Chicken breasts slow cooked with a creamy white wine and mushroom mixture. This quick and easy recipe calls for just five main ingredients, yet is tasty enough to serve for company! My husband normally doesn't like chicken, yet asks for seconds whenever I prepare this. I spoon the sauce over the chicken and serve with rice or noodles.

6 skinless, boneless chicken breast halves
salt and pepper to taste
paprika to taste
½ cup dry white wine
1 (10.75 ounce) can condensed cream of mushroom soup
1 (4.5 ounce) can sliced mushrooms, drained
1 cup sour cream
¼ cup all-purpose flour

Steps:

  • Sprinkle chicken breasts lightly with salt, pepper, and paprika to taste. Place in slow cooker.
  • In a mixing bowl, combine the wine, condensed soup, and mushrooms. In another bowl, mix together sour cream and flour. Stir sour cream mixture into the mushrooms and wine. Pour over chicken in slow cooker. Sprinkle with additional paprika, if desired.
  • Cover, and cook on Low for 6 to 8 hours.

4 boneless, skinless chicken breasts, pounded thin
Salt and freshly ground black pepper
2 cups all-purpose flour, seasoned with salt and pepper
4 large eggs, beaten with 2 tablespoons water and seasoned with salt and pepper
2 cups panko bread crumbs
1 cup vegetable oil or pure olive oil
Tomato Sauce, recipe follows
1 pound fresh mozzarella, thinly sliced
1/4 cup freshly grated Parmesan
Fresh basil or parsley leaves, for garnish
2 tablespoons olive oil
1 large Spanish onion, finely chopped
4 cloves garlic, smashed with some kosher salt to make a paste
Two 28-ounce cans plum tomatoes and their juices, pureed in a blender
One 16-ounce can crushed tomatoes
1 small can tomato paste
1 bay leaf
1 small bunch Italian parsley
1 Cubano chile pepper, chopped
Salt and freshly ground pepper

Steps:

  • Preheat oven to 400 degrees F.
  • Season chicken on both sides with salt and pepper. Dredge each breast in the flour and tap off excess, then dip in the egg and let excess drip off, then dredge on both sides in the bread crumbs.
  • Divide the oil between 2 large saute pans and heat over high heat until almost smoking. Add 2 chicken breasts to each pan and cook until golden brown on both sides, about 2 minutes per side. Transfer to a baking sheet and top each breast with some Tomato Sauce, a few slices of the mozzarella, salt and pepper, and a tablespoon of Parmesan. Bake in the oven until the chicken is cooked through and the cheese is melted, about 5 to 7 minutes. Remove from the oven and garnish with basil or parsley leaves.
  • Heat olive oil in a medium saucepan over medium heat. Add onions and garlic and cook until soft. Add pureed tomatoes with their juices, crushed tomatoes, tomato paste, 1 cup water, bay leaf, parsley, Cubano pepper, and bring to a boil. Season, to taste, with salt and pepper. Reduce heat and cook until slightly thickened, about 30 minutes.

1 cup sour cream

2 (10 ounce) frozen broccoli
1/4 cup parmesan cheese, grated
4 ounces button mushrooms
1 tablespoon butter
3 tablespoons flour
1/8 teaspoon black pepper
1 1/2 cups milk
1/4 teaspoon nutmeg
10 1/2 ounces cream of mushroom soup
1/4 teaspoon Worcestershire sauce

Steps:

  • Place the chicken in the bottom of a 10-inch pie plate.
  • Top each slice with several pieces of broccoli.
  • Sprinkle with half the cheese.
  • Top with mushrooms.
  • Melt the butter over low heat in a small saucepan.
  • Blend in the flour and pepper.
  • Cook over low heat, stirring constantly, until the mixture is smooth and bubbly.
  • Remove from the heat and gradually stir in the milk.
  • Bring the milk mixture to a boil, stirring constantly, boil for 1 minute.
  • Stir in nutmeg, soup and Worcestershire.
  • Pour this mixture over the broccoli. Sprinkle with remaining cheese.
  • Broil until the top is light brown and bubbly. 3 to 5 minutes.

4 skinless, boneless, chicken breasts (about 11/2 pounds)
All-purpose flour, for dredging
Kosher salt and freshly ground black pepper
4 large eggs
3 tablespoons water
1/4 cup extra-virgin olive oil
1/2 lemon, with rind, cut in thin rounds
1/2 cup dry white wine, such as Pinot Grigio
1 cup chicken broth
1/2 lemon, juiced
2 tablespoons unsalted butter
1/4 cup chopped flat-leaf parsley

Steps:

  • Put the chicken breasts side by side on a cutting board and lay a piece of plastic wrap over them. Pound the chicken breasts with a flat meat mallet, until they are about 1/4-inch thick. Put some flour in a shallow platter and season with a fair amount of salt and pepper; mix with a fork to distribute evenly. In a wide bowl, beat the eggs with 3 tablespoons of water to make an egg wash. Heat the oil over medium-high flame in a large skillet.
  • Dredge both sides of the chicken cutlets in the seasoned flour, and then dip them in the egg wash to coat completely, letting the excess drip off. When the oil is nice and hot, add the cutlets and fry for 2 minutes on each side until golden, turning once. Remove the chicken cutlets to a large platter in a single layer to keep warm.
  • Toss the lemon slices into the pan and cook for 1 to 2 minutes, until fragrant. Add the wine, broth, and lemon juice, simmer for 5 minutes to reduce the sauce slightly. Roll the butter in some flour and add it to the skillet, this will thicken the sauce. Stir to incorporate and dissolve the flour. Reduce the heat to medium-low and return the chicken to the pan; place the lemon slices on top of the cutlets. Simmer gently for 2 minutes to heat the chicken through. Season with salt and pepper and garnish with chopped parsley before serving.

