2 cups finely shredded Monterey Jack and Cheddar cheese blend
1 ¼ cups self-rising flour
1 (8 ounce) package cream cheese, softened

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Mix together ground sausage, shredded cheese, flour, and cream cheese in a large bowl until well combined. Form into walnut-sized balls, either with your hands or with a cookie scoop, and place on the prepared baking sheet.
  • Bake in the preheated oven until the sausage balls are browned and no longer pink inside, about 20 minutes.

2 cups Bisquick
1 lb pork breakfast sausage
8 oz cream cheese ((one 8 ounce block, softened))
1 cup cheddar cheese ((grated))

Steps:

  • In the bowl of your stand mixer, or in a large mixing bowl (if making by hand), combine the Bisquick, breakfast sausage, cream cheese, and grated cheddar cheese. Use the low setting and allow the mixer to work for a few minutes to thoroughly combine the ingredients.
  • Portion out the sausage mixture and roll into balls that are roughly 1 - 1 1/2 inch in size. Transfer formed balls to a parchment paper-lined baking sheet or two.
  • Place the baking sheet with formed sausage balls into your refrigerator for 10-15 minutes, or in the freezer for about 8 minutes, to chill before baking.
  • While the sausage cream cheese balls are chilling, preheat your oven to 350 degrees F (175 degrees C).
  • Bake at 350 degrees F (175 degrees C) for approximately 25 minutes, or until golden browned and firm to the touch. The internal temperature should be 160 degrees F (71 degrees C) when done.
  • Remove from the oven and serve immediately.

1 1/4 c bisquick ( can get the gluten free if you prefer )
4 oz cheddar cheese, shredded

  • 1. Preheat oven to 400F.
  • 2. Mix all ingredients until well combined.
  • 3. Roll into 1-inch balls. Place balls into muffin pans that has been sprayed.
  • 4. Bake for 20-25 minutes, or until brown.
  • 5. Sausage balls may be frozen uncooked. If baking frozen, add a few minutes to the baking time.

½ lb. uncooked ground sausage (spicy or mild) (*you can also use plain ground pork)
⅓ cup flour
2 tsp baking powder
4 ounces cream cheese
2 tbsp maple syrup
1½ tbsp milk
¼ tsp garlic powder
¼ tsp onion powder
¼ tsp cayenne pepper (*more if you like heat)
½ tsp salt
1-2 scallions, finely chopped (*reserve some for garnishing)

Steps:

  • Preheat oven to 425° F.
  • Add all your ingredients to a food processor and puree until well blended. Add your scallions last and pulse 1-2 times to incorporate.*If you don't grate your cheese ahead of time, it will be difficult to blend.*If you don't have a strong food processor, you can mix by hand!
  • Use a mini ice cream scooper to neatly and evenly scoop out ½ ounce. Use your hands to roll them into round balls. Place on a nonstick baking sheet or parchment paper.
  • The bottom of your sausage balls will bake flatter so if this bothers you, place them in the freezer for about 10 minutes to firm them up a bit. Then remove and re-roll them in between the palms of your hands to round them out again.
  • Bake for 6-8 minutes or until the internal temperature reaches 160°F. Do not overbake!
  • Serve hot with scallions as a garnish and ketchup or maple syrup for dipping!

1 lb grated sharp cheddar (freshly grated)
1 cup flour
1.25 tsp baking powder
1 lb breakfast sausage

Steps:

  • Preheat oven to 350 degrees. Freshly grate cheese.
  • Mix flour & baking powder with the cheese.
  • Break the ground sausage up into crumbles and mix into cheese. Mix well. There shouldn't be any dry flour left over. Add tiny amounts of milk or water if there's any dry bits that won't mix in. Start with 1 TB of liquid at a time and mix!
  • Scoop mixture into small balls. Lightly wetting your hands with water will help smooth the balls.
  • Bake sausage balls at 350 for 18 minutes. You can broil them for 1-2 minutes for a golden crust. Air Fry sausage balls at 350 for 7-10 minutes. Don't overcook them to avoid drying them out. They're done when internal tempature reaches 160 degrees.
