5 slices bacon
8 oz baby portabella mushrooms (sliced)
3 green onion (thinly sliced)
3 garlic cloves (minced)
1/2 tsp salt
1/2 tsp black pepper
1/4 tsp red pepper flakes
3 boxes boxes frozen cut leaf spinach (thawed and drained)
2 cups half & half
1/2 cup heavy cream
1/2 cup grated Parmesan cheese (divided)
2 cup shredded sharp white cheddar or Gruyere cheese
1 cup panko breadcrumbs
2 Tbsp melted butter

Steps:

  • Preheat the oven to 350°F and spray a 2 quart shallow baking dish with cooking spray. Set aside.
  • In a large skillet cook the bacon over medium-high heat until crisp. Remove to paper towels to drain. Reserve 3 Tbsp drippings.
  • Add the sliced mushrooms and onion to drippings. Cook for 3-5 minutes over medium-high until softened and beginning to brown.
  • Ring the spinach in a kitchen towel to remove all excess moisture, then add to the pan. Add salt, black pepper, red pepper flakes, half & half, heavy cream and 1/4 cup grated Parmesan cheese. Mix well.
  • Add 1 1/2 cup shredded cheese. Crumble the bacon and add back to the spinach reserving 2 Tbsp for the top. Mix well then pour into the baking dish.
  • Sprinkle with the remaining 1/2 cup shredded cheese.
  • Toss the panko breadcrumbs, 1/4 cup grated Parmesan cheese with 2 Tbsp melted butter and sprinkle on top of the cheese.
  • Bake for 30 minutes or until golden and bubbly.
  • Garnish with reserved bacon crumbles before serving.

1 pound fresh spinach, about 2 large bunches, thoroughly cleaned
3 to 4 strips of bacon, uncooked, finely chopped
1 medium onion, finely chopped
1 clove garlic, finely chopped (about 1 teaspoon)
A pinch of nutmeg
Salt and pepper to taste
For the béchamel cream sauce:
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup whole milk

Steps:

  • Blanch and chop the spinach: Blanch the spinach in a pot of boiling water until the spinach is wilted, about 30 seconds to 2 minutes. Drain and rinse in cold water to stop the spinach from cooking further. Squeeze the spinach to remove all the moisture possible. Chop the spinach and set aside.
  • Sauté the bacon, onions, garlic: Heat a large skillet on medium high. Add the chopped bacon and sauté until the bacon begins to render some of its fat. Add the chopped onion and garlic. Sauté until onions are translucent.
  • Make the béchamel sauce: Melt the butter in a small saucepan on medium/low heat until it just starts to bubble. Add the flour and cook, stirring until smooth, about 2 minutes. Slowly add the milk, whisking continuously, cooking until thick.
  • Finish the dish and serve: Combine spinach, bacon and onion mixture, and béchamel sauce into one pan. Add nutmeg, salt, and pepper to taste. Bring to a simmer, remove from heat and serve.

4 slices bacon
1 small onion, minced
2 cloves garlic, minced
2 tablespoons flour

  • Cook 3 slices chopped bacon in a saucepan until crisp. Remove; discard all but 2 tablespoons drippings. Add 1 chopped small onion and 1 minced garlic clove,; cook 3 minutes. 4 tablespoons (1/2 stick) unsalted butter
4 cups chopped yellow onions (2 large)
1/4 cup flour
1/4 teaspoon grated nutmeg
1 cup heavy cream
2 cups milk
3 pounds frozen chopped spinach, defrosted (5 (10-ounce) packages)
1 cup freshly grated Parmesan cheese
1 tablespoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup grated Gruyere cheese

Steps:

  • Preheat the oven to 425 degrees F. Melt the butter in a heavy-bottomed saute pan over medium heat. Add the onions and saute until translucent, about 15 minutes. Add the flour and nutmeg and cook, stirring, for 2 more minutes. Add the cream and milk and cook until thickened. Squeeze as much liquid as possible from the spinach and add the spinach to the sauce. Add 1/2 cup of the Parmesan cheese and mix well. Season, to taste, with salt and pepper. Transfer the spinach to a baking dish and sprinkle the remaining 1/2 cup Parmesan and the Gruyere on top. Bake for 20 minutes until hot and bubbly. Serve hot.

I received the recipe from a friend several years ago, and it's been part of my Thanksgiving menu ever since. I usually double or triple the recipe. My children aren't the only ones who want extra servings!

2 tablespoons unsalted butter (plus more for the dish)
1 garlic clove, halved
5 shallots, thinly sliced crosswise
5 (10 ounce) boxes frozen spinach, thawed
8 ounces cream cheese, at room temperature
1 cup heavy cream
1 cup whole milk
1 cup grated gruyere or 1 cup grated swiss cheese
1 teaspoon kosher salt
1/2 teaspoon black pepper
1 teaspoon ground nutmeg

Steps:

  • Heat oven to 375 degrees.
  • Rub the sides and bottom of a buttered 8-inch baking dish with the garlic; discard garlic.
  • In a skillet, over medium heat, melt the butter. Add the shallots and cook until softened, 5 to 7 minutes.
  • Squeeze the spinach to remove any excess liquid. In a large bowl, combine spinach, cream cheese, heavy cream, milk, Gruyere or Swiss cheese, salt, pepper, nutmeg and shallots. Transfer to dish.

This recipe is guaranteed to put a smile on any spinach-lover's face and will compliment any meal, since this is a creamed spinach recipe it is not a dish that bakes out totally firm. To remove the bitterness from the frozen spinach I like to microwave it in a little water for 10 minutes or until boiling, rinse until cold water then squeeze dry, if you don't mind the strong taste then you can omit this step. Prep time does not include cooking the bacon.

1/2 lb bacon (cooked until crisp then chopped)
1 (300 g) package frozen spinach (thawed under hot water then squeeze dry)
5 tablespoons butter (or use the bacon grease from the bacon it must be at least 5 tablespoons)
1 medium onion, finely chopped
1 -2 tablespoon fresh garlic
1/4-1/2 teaspoon cayenne pepper
2 teaspoons seasoning salt
1 (10 ounce) can sliced mushrooms, drained (or use fresh sauteed sliced mushroomed)
3 tablespoons flour (use 4 tablespoons for a thicker sauce)
2 cups 18% cereal cream (or use half and half cream)
1 1/2 cups grated cheddar cheese
2/3 cup grated parmesan cheese, divided
1/2 teaspoon black pepper (or to taste)

Steps:

  • Set oven to 350 degrees.
  • Butter an 9-inch baking dish (or use an 8 x 8-inch baking dish).
  • In a medium saucepan melt 5 tablespoons butter over medium heat; add in onions and saute for about 4 minutes (or until soft).
  • Add in garlic, mushrooms, cooked bacon, cayenne pepper and seasoned salt, saute for 1 minute.
  • Add in flour and stir with a wooden spoon and stir constantly for 2 minutes.
  • Slowly add in the cream; bring to a boil over medium heat stirring constantly until thickened and smooth (this should take about 3-4 minutes).
  • Reduce the heat to low and add in the spinach and stir until combined and mixed into the cream sauce.
  • Mix in the cheddar cheese and 1/3 cup grated Parmesan cheese; stir until the cheese has melted.
  • Season with black pepper to taste.
  • Transfer to prepared baking dish.
  • Sprinkle with 1/3 (or to taste) Parmesan cheese.
  • Bake for about 25 minutes or until browned on top and bubbly.
  • Let sit for 20 minutes before spooning out of the baking dish, this only gets better the longer you leave it sit, but you won't be able to keep your spoon out of the dish lol!.
