5 cups sliced fresh mushrooms
1 ½ cups chicken broth
½ cup chopped onion
⅛ teaspoon dried thyme
3 tablespoons butter
3 tablespoons all-purpose flour
¼ teaspoon salt

1 cup half-and-half
1 tablespoon sherry

Steps:

  • In a large heavy saucepan, cook mushrooms in the broth with onion and thyme until tender, about 10 to 15 minutes.
  • In blender or food processor, puree the mixture , leaving some chunks of vegetable in it. Set aside.
  • In the saucepan, melt the butter, whisk in the flour until smooth. Add the salt, pepper, half and half and vegetable puree. Stirring constantly, bring soup to a boil and cook until thickened. Adjust seasonings to taste, and add sherry.

4 cups boiling water
2 cups dried porcini mushrooms (about 1 1/2 ounces)
1 tablespoon cornstarch
1 tablespoon lower-sodium soy sauce
⅝ teaspoon kosher salt
½ teaspoon black pepper
2 tablespoons olive oil
2 cups sliced shallots (about 8 ounces)
1 garlic clove, minced (about 1 teaspoon)
1 cup dry sherry
3 pounds assorted fresh mushrooms (such as cremini, portobello, shiitake, and button), sliced
1 ½ tablespoons chopped fresh thyme
⅓ cup heavy cream

Steps:

  • Pour 2 cups of the boiling water over the porcini mushrooms. Let stand 20 minutes.
  • Drain the porcini mushrooms in a colander over a bowl, reserving the mushroom broth; set the mushrooms aside.
  • Strain the mushroom broth through a cheesecloth-lined colander into a bowl; discard the solids.
  • Stir in the cornstarch, soy sauce, salt, pepper, and remaining 2 cups boiling water into the mushroom broth; set aside.
  • Heat the oil in a medium-sized nonstick skillet over medium-high.
  • Add the shallots and garlic; cook, stirring occasionally, until the shallots are soft, 4 to 5 minutes.
  • Add the sherry; bring to a boil, and cook 30 seconds. Remove from the heat.
  • Stir together the porcini mushrooms, broth mixture, shallot mixture, fresh mushrooms, and thyme in a 5-quart slow cooker.
  • Cover and cook on HIGH until the vegetables are very tender and the flavors blend, about 4 hours.
  • Uncover and cook until slightly thickened, about 20 minutes.
  • Transfer 2 cups of the soup to a blender.
  • Remove the center piece of the blender lid (to allow steam to escape); secure the lid on the blender.
  • Place a clean towel over the opening in the blender lid (to avoid splatters).
  • Blend until smooth, about 10 seconds.
  • Return the puréed soup to the slow cooker; gently stir in the cream. Ladle the soup into bowls, and serve hot.

Steps:

  • Wipe mushroom caps with a damp cloth. Trim stems and coarsely chop mushrooms. In a 6-quart pot, melt butter with onion. Add mushrooms and sherry cooking wine. Cook over high heat, stirring occasionally, 8-10 minutes or until most, but not all, of the liquid is absorbed. Sprinkle flour over mushrooms; stir in milk, broth, soy sauce and sage. 5 ounces fresh shiitake mushrooms
5 ounces fresh portobello mushrooms
5 ounces fresh cremini (or porcini) mushrooms
1 tablespoon good olive oil
1/4 pound (1 stick) plus 1 tablespoon unsalted butter, divided
1 cup chopped yellow onion
1 carrot, chopped
1 sprig fresh thyme plus 1 teaspoon minced thyme leaves, divided
Kosher salt
Freshly ground black pepper
2 cups chopped leeks, white and light green parts (2 leeks)
1/4 cup all-purpose flour
1 cup dry white wine
1 cup half-and-half
1 cup heavy cream
1/2 cup minced fresh flat-leaf parsley

Steps:

