SOFT SUGAR COOKIES

Steps:
- Preheat oven to 350°. Cream butter and sugar until light and fluffy; beat in extracts and eggs, one at a time. In another bowl, whisk together flour, cream of tartar, baking soda, salt and nutmeg; gradually beat into creamed mixture. , Drop dough by rounded tablespoonfuls 3 in. apart onto parchment-lined baking sheets; flatten slightly with bottom of a glass dipped in sugar. Bake until edges begin to brown, 8-10 minutes. Remove from pan to wire racks; cool completely., For frosting, beat butter, confectioners' sugar, extract and enough water to reach desired consistency. If desired, tint with food coloring. Spread over cookies.

Steps:
- Beat the butter and sugar with an electric whisk for 4 mins until light and fluffy. Beat in the eggs, one at a time, then add the vanilla. Whisk in the cornflour and plain flour until the mixture comes together into a dough. Put the dough between two pieces of baking parchment, and roll out to a 6mm thickness using a rolling pin. Chill for 30 mins.
- Heat the oven to 200C/180C fan/gas 6. Peel the top layer of parchment off the dough and stamp out circles using a 6cm round cutter (or the shape of your choice). Re-roll any offcuts and continue stamping out rounds until all the dough is used. Transfer the cookies to a second large baking sheet lined with baking parchment, spacing them 2cm apart (you may need two sheets). Bake for 7-10 mins. Leave to cool on the sheet for 15 mins, then transfer to a wire rack to cool completely. Will keep in an airtight container for one week.

SUGAR COOKIES - NO BREAK, FAIL-SAFE AND FOOLPROOF
Are you tired of sugar cookie dough that will not roll out properly? Dough's too sticky? That won't cut-out properly? Are you tired of sugar cookies that are too fragile to decorate? If so, then this is the recipe for you. I have the world's worst luck with sugar cookies. 3 years in a row I had great intentions of making cutout sugar cookies for my Christmas baskets. Inevitably, I failed. One year, the dough was way too sticky. Another, the cookies just feel apart. Then I found this recipe. These cookies roll out and cut beautifully, they bake evenly, and they are sturdy enough to frost and decorate yet still taste heavenly. Even my 3yo could not mess these up! And yes, I checked this against all the other sugar cookie recipes on this site -- it's different. And delicious!

Steps:
- In a bowl, cream the butter and sugar.
- Beat in the eggs and vanilla.
- In a second bowl, combine the flour, baking powder and salt.
- Sift flour mixture into butter mixture 1 cup at a time and blend well.
- Roll dough into ball and chill 3-4 hours or overnight.
- When ready to prepare cookies, preheat oven to 350°.
- Roll out dough and cut into shapes.
- Brush with milk and sprinkle with colored sugar or candies if desired (or frost cookie once baked and cooled).
- Bake at 350° for 10-15 minutes.
- Remove cookies to a rack to cool completely.

CHILD-PROOF SUGAR COOKIES
This recipe is great for first time cookie makers and kindergartners. They are easy and lots of fun. The children in my classes have never messed up a batch of these cookies in the fourteen years I've been teaching kindergarten, and neither have my four adorable children. You can use whole wheat flour in place of the all-purpose flour, if you wish.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease your cookie sheets.
- Mix the sugar, shortening, egg, vanilla and almond extract until creamy. Mix in the flour, baking soda and cream of tartar. Make several small balls of dough. Roll out dough to about 1/8 or 1/4 inch thick. Cut into desired shapes with well floured cookie cutters. If desired, press candies, raisins, nuts or sprinkles into cookies. Place cookies onto the prepared sheets.
- Bake at 350 degrees F (175 degrees C) for 8 to 10 minutes, depending upon whether you like hard or soft cookies. Remove cookies and let cool on a rack. Serve warm with a glass of milk. They are also good with ice cream wedged in the middle of two cookies.
