- Preheat the oven to 400 degrees F and butter a 9-by-13-inch baking dish. Whisk the flour, cornmeal, baking soda and salt in a large bowl.
- Beat the butter in a large bowl with a mixer on medium-high speed until light and fluffy, about 2 minutes. Add the sugar and beat until well combined. Add the eggs, one at a time, beating well after each addition. Add the flour mixture in 3 batches, alternating with the buttermilk, beginning and ending with the flour mixture. Add the cheese, scallions and chives and beat until just combined.
- Transfer the batter to the prepared baking dish; smooth the surface. Bake until golden brown around the edges and a toothpick inserted into the center comes out clean, about 20 minutes. Serve warm or at room temperature.

- Combine the cream cheese and all but 1/2 cup of the crabmeat in a medium bowl. Mix until thoroughly combined. Roll into an 8-inch log and refrigerate until firmed up slightly, about 1 hour. Refrigerate the remaining 1/2 cup crabmeat until serving.
- Meanwhile, combine the ketchup, horseradish, lemon juice, salt and some pepper in a medium bowl. Taste and adjust to your liking.
- Place the log on a serving platter. Spoon some of the sauce over it, reserving the remaining sauce in a small bowl to serve on the side. Sprinkle the reserved 1/2 cup crabmeat on top and garnish with the chives. Rub the garlic onto one side of each slice of bread and arrange the bread on the serving platter.

- Pour the milk into a pan and add the sugar and butter. Warm gently, swirling the pan until the butter has melted. Set aside until lukewarm.
- Tip the salt, mustard, flour and yeast into a large mixing bowl and stir. Make a well in the centre, then pour in the beaten eggs and milk mixture. Swiftly mix with a wooden spoon to make a rough dough, then tip onto a lightly floured surface and knead for 10-15 mins until elastic and springy. Alternatively, knead in a stand mixer for 7-10 mins using the hook attachment. Lightly oil a large mixing bowl. Put the dough in the bowl and cover loosely with a tea towel. Leave in a warm place for 1½-2 hrs or until doubled in size.
- Knock the dough back on a lightly floured surface by lightly punching and briefly kneading it. Sprinkle over half the cheese, all of the chives and all the ham. Knead the dough until the ham and cheese are well distributed. Divide the dough into 18 equal-sized balls. Pinch the bottoms to create uniform, round balls. Line a baking sheet with baking parchment and draw a 25cm round template on the parchment (a large dinner plate works well for this). Arrange the dough balls in concentric circles in the circle you have drawn. Fill each gap with another scattering of cheese. Cover lightly. Leave for 1-1½ hrs or until the dough is risen.
- Heat the oven to 200C/180C fan/gas 6. Beat the remaining egg and use to lightly brush the dough balls. Sprinkle over most of the remaining cheese, then bake for 25 mins. Sprinkle over the last of the cheese and bake for 5 mins more. Leave to cool a little before serving warm.

- In a small saucepan, heat 3/4 cup of the milk until warm to the touch but not hot (about 105°F to 115°F on an instant-read thermometer). Transfer the warm milk to a large mixing bowl and sprinkle the active dry yeast on top. Set aside for about 10-15 minutes to activate the yeast.
- Sift the flour, sugar, and salt together into a large bowl; set aside.
- In a small saucepan, melt the butter. Let the butter cool, then transfer to a medium bowl. Add the eggs and beat together. Using your electric mixer, stir the egg mixture into the yeast mixture until combined. Slowly add the flour mixture and mix on low speed. (At this point, if you feel like the dough is too dry, you can add a 1/4 cup milk. You want the dough to be somewhat sticky). When well combined, gently fold in the cheddar cheese and chives. You can do this with your mixer or by hand.
- Remove your dough from the mixer and turn the dough onto a floured work surface and knead the dough for about 2-3 minutes only.
- Grease a glass bowl with butter and place the dough into the bowl and cover with plastic wrap. You can also coat the plastic wrap with butter (on the side that faces the dough if desired. Let rise in a warm place until doubled in size, about 2 hours.
- Prepare a parchment lined baking sheet or use your Silpain non-stick baking mat for breads on a baking sheet. After the dough has doubled in size, remove the plastic wrap and set it aside. Remove the dough from the bowl and set on a lightly floured work surface. It will deflate a little but that is fine. Using a knife or dough scraper, divide the dough into 2 pieces and shape into loaves with your hands. Place both dough loaves on the prepared baking sheet and cover with a towel or with the same plastic wrap from earlier. Set aside again and let rise in a warm place for about 30 minutes. Meanwhile, pre-heat the oven to 350°F and arrange a rack in the middle.
- When ready to bake, in a small bowl, beat together the egg yolk and remaining 1 tablespoon milk. With a pastry brush, lightly brush the egg wash over the dough and bake for about 30-40 minutes. Let cool before serving.

- 2 Use butter to grease an 8-by-4 1/2-by-2 3/4-inch loaf pan, preferably Pyrex

- Weigh water in a bowl on some scales and add a spoonful of the starter and make sure it floats, this is called the float test. if it floats then its nice and active and ready to make this loaf with. If not feed your starter and wait four hours and try again.
- Once the dough has been mixed, cover and leave for 4 hours or until risen. During this time stretch and fold the dough a 4 times over that time period. Do this gently by picking up one corner of the dough and lifting it to stretch it and fold it into the centre of the bowl, then turn the bowl and fold again, do four folds and cover the bowl again, As the dough had some kneading at the beginning if you forget to do one of the stretches don't panic. The stretching helps build gluten and will help with the structure of the loaf.
- Once dough has risen, tip out on to a floured surface, and form into a ball, i do this by pulling the edges of the dough into the centre, then i pinch braid the seam together, turn it over and pull the ball of dough over the work surface towards, causing tension making the dough form a tight ball. I do this for a minute until a nice tight ball is formed. Add flour to the top of the dough and leave for 10 minutes to rest while you prep the basket.
