LEMON AIOLI:
1 large egg yolk
1 garlic clove, finely grated
1 teaspoon lemon zest, finely grated
2 tablespoons fresh lemon juice, plus more to taste
1 teaspoon Dijon mustard
Kosher salt to taste
1 cup vegetable oil
CRAB TOAST:
1 cup lump crabmeat, picked over, shells removed
2 tablespoons fennel fronds, chopped
1 to 2 serrano chiles, seeded, finely chopped
6 tablespoons extra-virgin olive oil, divided
Kosher salt to taste
4 (3/4-inch thick) slices country-style sourdough bread
lemon wedges (for serving)

Steps:

  • Whisk egg yolk, garlic, lemon zest and juice, mustard, and a large pinch of salt in a medium bowl. Cover and chill. Toss crabmeat, fennel fronds, 1 chile, and 2 tablespoons oil in a medium bowl. Season with salt; add more chile, if desired. Spread each piece of toast with 1 tablespoon aioli. Top with crabmeat; cut each toast into 4 pieces. Place a small dab of aioli in center of each piece; serve with lemon wedges. (Extra aioli can be used for dressings or dips.) DO AHEAD: Crabmeat mixture can be made 2 days ahead. Cover and chill.

CRAB CAKES WITH LEMON AIOLI

Crab Cakes With Lemon Aioli image

Another recipe from Williams-Sonoma. I haven't done this one yet but it looks like a definite keeper. (Note: Aioli contains uncooked eggs)

Provided by Pinaygourmet 345142

Categories     Crab

Time 1h10m

Yield 2-3 serving(s)

Number Of Ingredients 21

1 garlic clove
sea salt
white pepper
1 egg yolk
1/3 cup canola oil
2 tablespoons extra virgin olive oil
1 lemon, juice and zest of
1 tablespoon lemon juice (to taste)
1/2 lb fresh lump crabmeat
1 tablespoon minced chives
1 shallot, minced
1/4 cup celery, finely chopped
2 tablespoons creme fraiche (can be substituted with sour cream)
1 lemon, juice and zest of
Tabasco sauce, to taste
1 egg white
cornmeal (for dredging)
canola oil (for deep frying)
1 1/2 tablespoons extra virgin olive oil
1 tablespoon lemon juice
2 bunches watercress, stemmed (arugula can be used too)

Steps:

  • To make the aioli, using mortar and pestle, grind the garlic and a pinch of salt together. Add the egg yolk and whisk until thick and sticky, about 15 seconds. Gradually whisk in the canola oil, a drop at a time until the sauce thickens, and then in a thin stream. Whisk the olive oil and then the lemon zest and lemon juice. Season with salt and pepper. Add more lemon juice if necessary.
  • Pick over the crabmeat for shell fragments and drain in a sieve for up to 15 minutes, if needed. In a bowl, combine the crabmeat, chives, shallot, celery, creme fraiche, lemon zest, and Tabasco sauce, salt and pepper to taste. Gently stir to combine. In a deep bowl, whisk the egg white until stiff peaks form, then fold the egg white in the crab mixture. Place the cornmeal in a shallow bowl.
  • Form 1/3 cup of the crab mixture into a flat patty. Repeat with the remaining mixture to make 6 crabcakes, placing each on a small baking sheet. Using a metal spatula, transfer each crab cakes to the bowl of cornmeal and carefully turn to coat evenly on all sides. Return the cakes tot he baking sheet and refrigerate for 1 hour; this will help them hold together when fried.
  • In a large frying pan over medium heat, heat about 1/4 inch canola oil until the oil shimmers. Add the cakes in batches and fry until golden, 1-2 minutes on each side. Keep the crab cakes warm in a 200°F oven while frying the remaining cakes.
  • In a medium bowl, whisk together the olive oil, lemon juice until blended. Add the watercress or arugula and toss to coat. Add salt and pepper to taste and toss again. Divide the dressed greens among 3 salad plates or 2 dinner plates. Divide the crab cakes over the greens and top each with a dollop of lemon aioli. Serve at once.