  • Clean the mushrooms by wiping them with a dry paper towel. Don't wash them! Separate the stems, trim off any bad parts, and coarsely chop the stems. Slice the mushroom caps 1/4-inch thick and, if they are big, cut them into bite-sized pieces. Set aside.
  • To make the stock, heat the olive oil and 1 tablespoon of the butter in a large pot. Add the chopped mushroom stems, the onion, carrot, the sprig of thyme, 1 teaspoon salt, and 1/2 teaspoon pepper and cook over medium-low heat for 10 to 15 minutes, until the vegetables are soft. Add 6 cups water, bring to a boil, reduce the heat, and simmer uncovered for 30 minutes. Strain, reserving the liquid. You should have about 4 1/2 cups of stock. If not, add some water.
  • Meanwhile, in another large pot, heat the remaining 1/4 pound of butter and add the leeks. Cook over low heat for 15 to 20 minutes, until the leeks begin to brown. Add the sliced mushroom caps and cook for 10 minutes, or until they are browned and tender. Add the flour and cook for 1 minute. Add the white wine and stir for another minute, scraping the bottom of the pot. Add the mushroom stock, minced thyme leaves, 1 1/2 teaspoons salt, and 1 teaspoon pepper and bring to a boil. Reduce the heat and simmer for 15 minutes. Add the half-and-half, cream, and parsley, season with salt and pepper, to taste, and heat through but do not boil. Serve hot.

1 small handful dried porcini
olive oil
600 g mixed fresh wild mushrooms (chanterelles, girolles, trompettes de mort, shiitake, oyster), clean and sliced
2 cloves garlic, peeled and finely sliced
1 red onion, peeled and finely chopped
1 handful fresh thyme, leaves picked
sea salt
freshly ground black pepper
1 litre organic chicken or vegetable stock
1 handful fresh flat-leaf parsley, leaves picked and roughly chopped
1 tablespoon mascarpone cheese
1 lemon
truffle oil, optional

Steps:

  • Place the porcini in a small dish, add boiling water just to cover, and leave to soak. Get a large casserole-type pan nice and hot, then add a good couple of lugs of olive oil and your fresh mushrooms. Stir around very quickly for a minute, then add your garlic, onion and thyme and a small amount of seasoning. After about a minute you'll probably notice moisture cooking out of the mushrooms and at this point add half of your porcini, chopped up, and the rest left whole. Strain the soaking liquid to remove any grit, and add it to the pan. Carry on cooking for about 20 minutes until most of the moisture disappears.
  • Season to taste, and add your stock. Bring to the boil and simmer for around 20 minutes. I usually remove half the soup from the pan and whiz it up to a purée at this point, then pour it back in, adding the parsley and mascarpone, and seasoning carefully to taste.
  • You can serve this soup as you like, but there are a few things to remember when finishing it off. Mix together a pinch of salt and pepper with the zest of one lemon and the juice of half of it, then spoon a little of this into the middle of the soup. When you go to eat it, stir it in and it gives a wonderful flavour. Other things you can consider are little slices of grilled crostini put into the bottom of the bowls before the soup is poured over. Or you could even quickly fry some nice-looking mushrooms - like girolles, chanterelles or oysters - and sprinkle these on top of the soup. 2 tablespoons cornstarch

Steps:

  • Melt butter in a large stockpot or Dutch oven over medium heat. Add garlic and mushrooms, and cook, stirring occasionally, until tender and browned, about 5-6 minutes; season with salt and pepper, to taste. Stir in onion and cook, stirring frequently, until translucent, about 2-3 minutes. Stir in wine and bring to a boil; reduce heat and simmer until slightly reduced, about 5 minutes. Stir in chicken broth, heavy cream and thyme. In a small bowl, whisk together cornstarch and 1/4 cup water. Stir in mixture to the soup until slightly thickened, about 1-2 minutes; season with salt and pepper, to taste. If the soup is too thin, add more cornstarch as needed until desired consistency is reached. Serve immediately.

