to fall to the bottom, and then scoop out the celery pieces into a salad spinner to remove excess water.).
- In a medium to large size saucepan on the stove top, saute the celery (you may need to work in two to three batches depending on your pan size and amount of celery) in the 1 tbsp extra virgin olive oil. (If you saute in batches, only use a total of 1 tbsp oil--e.g. if you saute in two batches use about 1/2 tbsp per batch.) When sauteing, try to develop a little of the browning/carmelization that will give the dish extra flavor by not stirring constantly. When the celery has cooked to your desired done-ness (e.g., I like mine lightly sauteed and still a little crispy), lightly salt and transfer to a 8 x 8 square glass baking dish. Repeat until all celery is sauteed and in the baking dish.
- (Assuming you have not burned the celery in the pot) Using the same hot pot you just emptied of the last batch of sauteed celery, over medium heat add another 1 tbsp of olive oil and the diced onion. Saute for a few minutes to your desired done-ness. Add the 1 1/2 tbsp butter and allow to thoroughly melt, stirring in to the onions. Once melted, add the 1 1/2 tbsp flour and stir well. Keep stirring for a few minutes--not allowing to burn--as the roux comes together. (Just keep it moving in the pan, and take it off the heat if you think it is starting to burn.).
- Slowly add small amount of the milk, stirring well after each addition to thoroughly incorporate. Add the nutmeg and taste for seasoning. You'll probably need to add more salt, maybe even a few tablespoons (depending on the type of salt you use). Keep stirring the mixture over medium heat until you get the seasonings right and the mixture comes just up to a boil and thickens. Turn off the heat.
- Mix the melted butter with the bread crumbs.
- Add the sauteed celery back in and stir to coat the celery with the creamy mixture. Transfer the creamy celery mixture back to the baking dish. Top with the butter/bread crumb mixture and bake (or broil if you pan can handle it) in the oven just to brown the bread crumbs.
- Variations: You could add or substitute other vegetables in this dish, e.g., peas, carrots, potatoes, brussel sprouts, cubed squash, asparagus, leafy greens. You could also add herbs and spices to your liking. You could add shredded cheese to the roux once it comes together to give it a cheesier flavor. You can omit the bread crumb topping--I often do.
CREAM OF CELERY ROOT SOUP

- Melt butter in heavy large saucepan over medium heat. Add celery roots, onions and celery. Sprinkle with salt and pepper. Cover and cook until tender, stirring occasionally, about 20 minutes. Add garlic, celery salt and cayenne pepper and stir 1 minute. Add vermouth and boil until most of liquid evaporates, about 8 minutes. Add stock. Bring to boil. Reduce heat and simmer until vegetables are very tender, about 15 minutes. Puree soup in blender in batches until smooth. Return to saucepan. Add cream. Simmer until thickened to desired consistency, about 5 minutes. Ladle soup into bowls. Sprinkle with chives and serve.
ROASTED ROOT VEGETABLES WITH PEARL ONIONS
This is a fantastic side dish for a Thanksgiving Turkey, and one of my favorite ways to prepare vegetables for the holidays.

- Cook onions in a large pot of boiling, salted water for 2 minutes.
- drain.
- peel root vegetables, and chop into large pieces. leave base end intact for rustic presentation. place in glass baking dish
- preheat oven to 325 degrees.
- combine sugar, vinegar and mustard in bowl for glaze.
- transfer onions to glass baking dish, with root vegetables. add glaze, butter, 1 tsp salt, 1/4 tsp pepper, and 1/2 cup water. toss to coat. cover with foil. roast for 25 mins or till soft, for crisper vegetables remove foil at end of cooking. check seasonings and serve. serves 4.

CELERIAC (CELERY ROOT), ONIONS & LEMON
Celeriac is very ugly looking and you do waste a lot peeling it but try it - if you like celery you'll love this vegetable it has a mild celery flavor. The onion & lemon compliment it. I threw this together last night and it was rather good - You have to peel all the knots of the celeric and get in to the white flesh.

- Peel the root so you have only the white flesh, cut it into pieces apprx 1/8" thick and bite size.
- Immerse prepared celeriac in boiling water and boil 5 minutes, drain (keep the water to use in a soup recipe).
- Spray a fry pan (large enough to hold the veggies in a single layer) and heat it, Add celeriac& Onions.
- Rotate the veggies but allow the onions and celeriac to brown apprx 10 minutes.
- Sprinkle lemon over the veggies.
- Serve as a side dish vegetable.

- Cut onions into 1-inch pieces. With a sharp knife peel celery root and cut into 2- by 1/2-inch sticks. Divide celery root between 2 large roasting pans and toss each half with 1 tablespoon oil and 1 teaspoon salt. Roast celery root in upper and lower thirds of oven, stirring occasionally and switching position of pans halfway through roasting, 25 minutes total.

- Partially thaw onions for 10 minutes, then thinly slice crosswise into rounds. Set in a colander and let thaw completely. Drain and spread on a paper towel-lined tray. Pat dry with paper towels.
- Heat oil in a large skillet over medium-high heat. Add onions and 1/4 teaspoon kosher salt; cook, stirring frequently, until liquid evaporates and onions are lightly browned and slightly crisp, about 10 minutes.
- Melt butter in a saucepan over medium heat. Stir in flour until smooth; cook and stir until pale golden, about 30 seconds. Gradually whisk in milk. Increase heat to medium-high and cook, whisking frequently, until sauce is bubbling, thickened, and smooth, about 8 minutes. Add 3/4 cup parsley, sherry, paprika, cloves, and cooked onions; season to taste with salt and pepper. Transfer to 3 buttered 2-cup broiler-safe baking dishes or 1 buttered 2-quart baking dish.
- Preheat the oven's broiler to high. Sprinkle panko evenly over onion mixture.
