CRANBERRY CHRISTMAS CANES
A festive shape, zesty cranberry filling and Christmas colors make these sweet rolls a real holiday hit with my crew. Sometimes I change the glaze, omitting the vanilla and using orange juice instead of milk for a tangier taste. -Rita Fenley, Chesapeake, Virginia

Steps:
- In a large bowl, combine the flour, sugar, salt and lemon zest; cut in butter until crumbly. In a small bowl, dissolve yeast in warm water. Add milk and eggs. Stir into flour mixture until blended. Cover and refrigerate overnight., In a saucepan, combine the filling ingredients. Bring to a boil over medium heat, stirring constantly. Cook and stir 5 minutes longer; cool., Punch dough down. Turn onto a lightly floured surface; divide in half. Roll one portion into an 18x15-in. rectangle. Spread filling to within 1/2 in. of edges. Fold one short side to center over filling; repeat with other side, making a 15x6-in. rectangle. Pinch seam to seal. Cut into 15 slices. Twist each slice and form a cane shape. , Place 2 in. apart on greased baking sheets. Repeat with remaining dough and filling. Cover and let rise is a warm place until doubled, about 45 minutes. , Bake at 400° for 12-14 minutes or until golden brown. Remove from pans to wire racks. Meanwhile combine glaze ingredients; drizzle over warm rolls.

CRANBERRY ORANGE SCONES

- Preheat the oven to 400 degrees F.
- In the bowl of an electric mixer fitted with a paddle attachment, mix 4 cups of flour, 1/4 cup sugar, the baking powder, salt and orange zest. Add the cold butter and mix at the lowest speed until the butter is the size of peas. Combine the eggs and heavy cream and, with the mixer on low speed, slowly pour into the flour and butter mixture. Mix until just blended. The dough will look lumpy! Combine the dried cranberries and 1/4 cup of flour, add to the dough, and mix on low speed until blended.
- Dump the dough onto a well-floured surface and knead it into a ball. Flour your hands and a rolling pin and roll the dough 3/4-inch thick. You should see small bits of butter in the dough. Keep moving the dough on the floured board so it doesn't stick. Flour a 3-inch round plain or fluted cutter and cut circles of dough. Place the scones on a baking pan lined with parchment paper. Collect the scraps neatly, roll them out, and cut more circles.
- Brush the tops of the scones with egg wash, sprinkle with sugar, and bake for 20 to 25 minutes, until the tops are browned and the insides are fully baked. The scones will be firm to the touch. Allow the scones to cool for 15 minutes and then whisk together the confectioners' sugar and orange juice, and drizzle over the scones.

In shape for the holidays, these confections from Salem, Oregon's Darlene Brenden are made from a recipe her mother handed down. "I still think her breads are better than mine--even when we're using the same recipe!" Darlene admits.

- In a saucepan, combine all filling ingredients; bring to a boil. Reduce heat and simmer, uncovered, for 5 minutes. Cool. , For dough, dissolve yeast in water; set aside. In a large bowl, combine flour, sugar and salt. Cut in butter until mixture resembles coarse crumbs. Add yeast mixture, milk and eggs; stir to form a soft dough. Place in a greased bowl; cover with plastic wrap. Refrigerate at least two hours. , Divide dough in half. On a well-floured surface, roll each half into an 18x15-in. rectangle. Spoon filling down the center of each rectangle widthwise. Fold into thirds so that the finished rectangles are 15x6 in. Cut each into 15 strips. Twist strips and shape into candy canes. Place on greased baking sheets. , Bake at 375° for 15-18 minutes or until golden. Frost with confectioners' sugar icing if desired.

THE BEST CRANBERRY SCONES EVER

Another great thing about this recipe is that it's easy and fast! I have managed to make this recipe in the morning before going to work (and I was on time) ;)

Steps:
- Preheat oven to 400 degrees F (205 degrees C) and place rack in middle of oven.
- Butter or line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, sugar, baking powder and salt.
- Cut the butter into small pieces and blend into the flour mixture with a pastry blender or two knives. The mixture should look like coarse crumbs.
- Stir in the cranberries and mixed fruit peel, making sure not to crush the berries.
- Add the milk and stir until just combined. Do not over mix.
- Knead the dough on a lightly floured surface. Roll or pat the dough into a circle that is 8 inches (20cm) round and about 11/2 inches (3.75 cm) thick.
- Transfer to the prepared baking sheet and then brush the scone with milk. Using a sharp knife, score the top of the scone into eight triangles and then sprinkle with the sliced almonds.
- Bake for 20 minutes or until lightly browned and a toothpick inserted into the center of the scone comes out clean.
- Remove from oven and then turn your broiler on a high setting. Sift icing sugar over the top of the scone and place under the broiler.
- Broil for just a few seconds, until the sugar has melted and turns golden brown. Make sure to watch the scone carefully as the sugar will burn very quickly!
- Transfer to a wire rack to cool.
- Enjoy!

A sweet but zesty salad with a unique twist of carmelized pecans. Try serving for brunch along with "Baked French Toast" and "Bacon and Onion Quiche"

Steps:
- Start by carmelizing pecans.
- Melt butter in pan.
- Add brown sugar and stir unti mixture bubbles and doesn't appear to greasy or too dry.
- Add pecans, stir and cook until well coated.
- Place on cookie sheet to dry and cool.
- Prepare the salad dressing.
- Mix balsamic vinegar and olive oil.
- Add jam, orange juice and ginger.
- Put greens, cranberries, cheese and carmelized pecans in a salad bowl.
- Toss with salad dressing and serve immediately.
- Try serving for brunch along with"Baked French Toast" and"Bacon and Onion Quiche".

- Drain the excess liquid from the cranberry sauce cans and place in a large saucepan. Add remaining ingredients. Bring to boil, constantly stirring for about five minutes. Remove from heat and serve immediately or allow to cool if you'd like it to be more solidified.