1 medium onion, cut into medium dice (to yield about 1-1/2 cups)
4 cloves garlic, minced
3/4 lb. fresh wild mushrooms, wiped clean, trimmed (stems removed from shiitakes), and thinly sliced (to yield about 4-1/2 cups)
2 Tbs. plus 1 tsp. fresh thyme leaves

4 cups homemade or low-salt chicken or vegetable broth
1/4 cup half-and-half
3 Tbs. dry sherry
1 Tbs. soy sauce

Steps:

  • Melt the butter and olive oil in a 5-qt. or larger stockpot over medium-high heat. Add the onion and cook until it's beginning to brown (resist the urge to stir too often), about 4 minutes. Stir in the garlic and cook for 1 minute. Add the mushrooms, 2 Tbs. of the thyme, and 1/2 tsp. each salt and pepper; cook until the mushrooms become limp, 2 to 4 minutes.
  • Add the broth, scraping up any browned bits in the pot with a wooden spoon. Bring to a boil over high heat, reduce the heat to maintain a simmer, and cook until the mushrooms are tender, 7 to 10 minutes. Remove from the heat and let cool slightly. Transfer about half of the soup to a stand blender and process until smooth. Return the mixture to the pot and stir in the half-and-half, sherry, and soy sauce. Add more salt and pepper to taste, if needed, and reheat. Garnish each serving with a small pinch of the remaining 1 tsp. thyme.

Steps:

  • In a large saucepan melt butter with the olive oil over moderate heat. Add the shallots and cook until tender, about 2 to 3 minutes. Add the sliced mushrooms, thyme leaves, salt and pepper, cooking until all of the liquid rendered from the mushrooms evap orates. Add the Sherry and cook until evaporated. Remove a ½ cup of the cooked mushrooms and reserve. Stir in the flour and cook for 2 to 3 minutes. Add 3 cups of the chicken broth, bring to a simmer and cook for 15 minutes. In a blender purée the soup in batches until smooth. For a very smooth soup, pass through a fine sieve. Return soup to saucepan, bring to a simmer and whisk in the milk. Add reserved chicken broth to achieve desired consistency. Adjust seasoning with salt, pepper and nutmeg. Lower heat and whisk in ¼ cup of the sour cream. Keep soup warm but do not simmer or boil. Serve soup garnished with reserved cooked mushrooms and a dollop of the remaining sour cream.

  • Place Porcini in medium bowl. Pour boiling water over. Let stand until softened, about 30 minutes. Drain, reserving soaking liquid. Strain soaking liquid through cheesecloth to remove any dirt. Coarsely chop Porcini.
  • Melt butter in heavy large saucepan over medium high heat. Add onion and saute until tender, about 5 minutes. Add garlic, Shiitake and Porcini and saute until mushrooms are tender, about 5 minutes. Add Sherry and boil until almost all liquid evaporates. Add reserved soaking liquid and stock. Simmer soup 15 minutes to blend flavors. Add Enoki mushrooms and stir until heated through. Season to taste with salt and pepper. Ladle soup into bowls. Drizzle with additional Sherry and garnish with epazote, oregano or chives.

4 tablespoons olive oil, butter or vegan butter
one large onion, diced (or two fat shallots)
4 garlic cloves, rough chopped (2-4 more for garnish, sliced)
1 lb cremini mushrooms, sliced ( or use mushrooms of your choice)
1/2 teaspoon salt
1 tablespoon fresh rosemary, chopped (or thyme)
1/4 cup sherry cooking wine (not vinegar) or marsala wine or red wine
5 tablespoons flour (or GF flour)
3 cups hot veggie stock, chicken stock or beef broth (or use water with bullion cubes) see notes.
1/2 cup to 1 cup sour cream ( 3/4 cup seems just right) or use vegan sour cream, cashew cream (or use heavy cream)
pepper to taste
Optional garnish: drizzle of truffle oil, garlic "chips" ( see notes) croutons, crusty bread!

Steps:

