CRANBERRY PORK ROAST

This tender, flavorful Cranberry Pork Roast is super easy to prepare, yet looks and tastes like a gourmet meal. A holiday winner!

5 pound pork loin
2 tablespoon olive oil
1 tablespoon thyme (dried)
¼ teaspoon nutmeg (ground)
1 teaspoon allspice
1 teaspoon salt (or to taste)
½ teaspoon pepper (or to taste)
¼ cup honey
1 tablespoon orange zest
2 cups cranberry sauce

Steps:

  • Preheat the oven to 375 F degrees and arrange the rack in the middle of the oven.
  • Drizzle the olive oil all over the pork loin. Season with thyme, nutmeg, allspice, salt and pepper on all sides evenly.
  • Heat a large 12 inch cast iron pan with a little bit of olive oil, then brown the pork on all sides, 4 to 6 minutes per side. Sear until it's a deep golden brown and easily releases from the pan. Remove from heat.
  • Drizzle honey on all sides of the pork loin then grate some orange zest over it.
  • Cover with aluminum foil, transfer the skillet to the oven and roast for 30 minutes. Remove the foil and finish roasting for another 30 minutes or until an instant-read thermometer inserted into the thickest part of the pork reads anywhere from 145 to 160 F degrees.
  • Meanwhile prepare the cranberry sauce. I used my own cranberry sauce recipe, however, store bought cranberry sauce will work as well.
  • Transfer the pork roast to a cutting board and let it rest for at least 15 to 20 minutes before slicing into it.
  • Slice then top with cranberry sauce before serving it.

2 cups fresh or frozen cranberries
¾ cup white sugar
1 teaspoon salt
¼ teaspoon ground black pepper
water as needed

Steps:

  • In a skillet, brown chops slowly in oil; drain.
  • Add cranberries, sugar, salt and pepper to chops with 1/2 cup water to start. Bring to boil; reduce heat. Simmer, covered, for about 45 minutes or until tender but not dry. Add water if necessary to keep chops from drying out.

Steps:

  • In a medium bowl, stir together the cranberry sauce, salad dressing, and onion. Place pork in a slow cooker, and cover with the sauce mixture.
  • Cover, and cook on High for 4 hours, or on Low for 8 hours. Pork is done when the internal temperature has reached 145 degrees F (63 degrees C).

4 lbs pork roast, bone-in
1 (1 1/4 ounce) packet Hawaiian Luau marinade (+ add-ins)
2 tablespoons vegetable oil
1/2 cup water
1/3 teaspoon chicken bouillon granule
1/3 teaspoon beef bouillon granules
1 lb baby carrots
1 large sweet onion, sliced
salt
1/2 teaspoon dried thyme
black pepper
1 (15 ounce) can jellied cranberry sauce
1/2 cup frozen cranberries
3 -5 shakes TABASCO® brand Chipotle Pepper Sauce
2 teaspoons cornstarch
2 teaspoons cold water
3 cups cooked rice

Steps:

  • Pierce roast all over. Place contents of marinade packet and other ingredients listed on packet in a ziploc bag with the roast. Marinate in refrigerator overnight.
  • Heat oil in a large skillet over medium high heat. Brown the pork roast on all sides in hot oil. Meanwhile, add bouillon granules to water and microwave for 1 minute. Set aside.
  • Place carrots on bottom of crock. Top with 1/3 of the onion slices; sprinkle with salt. Place roast on top of veggies fat-side up. Sprinkle roast with dried thyme, salt and pepper. Mash half the can of cranberry sauce onto the roast. Top with the second 1/3 of the onion slices; sprinkle on half of the cranberries. Shake on some Chipotle sauce. Pour bouillon around roast. Cover and cook on Low for 5 hours.
  • Remove cover. Turn roast over; mash the rest of the cranberry sauce onto the roast and top with last of the onion slices and cranberries. Shake on some Chipotle sauce. Cover and cook on Low for 4 hours.
  • Remove roast and carrots from crock. Turn crock to Warm. Defat drippings and put drippings and rest of contents of crock into a medium saucepan. Return roast and carrots to crock to keep warm. Using a stick blender, liquify chunks in gravy. Stir together cornstarch and water until smooth to make a slurry.
  • Simmer drippings over medium-high heat. Add slurry stirring constantly. Bring to boil while continuing to stir; boil 1 minute. Remove from heat. Season with salt and pepper as needed. Slice roast and serve with carrots and gravy over rice or mashed potatoes.

Cranberry sauce, Dijon mustard, tarragon, and onion combine to make a flavorful and easy pork loin. Serve with sweet potatoes and veggies. This recipe makes enough sauce for 2 pork loins in case you have additional meat; I just love lots of sauce.

1 pound boneless pork loin roast
salt and pepper to taste
1 tablespoon butter
1 (14 ounce) can whole cranberry sauce
½ yellow onion, sliced
2 tablespoons Dijon mustard
2 tablespoons chopped fresh tarragon
1 packet dry onion soup mix
1 tablespoon cornstarch

Steps:

  • Pat pork loin dry and season on all sides with salt and pepper.
  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add butter and let melt. Add pork loin and cook on all sides until just a little bit of color shows, about 1 minute per side. Turn off Saute function and add cranberry sauce, sliced onion, Dijon mustard, tarragon, and dry onion mix. Gently combine and spoon some of the sauce over the pork loin.
  • Close and lock the lid. Select high pressure according to manufacturers' instructions; set timer for 9 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, about 10 minutes. Check internal temperature of the pork loin; an instant-read thermometer inserted into the center should read at least 180 degrees F (82 degrees C). Temperature will continue to rise slightly after the pork loin is removed from pot.
  • Place on a cutting board to allow to rest for 8 to 10 minutes before cutting into thin slices.
  • While pork loin is resting, select Saute function again and stir cornstarch into sauce. Whisk until sauce thickens, 2 to 5 minutes. Serve pork loin with cranberry-Dijon sauce.

  • Meanwhile, melt remaining 1 tablespoon butter in heavy medium skillet over medium-high heat. Add onion and rosemary; sauté until onion softens, about 3 minutes. Add broth, cranberry sauce and vinegar and whisk until cranberry sauce melts, about 2 minutes.

1 tbsp plain flour
500g pork tenderloin , sliced into steaks
1 tbsp oil
2 red onions , cut into wedges
400ml chicken stock
4 tbsp cranberry sauce
1 tbsp honey

Steps:

  • Season the flour and dust the pork slices. Heat the oil in a large frying pan, then cook the pork for 3-4 mins each side until browned and cooked through. Transfer to a plate and set aside.
  • Add the red onion wedges to the pan and fry for 5-8 mins until soft and starting to turn golden. Stir in the stock, cranberry sauce and honey and simmer for 10 mins. Return the pork with any resting juices and gently cook for 1-2 mins until hot through. Serve with some mash or jacket potatoes and vegetables.
