There are a thousand ways to make chili, but this is the quintessential, totally classic version. We used ground beef, kidney beans and the perfect blend of spices. You can slather it on hot dogs and burgers or serve it as a dip, but it can surely stand on its own. Chances are, you have everything you need right in your pantry. Top it with your favorite garnishes and serve with plenty of tortilla chips.

1/4 cup vegetable oil
1 pound ground beef chuck, preferably coarse grind (see Cook's Note)
1 large yellow onion, diced
1 jalapeno pepper, seeded and diced
4 cloves garlic, minced
2 tablespoons chili powder
1 tablespoon ground cumin
1 tablespoon paprika
1/4 teaspoon cayenne pepper
Kosher salt and freshly ground black pepper
2 teaspoons tomato paste
1 1/2 cups low-sodium beef broth
One 28-ounce can whole peeled tomatoes, crushed
Two 15.5-ounce cans kidney beans, undrained
Sour cream, shredded Cheddar and sliced scallions, for serving
Tortilla chips, for serving

Steps:

  • Heat 2 tablespoons of the oil in a Dutch oven or large pot over medium-high heat. Add the beef and cook, breaking up the meat with a wooden spoon, until just browned, about 4 minutes. Transfer to a plate with a slotted spoon.
  • Reduce the heat to medium and add the remaining 2 tablespoons oil. Add the onions and cook, stirring occasionally, until softened and lightly golden, about 10 minutes.
  • Add the jalapeno and cook, stirring occasionally, until softened, about 5 minutes. Add the garlic and cook, stirring frequently, until fragrant, about 30 seconds.
  • Add the chili powder, cumin, paprika, cayenne, 1/2 teaspoon salt and the tomato paste. Cook, stirring frequently, until coated and fragrant, about 1 minute.
  • Stir in the beef broth and crushed tomatoes and bring to a boil over high heat. Stir in the cooked ground beef and any accumulated liquid, then reduce the heat to medium-low. Simmer the chili, partially covered, until the beef is tender and the sauce is slightly thickened, about 30 minutes.
  • Stir in the beans and their liquid and simmer uncovered until the beans are softened and the chili is thickened, about 30 minutes more. Season with salt and pepper.
  • Top with sour cream, Cheddar and scallions. Serve with tortilla chips.

An upscale version of an old favourite - with white wine, coffee and cocoa adding a more complex flavour. I like mine with lots of taste but not much heat... add more cayenne or chili powder to taste.

1 lb extra lean ground beef
1 large onion, chopped
3 garlic cloves, chopped
1 1/2 cups beef broth
1/4 cup white wine
1/2 cup strong black coffee
1/4 cup catsup
2 (28 ounce) cans tomatoes (peeled or diced)
2 (19 ounce) cans kidney beans
1 1/2 tablespoons maple syrup
1 teaspoon salt
1 tablespoon chili powder
2 teaspoons cumin
1 tablespoon unsweetened cocoa powder
1 teaspoon oregano
1 dash cayenne powder

Steps:

  • Cook onions, garlic and ground beef in a large saucepan until meat is well browned and onions are tender.
  • Mix in the diced tomatoes with coffee, wine and broth. Season with maple syrup, salt, chilli powder, cumin, cocoa, oregano and cayenne. Reduce heat to low and simmer for 1 ½ hours.

5 tablespoons Chili Mix (1/2 packet) by Mad Dash Mixes
1/2 cup water
1 pound ground beef prepared in advance
1 can diced tomatoes
1 can Black Beans, drained & rinsed can use Kidney Beans or Pinto Beans if you prefer
1 can pan spray to help keep the chili from sticking to the sides of the slow cooker. Use only what is needed to lightly coat the inside of the slow cooker

Steps:

  • Spray the inside of the slow cooker with pan spray. Add one can of diced tomatoes to the slow cooker.
  • Add 1 pound of browned ground beef to the diced tomatoes. Stir the ingredients together. If using already browned ground beef that has been frozen, thaw it out ahead of time.
  • Add 1/2 cup water and stir
  • Drain & Rinse 1 can of Black Beans and add to the slow cooker
  • Add 5 Tablespoons of the Chili Mix to the ingredients in the slow cooker
  • Mix all ingredients together in the slow cooker, plug in and turn to low.
  • cook on low for 4 to 5 hours.
  • Prepare bowls of assorted toppings for the Chili . Toppings can include shredded cheese, sour cream and corn chips. If your family likes black olives, they could be used also
  • serve in bowls and let everyone add toppings to their own bowl

This is a very old chili recipe - one I've been making since I was a teenager. You can add additional beans if you have them (sometimes I add black beans or whatever suits me).

1 (32 ounce) can crushed tomatoes
1 (32 ounce) can tomato sauce
2 cans pork and beans, do not drain
2 cans red kidney beans, do not drain
1 lb lean ground beef
1 bottle chili powder
salt
green peppercorn
1 can chopped green chili
3 tablespoons cocoa powder

Steps:

  • Brown the ground beef in a dutch oven with about 1/2 bottle chili powder.
  • Add to this the can of chiles, the crushed tomatoes and the tomatoe sauce (rinse out the tomatoe cans with about 1/3 can of water and add this as well).
  • Simmer for about 5 minutes to blend and then dump in all four cans of undrained beans.
  • Next, stir in the cocoa powder and simmer for another 5 or 10 minutes.
  • Add a couple of teaspoons of salt and some freshly ground green peppercorns.
  • Taste and add additional salt and pepper and chili powder if needed.
  • Simmer for about an hour and serve.