  • Heat oil or butter in a large, heavy-bottom pot or dutch oven. Add onion and saute over medium-high heat, 3-4 minutes, stirring constantly until golden and fragrant. Lower heat to medium, add garlic, saute 2 minutes.
  • Add the sliced mushrooms, salt and rosemary. Saute 10-12 minutes, stirring occasionally, taking your time here, allowing mushrooms to release all their liquid. Add the cooking sherry (do not mistake this for sherry vinegar). Turn the heat up, and cook this completely off, stirring until most or all of the liquid in the pan has cooked off about 3-4 minutes, and mushrooms glisten. Optional: Set aside 1/4 cup mushrooms for garnish.
  • Turn the heat back down to medium, sprinkle the flour over top, stir constantly, toasting it for 1-2 minutes. Add one cup of hot stock and stir it in WELL, getting all those browned bits (in corners and bottom) mixed in. (A wood spoon works well here.) Add the second cup of stock, stirring well to combine, then add the third cup of stock and bring it to a gentle simmer, whisking. It will thicken.
  • Stir in the sour cream until fully incorporated.
  • Season with pepper and taste for salt.
  • If you would like a thinner soup, add a little more broth, readjusting the salt.
  • , thinly slice garlic (the long ways). Heat 2 tablespoons oil in a little saute pan over medium heat. Add the garlic slices, not overlapping, sprinkle with a little salt, and turn over when golden, about 3 minutes. Cook other side until golden and crispy. Set on a paper towel. At the same time you could toss in a few more rosemary leaves.
  • Ladle in bowls and top with a few slices of mushrooms and garlic chips and a drizzle of truffle oil. Serve with crusty bread.

  • Preheat Oven to 350°Place 2 Tablespoons of Olive Oil in a 8 x 12 casserole dish
  • Mix together Flour, Garlic Powder, Black Pepper and Salt
  • Coat Chicken with Flour Mixture and place Chicken in the casserole dish
  • Slice Mushrooms
  • Heat 1 Tablespoon Olive Oil in a Sauté Pan
  • Add Mushrooms to Sauté Pan
  • Cook Mushrooms until they have shrunk and are getting soft.
  • Add 1/2 teaspoon Salt and 1 Tablespoon of Sherry, stir until the sherry has evaporated.Remove mushrooms from heat
  • Mix together, cream of mushroom soup, milk, 1/3 cup of sherry, salt and pepper
  • Place Chicken into preheated oven (350°). Bake for 30 minutes
  • Flip Chicken over and bake for 45 minutes
  • Pour the sauce (Milk Soup, Sherry mixture) over the chicken
  • Add mushroom with chicken and sauce
  • Place back in the oven. Bake for additional 20 minutes or until sauce is bubbling

2 to 2-1/2 cups chicken or vegetable broth
3/4 cup golden sherry

1/2 cup onion (finely chopped)
1 clove garlic (finely chopped)
1 lb fresh mushrooms (cleaned and sliced)

1 ounce dried porcini mushrooms ((can use dried chantrelle also))
¾ cup good sherry
2 tablespoons extra virgin olive oil
2 cups white onions
1 pound cremini mushrooms, cleaned and sliced with stems
4 tablespoons unsalted butter
2 cloves garlic, finely diced
4 tablespoons all purpose flour
4 cups chicken stock (smoked if you have it)
8 sprigs thyme, tied with string
2 teaspoons kosher salt
½ teaspoon freshly cracked pepper
½ cup crème fraîche

Steps:

  • Place dried porcini mushrooms in a small bowl and add sherry. Soak for at least 30 minutes, no more than an hour. Stir to make sure the sherry incorporates with all the dried mushrooms.
  • After re-hydrated, strain the liquid from the mushrooms, and keep the strained liquid. Dice up the re-hydrated mushrooms prior to putting into the soup.
  • In a 3 quart soup pot over medium heat add olive oil and white onions. Saute for 8 - 10 minutes or until soft. Next add cremini mushrooms and continue to stir for another 15 - 18 minutes or until they start browning. Add butter and garlic and stir until the butter is melted.
  • Add flour and continue to stir for another 3 minutes to make the roux. Add stock, sherry, thyme, rehydrated mushrooms, salt and pepper and bring to a simmer. Simmer the soup for 20 minutes, it will slightly thicken.
  • In a separate medium sized bowl add the crème fraîche and place one cup of the hot soup mix in the bowl and stir. This will temper the cream and keep it from curdling. Place the entire mix back into the soup and stir, bringing back to a simmer for another 10 minutes. Salt and pepper to taste as needed.
  • Serve with your favorite crusty bread.

One of my favorite recipes, this chicken with a sherry mushroom sauce is tender and loaded with rich flavors. Plus it comes together in under an hour, with just 20 minutes of active preparation time.

