CRAB IN PUFF PASTRY



Crab in Puff Pastry image

Prepare this elegant dish for the next special occasion. Flaky layers of puff pastry sandwich savory seafood and a creamy white wine sauce.

1/2 package (17.3 ounce-size) frozen puff pastry (1 sheet), thawed
2 tablespoons butter or margarine
2 medium green onions, thinly sliced (2 tablespoons)
2 tablespoons Gold Medal™ all-purpose flour
1/2 cup milk
1/2 cup whipping (heavy) cream
1 1/2 cups cooked crabmeat, shrimp or lobster
1/2 cup Sauvignon Blanc, dry white wine or clam juice
2 tablespoons chopped fresh parsley
1 teaspoon finely shredded lemon peel
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Heat oven to 350°F. Unfold pastry sheet; place on lightly floured surface. Roll into 10-inch square. Cut in half; place one half on top of the other. Roll to seal edges. Cut crosswise into 4 equal pieces. Place on ungreased cookie sheet. Bake about 20 minutes or until golden brown.
  • Melt butter in 2-quart saucepan over low heat. Cook onions in butter, stirring occasionally, until tender. Stir in flour. Cook, stirring constantly, until mixture is bubbly; remove from heat.
  • Gradually stir in milk and whipping cream. Heat to boiling, stirring constantly. Boil and stir 1 minute. Stir in remaining ingredients; heat through.
  • Split each pastry horizontally with fork. Spoon crab mixture over bottom halves; top with remaining pastry halves. Garnish with additional parsley if desired.

This has been posted for the Virtual Culinary Cruise of the British Isles and Northern Ireland. The Isle of Wight is famous for Crab Pasties, and this is Rick Stein's version.

Number Of Ingredients 10

900 g chilled fresh puff pastry
1/2 teaspoon saffron strand
2 teaspoons hot water
350 g white crab meat
75 g brown crabmeat
225 g leeks, thinly sliced
50 fresh white breadcrumbs
1 teaspoon salt
pepper (10 turns of the pepper mill)
25 g butter, melted

Steps:

  • Preheat the oven to 200C/400F/Gas 6.
  • Divide pastry into 6 pieces.
  • Roll out each piece on a lightly floured surface and then cut into a 19cm/7.5in circle.
  • For the filling.
  • Soak the saffron in the hot water for 5 minutes.
  • Put the white and brown crab meat, leeks, breadcrumbs, salt and pepper into a bowl and stir together until well mixed.
  • Crush the saffron a little into the water to release the colour and flavour.
  • Stir it into the melted butter, then stir this into the rest of the filling ingredients.
  • Divide the mixture between the pastry circles.
  • Brush the edge of one half with a little water, and bring both sides together over the top of the filling and pinch together well to seal.
  • Crimp the edge with your fingers and transfer to a lightly greased baking sheet.
  • Bake for 35 minutes until golden brown.
  • Serve hot or cold.

2 tablespoons canola oil
2 Fresno chiles, finely chopped
2 cloves garlic, minced
1 cup dry white wine
1 pound jumbo lump crabmeat, picked over
1 pound spaghetti, cooked al dente, drained, 1 cup of the pasta cooking water reserved
2 tablespoons finely chopped fresh flat-leaf parsley
1 tablespoon finely chopped dill
1 tablespoon finely chopped fresh mint
2 teaspoons finely grated lemon zest
Extra-virgin olive oil
Salt and freshly ground black pepper

Steps:

  • Heat the canola oil in a large high-sided saute pan over medium heat. Add the chiles and garlic and cook until soft and the garlic is pale golden brown. Add the wine and cook until reduced. Add the crab and cook until just heated through.
  • Add the pasta and some of the cooking water to the pan and cook for another minute. Stir in the parsley, dill, mint, lemon zest. Drizzle with olive oil and season with salt and pepper.

Kosher salt
1 pound spaghetti
2 tablespoons canola oil
2 Fresno chile peppers, finely chopped
2 cloves garlic, minced
1 cup dry white wine
1 pound jumbo lump crabmeat, picked over
2 tablespoons finely chopped fresh flat-leaf parsley
1 tablespoon finely chopped fresh dill
1 tablespoon finely chopped fresh mint

  • Bring a large pot of salted water to a boil. Add the spaghetti and cook as the label directs until al dente. Reserve 1 cup cooking water, then drain the pasta.

1 (16 ounce) package dry farfalle (bow tie) pasta
½ cup butter
1 (6 ounce) can crabmeat, drained and flaked
1 (14.5 ounce) can peeled and diced tomatoes, drained
1 ½ tablespoons red pepper flakes
1 tablespoon garlic salt
salt and pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Add farfalle pasta, cook for 8 to 10 minutes, until al dente, and drain.
  • Melt the butter in a separate pot. Mix in crabmeat and tomatoes. Season with red pepper, garlic salt, salt, and pepper. Cook and stir 10 minutes. Toss with cooked pasta to serve.

Creamy pasta sauce with imitation crab that is ready with little prep but ends up with lots of flavor.

2 tablespoons olive oil
1 medium onion, diced
6 cloves garlic, minced
1 pound imitation crabmeat, diced
1 (16 ounce) package rotini pasta
1 cup half-and-half
½ cup chopped fresh parsley
⅓ cup grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil.
  • At the same time, heat oil in a large saucepan over medium heat. Add onion and garlic to the hot oil; cook until translucent, about 5 minutes. Stir in imitation crab and heat for 2 minutes.
  • Begin cooking rotini. Add to the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes.
  • While the pasta is cooking, stir half-and-half and parsley into the crab sauce; bring to a simmer. Continue to simmer crab sauce, adding pasta water as necessary, while pasta is finishing.
  • Drain pasta.
  • Mix Parmesan cheese into crab sauce and heat until melted, about 2 minutes. Serve over pasta.

500g pack puff pastry
25g butter
140g leeks , washed and thinly sliced
pinch of saffron strands
250g crabmeat (white or brown, or a mix of the two)
small bunch parsley , roughly chopped
50g fresh white breadcrumb
1 zest and juice 1 lemon
1 egg , beaten

Steps:

  • Heat oven to 200C/180C fan/gas 6. Roll out the pastry on a lightly floured surface, then cut round a plate to make four 18cm circles. Put in the fridge for 10 mins.
  • In the meantime, melt the butter in a frying pan. Cook the leeks for 5 mins until soft. Soak the saffron in 1 tbsp of boiling water for 2 mins. Tip the saffron and soaking liquid into the leeks and cook for 1 min more.
  • Put the crabmeat in a bowl with the parsley, breadcrumbs, zest and lemon juice and some seasoning. Stir in the leeks then divide the mix between the four pastry circles, laying the filling on one half of the pastry. Brush the edge with egg then fold the pastry over, pressing the edges together. Brush the pasties with egg and bake for 30-35 mins until golden. Leave to cool then serve warm or at room temperature with extra lemon wedges if you like.

  • Preheat oven to 400°.
