I loved tuna casserole as a kid and found myself craving it as an adult. However, the massive amounts of fat and salt in the traditional recipe were a turnoff healthwise, and it just didn't taste as good as I remembered. Number Of Ingredients 15

3 tablespoons butter, divided
4 medium carrots, chopped
1 medium onion, chopped
1 medium sweet red pepper, chopped
1 cup sliced baby portobello mushrooms
2 cans (5 ounces each) albacore white tuna in water, drained and flaked
2 cups fresh baby spinach
1 cup frozen peas
3 cups uncooked spiral pasta
1 tablespoon all-purpose flour
2/3 cup reduced-sodium chicken broth
1/3 cup half-and-half cream
1/2 cup shredded Parmesan cheese
3/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a large skillet, heat 1 tablespoon butter over medium-high heat. Add carrots, onion, red pepper and mushrooms. Cook and stir until tender, 8-10 minutes. Add tuna, spinach and peas; cook until spinach is just wilted, 2-3 minutes. , Meanwhile, cook pasta according to package directions for al dente. Drain pasta, reserving 1 cup pasta water. In a large bowl, place pasta and tuna mixture; toss to combine. Wipe skillet clean., In the same skillet, melt remaining butter over medium heat. Stir in flour until smooth; gradually whisk in broth and cream. Bring to a boil, stirring constantly; cook and stir until thickened, 1-2 minutes, adding reserved pasta water if needed. Stir in cheese, salt and pepper. Pour over pasta; toss to coat.

Sprinkling flour directly over the vegetables before adding the stock helps to thicken the mushroom filling for Sunny Anderson's casserole. Adding peas and fresh mushrooms makes the casserole a full meal that can be served on its own, or stretched further by adding a salad or a side of steamed broccoli.

Number Of Ingredients 18

2 tablespoons butter, plus more for baking dish
1 (12-ounce) bag or 4 cups egg noodles
16 ounces yellowfin or albacore tuna in oil, drained and flaked (recommended: Ortiz or Callipo)
10 ounces frozen peas, thawed
1 1/2 cups shredded sharp Cheddar cheese
1 1/2 cups shredded Irish Cheddar cheese
1 tablespoon olive oil
1/2 teaspoon whole dried thyme
1/2 cup chopped onion
Kosher salt and freshly ground black pepper
8 ounces baby bella mushrooms, sliced
4 teaspoons Worcestershire sauce
1 tablespoon prepared horseradish
2 tablespoons flour
1 1/2 cups chicken stock
1 pint heavy cream
3 cups panko breadcrumbs (Japanese)
3 tablespoons olive oil

Steps:

  • For the casserole: Preheat the oven to 375degrees F. Butter a 13- by 9-inch ovenproof dish or lasagna dish and set aside.
  • Cook the egg noodles in salted boiling water according to package directions for al dente, about 8 minutes. Drain and immediately place the noodles in a large bowl filled with ice water to stop the cooking. Once cooled, drain and then pour the pasta into a large bowl with the tuna, peas and both cheeses. Toss to combine.
  • In a large pan with straight sides, add the 2 tablespoons butter, the olive oil, onions and thyme. Season with a sprinkle of salt and pepper and cook on medium heat until the onions are tender and translucent, about 5 minutes. Add the mushrooms, season with salt and cook gently until tender and darkened, about 5 minutes more. Add the Worcestershire sauce and horseradish, and then sprinkle the flour over the entire pan. Stir to help the flour soak into the vegetables and cook a minute more to lose the flour taste. Raise the heat to medium-high and add the chicken stock. Cook until slightly thickened, about 5 minutes, and then slowly stir in the heavy cream. Simmer until the cream is thickened slightly, about 4 minutes more. Taste and season with salt if needed. Pour the mushroom sauce over the prepared noodles in the large bowl and quickly stir to combine. Immediately pour into the prepared dish.
  • For the topping: In a small bowl, combine the breadcrumbs and olive oil. Season with a sprinkle of salt and a grind or two of pepper. Stir until the crumbs soak up the oil evenly. Sprinkle the breadcrumb mixture evenly over the top of the dish and place, uncovered, in the oven until the sides are bubbly and the top is golden brown, about 35 minutes. Let it rest 5 minutes before serving.

2 (6 ounce) cans tuna, drained
1 (14 ounce) can peas, drained
1 (10 1/2 ounce) can cream of celery soup
1 (10 1/2 ounce) can cream of mushroom soup
1/2 cup milk
1/2 cup butter, melted

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Combine noodles, tuna, peas, soups, milk and butter in a 1 quart casserole dish.
  • Bake for 30 to 35 minutes.