Number Of Ingredients 8

4 Chicken Breasts
Salt and Pepper
2 tablespoons Butter
2 cloves of Garlic (crushed or chopped)
8 ounces Sliced Mushrooms (I like baby bella)
1 cup Dry Sherry
1/3 cup Heavy Cream
1/2 teaspoon Thyme

Steps:

  • Heat your oven to 350 degrees.
  • Melt 1 tablespoon of butter in a large skillet over medium-high heat. Generously salt and pepper both sides of the chicken breasts. Once the butter has melted, add the chicken to the skillet. Then add 1/4 cup of sherry. Cook the chicken for 3 minutes per side, until browned. Then remove the chicken from the skillet and place it on a plate while you work on the sauce.
  • Melt another tablespoon of butter in the same skillet you just used to cook the chicken. Add the garlic and stir, scraping up any brown bits. After a minute add the mushrooms. Generously salt and pepper and toss until the mushrooms are evenly coated with butter. Cook for 2 minutes. Then add the remaining sherry. Let the mushrooms simmer for another 4 minutes. Then stir in the cream and thyme. Let the sauce reduce for 5 minutes then add the chicken back to the skillet. Place the skillet in the oven for 30 minutes so that the chicken can finish cooking. (Make sure you are using an oven-safe skillet!)
  • After 30 minutes in the oven the chicken should be done - serve it with pasta or rice pilaf. Spoon the sauce over the top.

Add all mushrooms and sauté until beginning to soften, about 4 minutes. Add white wine and Sherry. Boil until liquid is reduced to glaze, about 6 minutes.
  • Mix remaining 2 tablespoons butter and 1/4 cup flour in small bowl until smooth paste forms. Add flour paste to mushroom mixture in pot; stir until mixture melts and coats vegetables. Gradually mix in stock. Bring to boil, stirring frequently. Reduce heat to medium-low and simmer until mushrooms are tender, stirring often, about 10 minutes. Stir in cream. Season with salt and pepper.
  • Working in batches, puree soup in blender or processor until smooth. Return soup to pot. (Can be prepared 1 day ahead. Cover and refrigerate. Rewarm over medium-low heat before serving.) Ladle soup into bowls and serve.

3 cups boiling water
7 tablespoons unsalted butter, divided
16 ounces fresh cremini mushrooms, cleaned, trimmed, and roughly chopped
1 cup shallots, finely chopped
1 teaspoon dried thyme
1 teaspoon kosher salt (or to taste)
teaspoon black pepper
½ cup flour
3 cups mushroom broth (see Recipe Note #1)
3 cups whole milk (see Recipe Notes #2 and #3)
1/2 teaspoon Maggi seasoning sauce (see Recipe Note #4)
1/4 cup dry sherry (optional)
1 tablespoon unsalted butter
1/2 cup cremini mushrooms, thinly sliced

Steps:

  • Add the shiitake mushrooms and sage sprig to boiling water. Turn off the heat and steep for 45 minutes.
  • Pour mixture through a coarse-mesh strainer, pressing on solids. Discard solids. Add water (or stock) to bring volume up to 3 cups; refrigerate in an airtight container up to 3 days.
  • Melt butter in a heavy-bottomed pot over medium-high heat.
  • When the butter is foaming, add the chopped mushrooms and shallots. Saute, stirring frequently, until the liquid given off by the mushrooms has mostly evaporated. Meanwhile, reheat the mushroom broth.
  • Add salt, pepper, thyme, and flour. Cook for 2 minutes, stirring constantly.
  • Add mushroom broth, one ladle at a time, stirring vigorously to incorporate before stirring in the next ladle of broth to avoid clumps. Repeat until about 3/4 of the broth has been mixed in: then pour in the remaining broth and mix well.
  • Stir in the milk, Maggi seasoning sauce, and dry sherry (see Recipe Note #4). Simmer for 15 minutes.
  • Meanwhile, make the mushroom topping. Melt the butter in a skillet over medium-high heat. Add the sliced mushrooms and saute, stirring frequently, until deeply caramelized on both sides, about 10 minutes total. Remove from skillet with a slotted spoon and discard excess butter.
  • Serve soup, topping each bowl with a few caramelized mushroom slices.
