2 cups ground raw cranberries
1 cup white sugar
1 pint heavy whipping cream, whipped
¾ pound marshmallows, quartered
1 cup crushed pineapple, drained

Steps:

  • In a small bowl, combine the ground cranberries and sugar. Set mixture aside for at least 3 hours.
  • In a large bowl, whip cream and stir in quartered marshmallows. Set aside for 3 hours.
  • After 3 hours fold the berry mixture into the whipped cream. Then fold in the crushed pineapple. Let set for several hours or overnight for flavors to blend.

1 cup uncooked wheat berries, rinsed
2 celery ribs, finely chopped
1 medium tart apple, diced
4 green onions, sliced
1 cup dried cranberries
1 cup chopped pecans
DRESSING:
3 tablespoons walnut oil
2 tablespoons cider vinegar
1 tablespoon minced fresh sage or 1 teaspoon rubbed sage
2 teaspoons minced fresh thyme or 3/4 teaspoon dried thyme
2 teaspoons Worcestershire sauce
1 teaspoon Dijon mustard
3/4 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Cook wheat berries according to package directions; drain and cool. Meanwhile, combine the next 5 ingredients; add wheat berries. Whisk together dressing ingredients. Pour over salad; toss to coat. Serve at room temperature or chilled.

2/3 cup sugar
1 cup golden raisin
1 cup pecans, chopped
15 ounces pineapple tidbits, with juice
2 oranges, peeled

Steps:

  • Wash cranberries, discard mushy ones.
  • Pulse in food processor until just slightly chopped (you could hand chop).
  • Cut oranges into pieces about the size of the tidbits.
  • Mix cranberries, sugar, raisins, pecans, pineapple tidbits with juice and orange pieces all together.
  • Allow to marinate in the refrigerator overnight.

1/4 cup dried cranberries

1/8 teaspoon poultry seasoning

Steps:

  • Cut up cooked chicken into bite size cubes - should be enough to fill 3 cups & place in large bowl. Add dry seasonings, celery, dried cranberries, and pecans - toss with hands so as not to break up chicken cubes.
  • In a small bowl, mix together the mayonnaise, sour cream, and lemon juice with small wire whisk & add to chicken mixture - gently toss all ingredients together and chill until ready to serve.

1 cup hot water
1/2 cup cold water
1/2 pound cranberries
3 apples
2 oranges or 1/2 cup crushed pineapple
1/4 cup nuts, chopped
3/4 cup sugar
4 cups salad greens

Steps:

  • Dissolve gelatin in hot water, then add cold water. Cool mixture and set aside.
  • Wash and grind cranberries. Pare and chop apples (and oranges, if using) into small chunks.
  • Stir together the ground cranberries, chopped apples and oranges (or pineapple) nuts, and sugar.
  • Add to slightly thickened gelatin mixture; then pour into a mold and chill until salad is firm and holds its shape. Unmold onto salad greens.

4 ounces of montrachet goat cheese, crumbled

1/8 cup balsamic vinegar

  • You can finely chop the pecans for smaller pieces in the salad or roughly chop them for larger more prominent pieces of pecans. Add the pecans to the bowl with the rest of the ingredients.
  • Add the dried cranberries to the salad (soak them ahead if you want them to be plump in the salad).
  • Add the dressing if it's not already in the bottom of the bowl and stir well to ensure all the salad ingredients are well coated in the dressing.
  • Serve immediately or store in the fridge for 30 minutes - 2 hours to allow all the ingredients to get really cold and the flavors to combine more.
