MOCK CHICKEN TOFU

I was lucky enough to get this recipe from "Down to Earth" in Maui, HI many years ago. It is the creation of Carol Lent. It has been a standard fare in our family for years. It is so delicious! Give it a try!

Number Of Ingredients 6

1 (16 ounce) package firm tofu, drain well
3 tablespoons safflower oil or 3 tablespoons butter
3 tablespoons soy sauce or 3 tablespoons Braggs liquid aminos
1/3 cup nutritional yeast
2 teaspoons spike seasoning salt
1/4 teaspoon black pepper (optional)

Steps:

  • Drain tofu well.
  • Heat oil in frying pan, preferably a non-stick skillet.
  • When oil is hot, add tofu by breaking it into random size pieces about 1" x 1".
  • Cook tofu without turning for about 5 minutes.
  • Turn tofu and cook for about 4 more minutes on the other side.
  • Turn off the heat and add the remaining ingredients.
  • First you put in the soy sauce and stir so as to cover all the pieces of tofu.
  • Then add the nutritional yeast, spike and black pepper.
  • Toss and coat all the tofu pieces.

This is pretty convenate. For the people who hate tofu, don't have to eat it, because there is not a ounce of tofu in this whole dish. I don't really know, if you can put tofu in, but you could try it, and send the results to me .

8 snow crab legs
5 eggs
160 ml fish stock or 160 ml chicken stock
1 tablespoon kanimiso
1 teaspoon stock
1 tablespoon potato starch, dissolved
1 stalk asparagus, chopped into 4 pieces,blanched

Steps:

  • Mix eggs,stock Strain it through mesh strainer, pushing it threw.
  • Put food wrap in a cup, put 1 in the cup.
  • Tie up, with a string.
  • Steam on low heat for 15 minutes.
  • Mix Soup A, heat.
  • Place in soup bowl, or Japanese Wan ((Not wok)) and place the omelltte-like tofu in the bowl, with Soup A, serve with Crab.

  • Preheat the oven to 350°. Bring the water to a simmer over moderate heat and remove the kombu before it boils. Add the bonito and simmer for 1 minute. Cover the saucepan, remove from the heat and let stand for 10 minutes. Strain the dashi through cheesecloth into another saucepan and add the soy sauce and mirin.
  • Arrange the tofu cubes and crabmeat in ovenproof bowls and warm in the oven for about 3 minutes. Bring the dashi to a simmer. Pour the hot dashi into the bowls, garnish with the mitsuba or celery leaves and serve right away.