2 pounds (907 grams) napa cabbage, trimmed, cut lengthwise into 4 to 8 sections, cored, and then cut crosswise into 2- to 3-inch rectangular pieces (about 15 cups)
2 tablespoons plus 2 teaspoons (24 grams) kosher salt
12 ounces (340 grams) daikon radish, peeled and cut into matchsticks measuring about 1/4 by 1/4 by 2 1/2 inches (about 2 cups)
1 teaspoon granulated sugar
1/4 cup (25 grams) gochugaru (Korean red pepper flakes)
2 tablespoons (30 ml) water
2 teaspoons dark brown sugar
1/2 cup diced Asian pear (65 grams)
1/4 cup diced yellow onion (35 grams)
2 1/4 ounces (64 grams) fresh ginger, peeled and cut into matchsticks
4 large garlic cloves (25 grams), peeled and cut into narrow slices
1 teaspoon salted shrimp
6 to 8 scallions (145 grams), halved lengthwise and cut crosswise into 2-inch pieces

Steps:

  • Place the cabbage in a large bowl, sprinkle with 2 tablespoons (17 grams) of the salt, and toss to coat. After 15 minutes, massage and squeeze the cabbage until it begins to release liquid. Set aside for another 15 minutes, then massage again and set aside for another 15 minutes.
  • Place the daikon in a medium bowl and season with the granulated sugar and 1 teaspoon of the salt. Set aside for 15 minutes.
  • Whisk the gochugaru, water, brown sugar, and the remaining 1 teaspoon salt in a third medium bowl to form a coarse paste.
  • To make the kimchi flavor paste, use either a mini-food processor, mortar and pestle, or immersion blender and a jar to puree the pear, onion, 10 grams (about 1/6) of the ginger, 6 grams (about 1/4) of the garlic, and the salted shrimp until smooth. Add this to the gochugaru mixture and stir to combine.
  • Squeeze as much liquid as you can from the daikon without breaking the pieces and add to the cabbage, along with the scallions, the remaining ginger and garlic, and the kimchi paste.
  • Position a gallon-size zip-top bag inside a pitcher or some other vessel that will allow it to be held open for loading. Wearing disposable gloves, mix the kimchi paste into the cabbage mixture with your hands, being sure to thoroughly coat the cabbage with the paste (see Cook's Note).
  • Transfer the mixture to the plastic bag, then ditch the gloves and seal the bag, working out as much air as possible. The lactic acid bacteria that will magically transform the humble ingredients into kimchee prefer anaerobic environments.
  • Place the sealed bag flat on a sheet pan or large baking dish and leave at room temperature until the mixture has bubbled enough to inflate the bag, at least 24 hours, but possibly up to 3 days. Transfer the kimchi and its liquid into two wide-mouthed quart-size glass jars with lids and refrigerate. Consume immediately for very fresh kimchi, or leave it for a month for a kimchi that's deeply flavored, well-rounded, and slightly effervescent.
  • Refrigerated, kimchi will basically never go bad and will actually improve in flavor for months after going into the jar. Cooking will mellow its flavors, so if it gets too funky for you, it's time to make kimchi fried rice.

SPICY KOREAN KIMCHI

This recipe is a bit different than any already posted here on Recipezaar and it is exceptionally good. After mellowing for two days in the fridge it is still crunchy and as the title says - very spicy - like hot. The recipe was in a pamphlet that was left at my house. Serve this as a side dish-a garnish that will enhance the flavor of your meal

1 lb sized head Chinese cabbage
2 tablespoons sea salt
4 cups cold water
1 tablespoon fresh garlic, chopped
1 tablespoon fresh ginger, finely chopped
1 tablespoon green onion, finely chopped
2 teaspoons dried chili pepper flakes
2 teaspoons sugar
1 tablespoon sea salt

Steps:

  • Separate and wash the cabbage leaves.
  • Sprinkle them with the 2 tbsp of salt.
  • Place them in a non corrosive dish (Pyrex) and pour in the 4 cups cold water, cover with plastic wrap and place in fridge over night.
  • The water should cover the leaves if not place a heavy object on them to keep them submerged.
  • After sitting overnight pour off the water and rinse the leaves well, shake out excess moisture. ( I used my lettuce dryer to remove the extra moisture).
  • Mix the garlic, ginger, green onion,chili flakes,sugar & 1 tbsp salt, stir together.
  • Pour 11/2 cups of very hot water over the mixed seasoning.
  • Place cabbage leaves in a large zip lock bag or in a bowl, pour in the seasoning, mix well so the seasoning is on every leaf.
  • Place in the fridge for two days. Flip the bag every time you open the fridge door.
  • To serve cut the leaves into 2" strips and serve as a side condiment.
  • To store pack the cabbage into a jar and store in the fridge it will keep for several days to a week or more.

1 1/2 lbs ground beef
seasoning salt
1 (7 1/4 ounce) box macaroni and cheese mix
1/4 cup milk
1 tablespoon butter (or what ever amounts the box calls for)
2 slices American cheese
1 (15 ounce) can pinto beans, drained
1 (15 ounce) can tomatoes and green chilies (or plain if you like)
1 (1 ounce) package of your favorite chili seasoning mix
8 ounces cheddar cheese or 8 ounces monterey jack cheese, shredded

Steps:

  • Brown ground beef and season with season salt.
  • Drain well after browning meat.
  • Return to skillet.
  • Cook Mac & Cheese according to the directions on the box.
  • When the Mac & Cheese is done stir in 2 American cheese singles.
  • When cheese is melted add the Mac & Cheese to the ground beef.
  • Drain pinto beans and add to mix.
  • Add tomatoes and green chilies.
  • Add chili seasoning packet; stir well.
  • Let simmer for 10 to 20 minutes.
  • Or until throughly heated, stirring well in between.
  • Then top with cheese and cover with lid until cheese is melted.