1 cup sliced mushrooms
1 cup diced fennel
1 cup julienned carrots
1 cup diced celery
1 (14-ounce) can baby artichokes, drained and quartered
1 cup calamata or nicoise olives
1/2 cup thinly sliced scallion
1 whole boneless, skinless chicken breast, cut into halves and pounded to 1/2-inch thick
1 tablespoon minced fresh thyme leaves, or 1 teaspoon dried thyme, crumbled
Salt and freshly ground pepper, to taste
1 tablespoon olive oil
1/2 cup dry white wine
1/2 cup canned chicken broth
1 to 2 teaspoons Dijon mustard, or to taste
2 to 3 tablespoons olive oil, or to taste
1 tablespoon balsamic vinegar

Steps:

  • In a large salad bowl combine the greens, mushrooms, fennel, carrots, celery, artichokes, olives, and scallion, and toss the mixture to combine. Pat the chicken dry and season with the thyme, salt, and pepper. In a large nonstick skillet set over moderately high heat, warm the oil until hot, add the chicken, and saute it for 2 minutes. Turn and cook for 1 minute more. Transfer the chicken to a plate. Add the wine to the skillet and reduce it by half. Add the broth, whisk in the mustard, and return the chicken to the skillet. Simmer 2 to 3 minutes, or until the chicken is cooked through and springy to the touch. Transfer the chicken to a plate, reduce the remaining liquid to 1/2 cup, and pour it into a small bowl. Make the dressing: Add the olive oil, whisking, to the bowl of reduced cooking liquid and whisk in the vinegar and salt and pepper, to taste. Cut chicken into slices and add to the salad bowl. Pour juices from plate into dressing, whisking to combine, and drizzle over salad. Toss mixture until chicken and vegetables are well coated with dressing.

  • Tomato Sauce: Saute onions in oil 5 minutes.

  • Saute chicken in 1 Tbsp butter 2-3 minutes.

  • Combine 1/2 c.cream with 1 cup sauce veloute, tabasco sauce & green onions.
  • Stir into chicken.
  • Remove from heat.
  • Melt remaining Tbsp butter and toss with pasta.
  • Place 1/2 pasta in casserole.
  • Cover with 1/2 tomato sauce.
  • Repeat.
  • Top with 1/2 cup cheese and entire chicken mixture.
  • Blend remaining 1 cup Sauce Veloute with rest of cream.
  • Spoon over chicken.
  • Sprinkle with remaining cheese.
  • Bake 45 minutes until bubbly and brown.
  • Note:.
  • This can be prepared the day before, refrigerated and heated in oven when you are ready to serve it. Enjoy!

Quick & Easy Chicken Parmigiana image

This is very easy to make and it tastes great! Originally from Southern Living. You may need to add another egg if your chicken breasts are large.

4 boneless chicken breasts
1/2 cup Italian seasoned breadcrumbs
1/2 cup parmesan cheese, grated
1 large egg, lightly beaten
2 tablespoons butter
1 (14 ounce) jar spaghetti sauce
1 cup mozzarella cheese, shredded

Steps:

  • Place chicken between two sheets of heavy-duty plastic wrap and flatten using a meat mallet or rolling pin.
  • Combine bread crumbs and parmesan cheese.
  • Dip chicken in beaten egg; dredge in breadcrumb mixture.
  • Melt butter in a large skillet; add chicken and brown on each side over medium-high heat.
  • Arrange chicken in a lightly greased 13x9 baking dish.
  • Pour spaghetti sauce over chicken and sprinkle with mozzarella cheese.
  • Cover and bake at 375º for 30 minutes or until thoroughly heated and chicken is no longer pink.

2 tablespoons butter
2 tablespoons flour
1 cup chicken broth
1/4 teaspoon salt
1/2 cup sliced mushrooms
1 egg yolk
1/4 cup half-and-half, reduced fat
1 cup cooked chicken, diced
6 -8 crepes
1/4 cup swiss cheese, grated

Steps:

  • Melt butter in saucepan.
  • Blend in flour.
  • Then add chicken broth and salt; stir and cook over moderate heat about 2 minutes or until thickened.
  • Stir in mushrooms, cook for 1 minute. Remove from heat.
  • Mix egg yolk with cream.
  • Stir small amount of hot mixture into egg yolk.
  • Then stir egg mixture into saucepan.
  • Cook over low heat for another minute.
  • Stir in chicken.
  • In a large shallow baking dish, fill crepes with chicken mixture, fold over.
  • Sprinkle with cheese.
  • Bake in a 350F oven for 15 to 20 minutes.
