Shrimp stuffed with crabmeat and spinach, wrapped in puff pastry and baked in the oven. A wonderful appetizer or great served with a well-cut steak.

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Grease a baking sheet
- Heat oil in a large skillet over medium heat. Add spinach; cook and stir until wilted, about 3 minutes. Season with salt and pepper. Drain off any excess liquid; set aside.
- Lay the sheet of puff pastry out on a clean surface, and cut into 4 squares. Prick lightly with fork.
- In a medium bowl; mix crabmeat, bechamel sauce, shallots, and tarragon until well blended.
- Cut prawns lengthwise and open them up to form a butterfly shape. Lay one shrimp in the middle of each pastry square with open side facing up. Stuff each shrimp with an equal amount of spinach and top with a heaping tablespoon of the crab mixture. Fold over pastry to make a triangle, and press the edges to seal. Place on the baking sheet, and brush with beaten egg.
- Bake in preheated oven until golden brown, 15 to 20 minutes. Serve warm.

SHRIMP NEWBURG IN PUFF PASTRY SHELLS
Shrimp Newburg in Puff Pastry Shells is an easy, but elegant entrée for your next dinner party. It's equally elegant for your Mardi Gras feast. Succulent shrimp in a spicy cream sauce spooned on crispy puff pastry says it all!

- Preheat oven to 400°F.
- Cut puff pastry into 8 (4 to 5 inch) seashell shapes. (See Tip 6)
- Place on silicon or parchment lined baking sheet. Using a sharp knife, score top of each shell several times by cutting to, but not through, the bottom of the pastry to form the shell design. Bake in preheated 400°F oven for 20 minutes, or until puffed and golden brown. Remove from oven. Using a sharp knife, slice each shell in half.(See Tip 7)
- While shells are baking, melt 2 tablespoons unsalted butter in saucepan over medium heat. Add green onions and green pepper; sauté for 5 minutes until tender. Add mushrooms; continue cooking for 2 to 3 minutes. Stir in pimientos and dry sherry. Cook for 1 to 2 minutes. Transfer to a bowl; set aside.
- In the same saucepan, melt remaining 2 tablespoons butter over medium heat. Add flour; stir constantly for 1 minute, or until smooth. Slowly add cream; whisk over medium heat until thickened and bubbly.
- Add vegetable mixture to cream sauce, along with dry mustard, nutmeg, cayenne pepper, and salt. Cook until heated.
- Add chopped shrimp; cook until heated. Correct seasonings.
- Place half of pastry shell on plate; spoon on shrimp newburg mixture; top with other half of puff pastry shell.
- Yield: 6 servings.

- Heat the oven to 375°F. Grate the zest from half the lemon. Beat the egg and water in a small bowl with a fork.
- Stir the crabmeat, cream cheese, onions, Gouda cheese, sour cream, seafood seasoning, celery seed and lemon zest in a medium bowl.
- Unfold the pastry sheet on a lightly floured surface. Spread the crab mixture on the bottom half of the pastry to within 1 inch of the edge. Fold up the sides of the pastry over the filling. Roll up like a jellyroll. Place the pastry, seam-side down, onto a baking sheet. Tuck the ends under to seal. Brush the pastry with the egg mixture.
- Bake for 25 minutes or until the pastry is golden brown. Let the pastry cool on the baking sheet on a wire rack for 10 minutes.
CRAB IN PUFF PASTRY

- Heat oven to 350°F. Unfold pastry sheet; place on lightly floured surface. Roll into 10-inch square. Cut in half; place one half on top of the other. Roll to seal edges. Cut crosswise into 4 equal pieces. Place on ungreased cookie sheet. Bake about 20 minutes or until golden brown.
- Melt butter in 2-quart saucepan over low heat. Cook onions in butter, stirring occasionally, until tender. Stir in flour. Cook, stirring constantly, until mixture is bubbly; remove from heat.

- Slice puff pastry squares diagonally so you have two smaller triangles. Set aside. Take the cut up shrimp and place half into the bowl for the Indian stuffing and half in the bowl for the Greek stuffing. Combine all ingredients for each type of stuffing in their respective bowls and mix well with spoon or hands.
- Lay one diagonal pasty sheet on a wooden cutting board, spoon a small amount of either stuffing in the middle of the pastry sheet and then fold the sheet into a smaller triangle, pinching the edges to seal the shell. Take a fork and press the tines down on the finger-sealed edges to secure the hold.
- Place stuffed pastry sheets on a cooking-spray coated baking sheet, align so you can get as many triangles on it as possible.
- Mix one egg with a few drops of water, beat well. Brush egg mixture over the top of the prepared and stuffed pastry. Place in the oven, cook until pastry is puffed and golden, about 15-20 minute Check on the pastry often. Remove from oven, let cool at least 5 min and then serve with yogurt.

- Preheat oven to 400°. In a large saucepan, bring the water, butter and salt to a boil. Add flour all at once and stir until a smooth ball forms. Remove from heat; let stand 5 minutes. Add 1 egg at a time, beating well after each addition. Continue beating until mixture is smooth and shiny. , Drop by teaspoonfuls 2 in. apart onto greased baking sheets. - Preheat oven to 400. Line 2 large cookie sheets with parchment paper.
- Place the first sheet of puff pastry on a cutting board and use a rolling pin to roll it out so it is a couple inches longer. Use a pizza cutter to cut into 12 equal squares. Repeat with the second sheet of puff pastry.
- In a medium bowl, mix the cream cheese, imitation crab, green onions, lemon juice, salt and pepper.
- Place the crab mixture by tablespoon-fulls into the center of each puff pastry square. Pull opposite corners of the puff pastry square up and press together, leaving the other two corners down (see video). Place the bites onto the cookie sheets.
- Bake for 20 minutes or until puff pastry is golden brown. Serve warm.

- Preheat the oven to 375°F. Grease a mini muffin tin all over, even the top, set aside.
- Place the crab, mayonnaise, dijon, garlic, paprika, parsley, salt, and pepper in a medium-sized bowl. Gently mixed together until combined, set aside.
- Unroll the dough onto a clean work surface and cut as evenly as you can into 24 equal square pieces. Press each piece into a section of the mini muffin tin, pressing down to form into the tin.
- Fill the cups with the crab mixture evenly. Bake for 11-13 minutes until golden brown.

- Roll out pastry slightly and cut each in half.
- Season each salmon with salt, pepper and Old bay seasoning.
- Place one salmon fillet on each pastry.
- Then place 1/4 of the onions, garlic and spinach on top of each salmon.
- Wrap up pastry over salmon twist and seal.
- Bake in a 425 degree pre heated oven for 15 to 20 minutes.
- Heat can soup with curry. Adding water to thin to consistency you like.
- Place soup on bottom of plate then place Puffed pastry with salmon fillets on top.
- Serve with plain Jasmine Rice.

- Preheat your oven to 220 Celsius, or whatever temp you should use based on your puff pastry package. Roll out your puff pastry so it is the width of a crab stick.
- Take some cream cheese and smear it on an end of the puff pastry, then lay down a crab stick and roll. When the puff pastry covers the crab stick you can cut it off, pinch the seams closed, and place on a parchment lined baking tray.
