UNCLE BILL'S DEEP FRIED ZUCCHINI STRIPS



Uncle Bill's Deep Fried Zucchini Strips image

An excellent snack or appetizer at any time or at a party. I have been making this recipe for over 30 years. Enjoyed by all that love zucchini.

1 medium zucchini, - 8 inches long
2 large eggs, beaten
2 tablespoons whole milk, homogenized
3/4 cup all-purpose flour
1/2 teaspoon seasoning salt
3/4 cup cracker crumb (saltines)
2 cups extra virgin olive oil (for deep frying) or 2 cups vegetable oil (for deep frying)
1 (2 ounce) package bearnaise sauce mix

Steps:

  • Wash and trim zucchini, (DO NOT PEEL).
  • Cut zucchini into about 2 1/2" long by 1/2" thick strips.
  • In a medium-size mixing bowl, beat eggs and milk until fluffy.
  • In a plastic bag, add flour, seasoning salt and shake well.
  • In a separate plastic bag, add finely crushed saltine crackers.
  • Dip zucchini strips in egg mixture.
  • Drop into flour mixture and shake well to coat.
  • Dip again into egg mixture.
  • Drop into crushed crackers and shake well to coat.
  • Heat olive oil to 325 F to 350 F in a medium-size frying pan or use a deep fryer.
  • Drop coated zucchini (a few at a time) in the hot oil and cook until lightly browned, about 2 minutes, turning once, (DO NOT OVERCOOK).
  • Zucchini should be crunchy.
  • Serve immediately with Bearnaise Sauce as a dip.
  • SAUCE FOR DIPPING: Prepare contents of Bearnaise sauce according to package directions or make your own.
  • NOTE: Instead of using plastic bags, place the flour mixture in a mixing bowl, and the crumbs in a separate bowl. This will not be quite as messy.
  • Also, Panko crumbs would be excellent or cornflake crumbs.

2 zucchinis, cut into 1/2-inch slices
2 eggs, beaten
1 sleeve buttery round crackers (such as Ritz®), crushed
2 tablespoons olive oil
salt and ground black pepper to taste

Steps:

  • Coat each zucchini slice with egg, then press into cracker crumbs, coating both sides. Shake off excess and place the breaded zucchini onto a plate while breading the rest; do not stack.
  • Heat olive oil in a large skillet over medium heat. Pan fry zucchini until crust browns and zucchini softens, about 3 minutes on each side. Season with salt and pepper.

1 Tbsp. water
25 fire-roasted tomato and olive oil woven wheat crackers, finely crushed (about 1 cup)
2 tsp. GOOD SEASONS Cheese Garlic Dressing Mix
1 large zucchini (about 3/4 lb.), cut into 1/4-inch-thick slices
6 Tbsp. HEINZ Hot & Spicy Ketchup

Steps:

  • Heat oven to 450ºF.
  • Cover baking sheet with foil; spray with cooking spray. Whisk egg and water in pie plate until blended. Combine cracker crumbs and dressing mix in separate pie plate.
  • Dip zucchini slices, 1 at a time, in egg then in cracker crumbs, turning to evenly coat each slice with each ingredient. Place in single layer on prepared baking sheet.
  • Bake 12 to 14 min. or until zucchini is tender, turning after 7 min. Remove from oven.
  • Heat broiler. Broil zucchini, 6 inches from heat, 2 min. or until golden brown. Serve with ketchup.

12 tomatoes, slices cut 1 inch thick
2 eggs
2 tablespoons heavy cream
1/2 cup cracker crumb, green onion flavored
1/4 cup parmesan cheese
1/4 teaspoon garlic powder
2 teaspoons paprika
1 tablespoon chives, dried
salt and pepper, to taste

Steps:

  • Beat eggs with cream and dip tomato slices in egg mixture. Combine the remaining ingredients and coat tomato slices on both sides with crumb mixture. In a skillet, heat 2 tablespoons of butter until it is sizzling hot, but not brown. Fry tomato slices for about 3 minutes per side, or until coating is lightly browned. Do this over moderately high heat so that the tomatoes do not get too soft. Serve with steak, roasted meat or chicken.

25 cracked pepper and olive oil woven wheat crackers, finely crushed (about 1 cup)
1 large zucchini (3/4 lb.), cut into 2x1/4-inch wedges
1/2 cup KRAFT Garlic Aioli

Steps:

  • Heat oven to 450ºF.
  • Cover baking sheet with foil; spray with cooking spray.
  • Whisk egg and water in pie plate until blended. Place cracker crumbs in separate pie plate.
  • Dip zucchini wedges, 1 at a time, in egg, then in crumbs, turning to evenly coat each wedge with each ingredient.
  • Place on prepared baking sheet.
  • Bake 14 min. or until zucchini fries are tender, turning after 7 min. Remove from oven.

3 cups zucchini, chopped
1 lb bulk sausage or 1 lb ground beef, browned
1 medium onion, chopped and cooked
1 egg, beaten
1 teaspoon salt
1/4 teaspoon oregano
1 dash garlic salt
pepper
1 cup cheddar cheese, shredded

Steps:

  • Preheat the oven to 350°F.
  • In a frying pan, brown the sausage.
  • Remove from the pan and put into a large bowl.
  • Sauté the onions until cooked, then put into the bowl with the sausage.
  • Add the remaining ingredients (except the cheese) to the bowl and mix together.
  • Put into a baking dish and sprinkle the cheese on top.
  • Bake for 30 to 50 minutes.
  • You can use chopped or grated zucchini that was frozen and saved in a bag to use in winter.