I got this recipe from a book called "Baby Let's Eat" which I purchased when my almost 16 year old was a baby. My whole family loves this and it is very flexible as far as what kind of veggies you want to put in it. My DH requests this whenever he wants tuna casserole. Enjoy!

2 tablespoons vegetable oil or 2 tablespoons butter
1/4 cup flour
1 cup milk
1 1/2 cups chicken broth
8 ounces cheddar cheese, grated
3 cups cooked farfalle pasta
12 1/2 ounces albacore tuna in water
1 lemon, zest of, finely grated
2 cups broccoli florets, lightly cooked
1 cup peas, cooked
1 carrot, grated
3/4 cup breadcrumbs (about)
fresh parsley, chopped for garnish

Steps:

  • Preheat oven to 325 degrees.
  • Spray a 3 quart casserole with cooking spray. Set aside.
  • Make sure to have broccoli, peas and pasta cooked and waiting.
  • Grate carrot, lemon zest and cheese and set aside.
  • In a medium saucepan, heat oil or butter.
  • Add flour and stir until blended. Cook for 1 minute.
  • Add milk and chicken broth, whisking as the sauce comes to a boil and thickens. When sauce has thickened a bit and is smooth, remove from heat.
  • Add grated cheese and stir until melted.
  • Fold in the pasta, tuna, lemon zest, broccoli, peas and carrot.
  • Place in the prepared casserole dish. Sprinkle top with bread crumbs and chopped parsley.
  • Bake until the top is golden brown and casserole is heated through, about 30 minutes.

I know it sounds crazy, but trust me, this tuna casserole is one of the yummiest things ever. Comfort food madness! Before this, Grandma had never written out this recipe. She doesn't measure anything when cooking this, but it must be tasted throughout.

12 ounces egg noodles
1 (5 ounce) can tuna, drained and flaked, or more to taste
½ cup sour cream
½ cup milk, divided
1 (1 ounce) package dry onion soup mix (such as Lipton®)
1 teaspoon Worcestershire sauce
¼ teaspoon garlic powder, or to taste
⅛ teaspoon seasoned salt (such as LAWRY'S®), or more to taste
salt and ground black pepper to taste
2 tablespoons butter, cut into small pieces, divided
8 ounces ridged potato chips (such as Ruffles®)
2 cups shredded mozzarella cheese

Steps:

  • Fill a large pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes. Drain.
  • Mix cooked noodles with tuna, sour cream, 1/4 cup milk, onion soup mix, Worcestershire sauce, garlic powder, seasoned salt, salt, and pepper. Taste and adjust seasonings as desired.
  • Lay 1/2 of the butter across the bottom of a 2-quart, microwave-safe casserole dish. Crush potato chips, then sprinkle 1/4 of the crushed chips over the bottom and press to flatten.
  • Spread the tuna-noodle mixture in a single layer over the crushed chips. Layer with 1/2 of the mozzarella, 2/3 of the remaining chips, followed by the remaining butter, chips, milk, and mozzarella.
  • Microwave on high until casserole is hot and cheese is melted, about 10 minutes.

2 (12 ounce) cans canned tuna, drained and flaked
3 cups diced celery
3 cups crushed potato chips, divided
6 hard-boiled eggs, chopped
1 (10 3/4 ounce) can condensed cream of mushroom soup, undiluted
1 (10 3/4 ounce) can condensed cream of celery soup, undiluted
1 cup mayonnaise
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1 teaspoon black pepper

Steps:

  • Combine all ingredients, except 1 1/2 cup potato chips, in slow cooker and stir well.
  • Top mixture with remaining 1 1/2 cup potato chips.
  • Cover and cook on Low 5 to 8 hours.

1 cup elbow macaroni
1 (7 ounce) can tuna in water, drained
1 small onion, peeled and finely chopped
1 cup frozen peas
1 (10 3/4 ounce) can cream of chicken soup
1/2 cup milk
fresh ground black pepper, to taste
paprika, for garnish
1/2 cup crushed potato chips

Steps:

  • Preheat oven to 350°F.
  • Cook macaroni in plenty of boiling salted water until just al dente; drain.
  • Combine tuna, onion, peas (you can also use a well-drained 10 ounce tin of baby peas), milk, pepper and the tin of cream of chicken soup in a large bowl.
  • Fold in cooked macaroni.
  • Pour into a lightly buttered six-cup casserole dish; sprinkle with paprika.
  • Bake 20 minutes.
  • Top with 1/2 cup crushed potato chips and return to oven for 10 more minutes.
