CURRIED CAULIFLOWER AND CHICKPEA DUMP DINNER



Curried Cauliflower and Chickpea Dump Dinner image

Skip cooking a big pot of rice and throw the ingredients into a casserole dish instead for an easy dump-dinner meal. The basmati rice and chickpeas absorb all the delicious flavors of ginger, garlic, curry powder and coconut milk. Finish with a quick drizzle of yogurt along with fresh cilantro leaves and lime wedges for a simple and complete meal.

Nonstick cooking spray
2 cups low-sodium vegetable broth
One 13.5-ounce can unsweetened coconut milk
4 cloves garlic, finely grated
1 tablespoon finely grated peeled fresh ginger (from a 1- to 2-inch piece)
1 serrano chile pepper, stemmed and finely chopped (remove seeds for less heat)
2 1/2 teaspoons curry powder, preferably Madras
Kosher salt
Two 15.5-ounce cans chickpeas, drained and rinsed
2 cups lightly packed baby spinach, roughly chopped
1 1/2 cups basmati rice
1/2 medium head cauliflower, cut into small florets (about 3 heaping cups)
1/2 small red onion, thinly sliced
Cilantro leaves, plain whole-milk yogurt and lime wedges, for serving

Steps:

  • Preheat the oven to 425 degrees F. Spray a 9-by-13-inch baking dish with nonstick spray.
  • Whisk the vegetable broth, coconut milk, garlic, ginger, serrano, curry powder and 2 teaspoons salt together in a medium bowl until combined. Add the chickpeas and spinach and stir to coat.
  • Spread the rice evenly in the bottom of the prepared dish. Pour in the coconut-milk mixture, distributing the chickpeas and spinach evenly over the rice. Scatter the cauliflower and onion over the top, making sure to go all the way to the edge of the pan (it's okay if the cauliflower is not completely submerged in liquid).
  • Cover tightly with foil and bake until the vegetables have softened but are still vibrant, about 25 minutes. Remove the foil and bake until the cauliflower is charred in spots and the rice is cooked through, 20 to 25 minutes more. Let sit for 5 minutes to allow the rice to absorb more of the moisture. Serve topped with cilantro, a drizzle of yogurt and lime wedges for squeezing.

The cinnamon sticks and bay leaves are removed before the dish is served, but the cardamom pods are more difficult to fish out. Be careful as you eat not to bite into one.

1 teaspoon coriander seed
6 cardamom pods
2 bay leaves
2 (3 inch) cinnamon sticks
1 1/2 cups chopped onions

4 garlic cloves, minced
2 teaspoons garam masala
1 cup water
1/2 cup chopped plum tomato (about 1 large)
1/2 teaspoon salt
2 (15 1/2 ounce) cans chickpeas, rinsed and drained (garbanzo beans)
1 cup plain yogurt
1/2 cup chopped fresh cilantro

Steps:

  • Heat oil in a large nonstick skillet over medium heat.
  • Add cumin, coriander, cardamom, bay leaves, and cinnamon sticks; cook 30 seconds or until fragrant, stirring constantly.
  • Add onion, and cook for 2 minutes, stirring frequently.
  • Add ginger and garlic; cook 30 seconds, stirring constantly.
  • Stir in garam masala, and cook 10 seconds, stirring constantly.
  • Stir in 1 cup water, tomato, salt, and chickpeas; bring to a simmer.
  • Cook 5 minutes, stirring occasionally.
  • Remove from heat; discard cinnamon sticks and bay leaves.
  • Stir in yogurt and cilantro.

1 minced onion
2 tablespoons julienned ginger
1 tablespoon minced garlic
1 tablespoon vegetable oil
1 teaspoon curry powder
1 tablespoon tomato paste
1 can (15.5 ounces) rinsed and drained chickpeas
Yogurt, for serving
Cilantro sprigs, for serving

Steps:

  • Saute onion, ginger, and garlic in oil. Add curry powder and cook 30 seconds. Stir in tomato paste and cook 1 minute. Add chickpeas and cook until heated through; season. Serve with yogurt and cilantro sprigs.

From the IGA Supermarket chain. It's too bad I can't post the picture because it looks really nice. Apparently two patties makes one serving, making it four servings for four people, especially with a complete meal. What I plan to do below is write that it makes eight patties, and allow everyone here to decide if they want to serve one or two patties per person. Because of the hot curry paste this is really for people who like their recipes hot.

1 cup plain yogurt
1/4 cup chopped of fresh mint
1 garlic clove, chopped
1 (19 ounce) can chickpeas, drained
1 onion, finely chopped
4 teaspoons hot curry paste
1 egg, beaten
1/2 cup store bought roasted red pepper, chopped
3/4 cup oat bran (or breadcrumbs)
3/4 cup finely chopped almonds
salt and pepper

Steps:

  • In a small bowl, blend yogurt, mint, and garlic. Cover and refrigerate for 30 minutes.
  • Season with salt and pepper.
  • Preheat oven to 375°F.
  • In a large bowl, mix chickpeas, onion, curry paste, and egg. Mash the mixture with a potato masher until blended but not smooth.
  • Add red peppers and oat bran, and season with salt and pepper to taste. Mix with a fork until ingredients are well combined.
  • Shape mixture into 8 patties and coat with chopped almonds.
  • Place patties on a baking sheet lined with parchment paper. Bake in the oven for 30 minutes, turning patties halfway through the cooking.
  • Place each croquette on a bed of salad greens and serve with yougurt sauce.
  • Note: For a meal, serve each person 2 croquettes with buttered linguini, broccoli florets and yogurt sauce (this is just a suggestion, and you can always do something similar along this line).

2 tbsp vegetable oil
1 tsp cumin seeds
1-2 red chillies , deseeded and chopped
1 clove
1 small cinnamon stick
1 bay leaf
1 onion , finely chopped
½ tsp ground turmeric
2 garlic cloves , finely chopped
400g can chickpeas , rinsed and drained
1 tsp paprika
1 tsp ground coriander
2 small tomatoes , chopped
1 tbsp chopped coriander

Steps:

  • Heat the oil in a heavy-bottomed pan. Fry the cumin, chillies, clove, cinnamon and bay leaf together until the cumin starts to crackle. Tip in the onion, turmeric and a pinch of salt. Cook for 2 mins until starting to soften, then add the garlic.
  • Continue cooking 4-5 mins until the onion is soft, then add chickpeas, paprika, black pepper and ground coriander. Give everything a good stir so the chickpeas are well coated in the spices.
  • Add the tomatoes and 2 tbsp water. Cook on a medium heat until tomatoes are soft and the sauce is thick and pulpy. Take off the heat and sprinkle on the coriander.
