A delicious, easy, and fast pan cooked oyster sauced fish dish that can be served over warm Jasmine rice and the vegetable of your choice. Add more seafood (like shrimp or lobster) for more flair!! My family loves this one!

2 pounds fish fillets
butter flavored cooking spray
2 teaspoons canola oil or corn oil
¼ cup oyster sauce
lemon pepper
garlic powder

Steps:

  • Heat oil in a large skillet over medium heat. Place fillets in skillet. Spray fillets with butter spray, and sprinkle with lemon pepper and garlic powder. Cook 4 to 5 minutes. Then pour in oyster sauce, and gently turn fillets. Cook until fish begins to flake, about 5 minutes.

500 g firm fish fillets, cut into pieces
2 tablespoons oil
2 teaspoons minced ginger
1/2 red capsicum, cut into thin strips
1/2 yellow capsicums or 1/2 green capsicum, cut into thin strips
200 g snow peas
1 teaspoon cornflour
3 tablespoons oyster sauce
1 tablespoon soy sauce
1 teaspoon sesame oil
3 tablespoons water

Steps:

  • Add oil to heated frying pan or wok and then cook fish until golden brown, 5- 6 minutes.
  • Remove fish and set aside.
  • Add ginger, capsicum and snow peas and stir fry until vegetables are tender crisp, 2- 3 minutes.
  • Combine cornflour with oyster sauce, soy sauce, sesame oil and water.
  • Add to pan and cook 2- 3 minutes, add fish and cook, stirring gently, until heated through.
  • Serve with rice or noodles.

100g vermicelli rice noodle
1 tbsp soy sauce
1 tsp fish sauce
3 tbsp oyster sauce
2 tbsp sunflower oil
4 chopped spring onions
3 chopped garlic cloves
1 deseeded and chopped red chilli
100g thinly sliced shiitake or chestnut mushrooms
200g broccoli florets
2 roughly chopped heads of pak choi

Steps:

  • Soak the rice vermicelli in boiling water for 4 minutes. Drain, refresh under cold water, drain again and set aside.
  • Mix soy, fish sauce and oyster sauce in a bowl. Heat the sunflower oil in a large wok, add spring onions, chopped garlic cloves and the deseeded and chopped chilli.
  • Stir fry for 20 seconds before adding the thinly sliced shiitake or chestnut mushrooms and broccoli florets. Stir fry for 1 minute, then add the pak choi and the sauce mixture. Stir and cook for about 2 minutes over a high heat, adding a splash of water if the sauce becomes too thick.
  • Tip in the noodles, remove from the heat and toss to mix well. Serve in warmed bowls and tuck in with your chopsticks.

2 carrots, peel and cut into diagonally cut elongated slices
225 g broccoli (cut into florets, stems chopped)
1 red pepper (deseeded and julienned)
225 g green beans, cut into thirds after cutting the edges
3 spring onions, trim and slice
1/2 cup green peas
6 garlic cloves, chopped
1 tablespoon vegetable oil (the recipe says 2 tblsp)
2 tablespoons sesame oil (the recipe says 4 tblsp)
1 small green chili, deseeded and chopped
3 tablespoons oyster sauce
175 g bean sprouts
1 tablespoon light soya sauce
1 tablespoon caster sugar
1 lime, juice of
salt and pepper

Steps:

  • Prepare the vegetables.
  • Heat the vegetable oil and the sesame oil in a wok.
  • Add the garlic and stir fry a minute Add the remaining vegetables except the bean sprouts and add the oyster sauce too.
  • Stir fry for 3-4 minutes Add the remaining ingredients including the bean sprouts but excluding the lime juice and stir to mix well for another 2-3 minutes.
  • Sprinkle the lime juice and check the seasonings add more if reqd.
  • Serve immediately.