CRAB/CLAM CAKE SLIDERS WITH EASY LEMON AIOLI

Crab/Clam Cake Sliders With Easy Lemon Aioli image

From a local publication. This time around I tested 'Fully Loaded Baked Potato' flavored Kettle Chips. Mmm! Description from the Kettle Chips' website: "This creamy, smoky, cheesy chip doesn't hold back on the flavor front. Dive into a collection of toppings straight from the baked potato bar - tangy sour cream, fresh green onion, rich cheddar cheese - and an all-natural smoky flavor."

Provided by COOKGIRl

Categories     < 30 Mins

Time 25m

Yield 10 sliders

Number Of Ingredients 13

3/4 cup mayonnaise, divided (I used an olive-oil based mayonnaise)
1 lemon, juice and zest of
1 garlic clove, finely minced
1 teaspoon Dijon mustard
1/2 teaspoon dried parsley (replaced 1/4 teaspoon crushed dried thyme or you can use fresh parsley)
1 lb lump crabmeat (confession ( cheated and used 4 cans of Snow's minced clams, drained)
1 cup crushed kettle-cooked potato chips (read intro)
2 -3 tablespoons yellow onions, finely minced (optional, my addition)
1/4-1/3 cup minced celery (include some leaves)
2 teaspoons Old Bay Seasoning (see Old Bay Seasoning #2, this can be omitted read my *NOTE below.)
2 eggs
10 slider buns
lettuce (optional)

Steps:

  • *NOTE: Depending on the flavor of the potato chips you choose, the Old Bay Seasoning can be omitted. For example, the first time I tried this recipe I tested 'Fully Loaded' Kettle Chips and I wanted those flavors highlighted. Also, if desired the cakes can be pan fried in either a little bit of oil or a combination of oil and butter.
  • Preheat oven to 350º F.
  • Line a baking sheet with parchment paper.
  • In a small bowl, whisk together *1/2 cup* of the mayonnaise, the lemon zest and juice, garlic, Dijon mustard and parsley. Cover and refrigerate until ready to serve.
  • In a medium bowl, combine the crab meat (canned or fresh), potato chips, celery, Old Bay seasoning, the remaining 1/4 cup of the mayonnaise, and the eggs. Cover bowl and refrigerate mixture for at least 30 minutes. Tip: Chilling is important because it firms up the mixture and makes it much easier to shape into patties.
  • Mix well, then form into 10 patties, each about 2 1/2 inches across and 1/2 inch thick. Arrange the patties on the prepared baking sheet.
  • Bake the crab cakes for approximately 25 minutes rotating the pan as needed for even browning. Keep a close eye on them to avoid burning.
  • Serve the crab cakes on buns with the aioli condiment. Add lettuce, if desired.
  • Reminder: Cooking time shown above is for pan frying.

CRAB ASPARAGUS SALAD WITH LEMON AIOLI

Crab Asparagus Salad With Lemon Aioli image

Gourmet quality, easy to prepare. Easily varied by substituting cooked lobster or shrimp for the crab. You can also just double the amount of asparagus too. Adapted from LI chef James McDevitt.

Provided by threeovens

Categories     Crab

Time 30m

Yield 4 serving(s)

Number Of Ingredients 10

1 lemon
1/4 cup mayonnaise
1 garlic clove, finely minced
1/2 cup extra virgin olive oil
2 tablespoons sherry wine vinegar
salt & freshly ground black pepper
8 fingerling potatoes or 4 small yukon gold potatoes, boiled until tender
16 stalks asparagus, trimmed and blanched in salted water until just tender
1 lb lump crabmeat
1 bunch watercress, bottom few inches torn off

Steps:

  • Cut about one inch off the end of the lemon and squeeze out the juice into a small bowl. Cut the rest of the lemon into thin slices. Add the mayonnaise and the garlic to the lemon juice. Combine well; refrigerate at least one hour. Grill lemon slices in a grill pan or broil a few minutes until they just begin to char.
  • Make a vinaigrette by combining olive oil and vinegar with salt and pepper to taste; set aside. Cut fingerling potatoes in half lengthwise, or cut Yukon Golds into quarters. Cut the asparagus spears on the bias into 11/2-inch lengths.
  • Toss the crabmeat, potatoes, and asparagus with enough of the vinaigrette to coat. Spoon 1 tablespoon of the aioli on each of 4 serving plates. Arrange crab, potato, and asparagus on top. Garnish with watercress and a little vinaigrette sprinkled on top.
