SWISS CHARD WITH ONIONS & GARLIC
I like to make this sauteed Swiss chard a main dish by serving it with pasta, but it's also a tasty side dish all on its own. My boys love it and ask for it often. -Rebekah Chappel, Portales, New Mexico

- In a 6-qt. stockpot, heat oil over medium-high heat. Add onions; cook and stir until tender. Add garlic; cook 1 minute longer., Add vinegar, stirring to loosen any browned bits from pot. Add remaining ingredients; cook 4-6 minutes or until chard is tender, stirring occasionally.

Steps:
- Melt butter and oil in heavy large pan over medium-low heat. Add garlic and crushed red pepper.
- Sauté until fragrant, about 1 minute.
- Add swiss chard; stir to coat.
- Cover and cook until tender (stirring occasionally) about 8 minutes.
- Squeeze juice from 1/2 lemon onto chard.
- Season to taste with salt.
- Enjoy!

Steps:
- Swiss Chard should be chopped into pieces about 2" square.
- Heat oil in a wok or skillet.
- Saute garlic for about 1 minute.
- Have high heat and saute the swiss chard for about2-3 minutes. (Water clinging to the leaves is enough liquid to cook the chard).
- Toss (do not over cook) until just wilted and getting soft.
- Season with pepper and serve.
SAUTEED SWISS CHARD WITH MUSHROOMS AND ROASTED RED PEPPERS
Made this up when I had Swiss chard and did not know what to do with it. Added whatever I had in the fridge. Added some white wine and voila. Yummy. You can also use other veggies or seasoning you have on hand.

- Cut stems and center ribs away from Swiss chard leaves. Slice stems and center ribs thin and reserve. Chop leaves coarse and reserve separately.
- In a 10- to 12-quart heavy kettle heat oil over moderately high heat until hot but not smoking and sauté reserved stems and ribs, stirring, until crisp-tender. Add garlic and sauté, stirring, until garlic is fragrant. Add reserved leaves with water clinging to them and cook, turning with tongs, until wilted. Add 1/2 cup water and cook, covered, over moderate heat until leaves are tender, about 4 minutes. Season chard with salt and pepper. Chard may be made 1 day ahead and chilled, covered.

- Place the couscous in a bowl. Add 1 ½ cups boiling water and stir. Cover tightly and let stand for 10 minutes.
- Meanwhile, in a large skillet, over low heat, toast the pine nuts, shaking the pan frequently, until golden, 3 to 4 minutes. Transfer to a plate.
- Return the skillet to medium heat, add the oil, and heat for 1 minute. Add the garlic and cook for 1 minute.
- Add the chickpeas, raisins, chard, salt, and pepper. Cook, stirring occasionally, until the chard is tender, about 5 minutes. Remove from heat.

VEGAN SPINACH & CHARD QUICHE
This can also be made with cow milk ingredients, but I don't think it is as tasty & I am a meat eater. If you did not know, you would swear there were eggs in this.

Steps:
- Preheat oven to 350°F
- Bake pie crust until lightly browned.
- You may need to prick with a fork to prevent bubbling.
- Meanwhile, place spinach and Swiss chard in a steamer over boiling water and cover.
- Lightly cook, about 5 minutes.
- Heat oil in a large skillet over medium heat and saute onions, garlic, and red portions of chard.
- When onions become transparent add greens and bell pepper.
- Stir in curry powder, parsley, salt and pepper.
- Saute until greens reduce, then add capers.
- Stir and remove from heat.
- In a blender, combine tofu, soy milk, nutmeg, cinnamon, cardamom and Parmesan cheese.
- Process until smooth and creamy.
- Pour over vegetables and mix well.
- Transfer mixture to the pie crust.
- Bake in preheated oven for 20 minutes.
- Remove from oven and sprinkle top with Cheddar cheese.
- Bake for 10 more minutes, or until cheese is lightly browned.
