1 cup arborio rice (risotto)
750 ml water
500 ml milk
2 tablespoons soft brown sugar
1 vanilla bean, cut in half lengthwise
2 tablespoons custard powder
3 tablespoons honey
1 teaspoon ground cinnamon
2 large beurre bosc pears, pealed and cut into thick lengthwise slices
4 tablespoons macadamia nuts, roasted and chopped

Steps:

  • Put the rice, 750ml water, milk and sugar in a pot.
  • Remove the seeds from the vanilla bean and add the bean itself. Bring to the boil.
  • Reduce the heat and simmer for 20 minutes, stirring regularly, or until the rice is tender.
  • Blend the custard powder with 2 tablespoons water and stir through the rice mixture.
  • Continue stirring until the mixture boils, then simmer for 2 minutes until the mixture thickens.
  • Remove from the heat, cover the surface of the rice mixture with plastic wrap and allow to stand while preparing the pears.
  • Gently heat the honey and cinnamon in a shallow fry pan, add the pear slices in batches and cook over a medium heat until they brown and soften slightly. Remove from the heat.
  • Remove the vallina bean and spoon the creamed rice into bowls. Stand pear slies upright at the edge of each bowl.
  • Sprinkle with chopped macadamias.

2 tablespoons butter
1 teaspoon grated lemon rind
1 tablespoon lemon juice
⅛ teaspoon ground cinnamon

Steps:

  • Combine rice, raisins, milk, honey, and butter in a saucepan. Bring the mixture to a boil, reduce the heat, and let it simmer for 15 minutes; stirring occasionally. Stir in lemon rind and juice.
  • Serve the rice in bowls and garnish (optional) with cinnamon and slivered almonds.

100g honey
1 orange and 1 lemon, juice and thinly peeled rind
1 vanilla bean, split and seeds scraped
2 tsp orange-blossom water, or to taste
Serve with: Thick Plain Yoghurt and Chopped Pistachios

Steps:

  • Preheat the oven to 200°C. Simmer the honey, juices, rinds, vanilla bean and seeds in a small saucepan over a medium heat until reduced to a light syrup (8-10 minutes).
  • Place the pears, cut-side up in a roasting pan large enough to fit the pears snugly. Pour over the honey mixture and roast, basting occasionally, until tender and beginning to caramelise (20-25 minutes).

1/2 cup flour
1/2 cup sugar, plus 1 tsp
1/2 cup coarsely chopped macadamia nuts (, you can use other nuts as long as they are peeled & Toasted)
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup milk
1 egg
1 teaspoon vanilla
3 ripe bartlett pears, , peeled,halved and cored

Steps:

  • Preheat oven to 350f.
  • Butter a 9 1/2" round ceramic tart or quiche pan.
  • Combine flour 1/2 cup sugar,nuts, baking powder& salt.
  • Stir milk, egg& vanilla until blended.
  • Add to flour mixture& stir until smooth.
  • Place each pear half, cut side down on a cutting board.
  • Cut crosswise into 1/4" slices.
  • Keep it in it's original shape and, using a spatula, place it in the buttered pan with the stem end facing toward the center.
  • Repeat with remaining pears.
  • Press pear halves to fan them slightly toward the center Pour batter over the pears, sprinkle tops with 1 tsp sugar.
  • Bake 35-40 minutes or until golden and a toothpick comes out clean when inserted in the center Cool completely on a wire rack.
  • Cover and refrigerate until well chilled, serve cold.
