- For the chicken sandwiches, Chop chicken very finely (I put it in a food processor and pulsed 3-4 times until minced). In a bowl, combine chicken and mayonnaise, and mix well. Add curry and continue to mix. Fold in remaining ingredients. Spread on bread, top with another slice, remove crusts, and cut into shapes.
- For the pineapple sandwiches, Combine cream cheese and crushed pineapple until well blended. Add pecans and fold into mixture. Spread on one slice of bread and top with other. Remove crusts and cut into shapes as desired.
- For ham sandwiches, Combine cream cheese and preserves until well blended. Spread a layer on both slices of bread, place a slice of ham on one side, and top with the other side. Cut off crusts and cut in to shapes as desired.
HAM PINEAPPLE SANDWICHES
I found a recipe for Pineapple Sandwiches on white bread that was far too sweet. I put some ham on it, and put it on whole grain bread for a slightly healthier alternative that is not nearly so sweet!

- In a saucepan, combine the pineapple and sugar. Bring to a boil, then cook over medium heat, stirring constantly, until thickened, 5 to 10 minutes. Remove from the heat and cool. When cool, stir in the walnuts.
- In a medium bowl, stir cream cheese to soften, then stir in enough milk to make it easy to spread. Blend in the pineapple mixture. This part can be made the day before if you like.
- Spread about 2 tablespoons of the pineapple mixture onto one side of 12 slices of bread. Top each one of these with 5 thin slices of ham. Top with remaining bread slices.

- In a medium bowl, combine cream cheese and cream. Beat at high speed with a mixer until smooth. Add cucumber, pineapple, chives, and pepper, beating until incorporated. Set aside. Using a 2-inch square cutter, cut 16 shapes from bread slices, discarding scraps. Cover with damp paper towels to prevent drying out, or store in a resealable plastic bag. Spread cream-cheese mixture onto 2 bread squares. Fold a slice of ham in half, and place on top of cream cheese side of 1 square, gathering and folding ham to ruffle it and trimming ham to fit, if necessary. Top with other bread square, cream-heese side down. Repeat with remaining ham and bread squares. Garnish with cucumber slices and radish flowers, if desired.

- Gather the ingredients.
- Lay 2 slices of bread on a work surface and spread each slice evenly with 1 tablespoon cream cheese.
- Cover 1 side of the sandwich with sliced cucumber.

This is a wonderfully attractive sandwich with a lot of goodies when the going gets slow. My thoughts(just like those of many of u) are with Dana. - Put butter on one side of the bread slices.
- For the filling, mix together chopped pineapple, bean sprouts, grated cheese, 1 tbsp mayonnaise, fresh cream, tomato ketchup, Worcestershire sauce and a little Tobasco sauce.
- On the bread slices, keep a lettuce leaf and put the filling on it.
- Cover the filling with another lettuce leaf and cover the sandwich finally with another slice of bread spread with mayonnaise.
