This is great served with a bed of cooked white rice with black bean salad and fresh fruit. Fast and great summer meal.

Number Of Ingredients 8

2 tablespoons olive oil or 2 tablespoons vegetable oil
2 teaspoons of dry jamaican jerk spice
1/2 teaspoon salt
1 1/2 lbs of uncooked peeled deveined large shrimp (about 21 to30 or 16 to 20 extra large shrimp)
12 pieces fresh pineapple, 1 inch
1 red bell pepper, cut into 16 inch pieces
1/4 cup pineapple preserves
2 tablespoons lime juice

Steps:

  • Heat coal or gas grill for direct heat.
  • Mix oil, jerk seasoning and salt in large bowl. Add shrimp, pineapple and bell pepper; toss to coat.
  • Thread shrimp, pineapple, and bell pepper alternately on each of four 12 to 15 inch meat skewers, leaving 1/4 inch space between each piece.
  • Mix the preserves and lime juice; set aside.
  • Cover and grill kabobs 4 to 6 inches from medium heat 4 minutes. Turn kabobs and brush with the preserve mixture. Cover and grill 4 to 8 minutes longer or until shrimp are pink and firm.

6 boneless skinless chicken thighs (about 1 1/4 lb), cut into 1-inch cubes
1/3 cup jerk seasoning sauce
1 cup canned or fresh pineapple chunks
2 medium red bell peppers, each cut into 12 wedges
1/2 medium onion, cut into 12 wedges, separated into chunks

Steps:

  • In shallow glass or plastic dish or resealable food-storage plastic bag, mix chicken and 1/4 cup of the jerk sauce. Cover dish or seal bag; refrigerate 1 hour to marinate, stirring occasionally.
  • Heat gas or charcoal grill. Drain chicken; discard marinade. On each of 6 (15-inch) metal skewers, thread chicken, pineapple, bell peppers and onion alternately, leaving space between each piece. Brush vegetables with remaining jerk sauce.
  • Place kabobs on grill over medium heat. Cover grill; cook about 15 minutes or until chicken is no longer pink in center and vegetables are tender.

3/4 lb medium shrimp, tails in tact
2 teaspoons lime zest
3 teaspoons sesame seeds
1/4 teaspoon salt
1/4 cup lime juice
2 tablespoons honey
1 tablespoon sesame oil

Steps:

  • Cut steak into 1" pieces.
  • Place steak and shrimp in baggie.
  • Combine remaining ingredients and marinate in refrigerator for at least 1 hour.
  • Place on skewers and grill.
  • Enjoy!

1 lb large shrimp, in their shell
15 1/4 ounces canned pineapple chunks, undrained
8 ounces Italian salad dressing
8 ounces canned tomato sauce
2 tablespoons brown sugar
1 teaspoon mustard
1 medium size green pepper, cut into 1 inch cubes
hot cooked rice
4 long wooden skewers (or metal)

Steps:

  • Peel and devein the shrimp.
  • Drain the pineapple reserving 1/4 cup of juice. Combine the pineapple juice, the salad dressing, tomato sauce, sugar and mustard in a shallow dish. Mix well. Add the shrimp, tossing gently to coat. Cover and marinate in the refrigerator for 2 hours, stirring occasionally.
  • Remove the shrimp from the marinade, reserving the marinade. Alternate shrimp, pineapple and green pepper on 4 skewers. Grill over medium hot coals 3-4 minutes on each side or until done, basting with the marinade.
  • Heat the reserved marinade and place it in a bowl for serving.
  • Serve over rice with hot marinade.

1 tablespoon reduced-sodium soy sauce
1 tablespoon Sriracha chili sauce
1 tablespoon honey
1 garlic clove, minced
4 cups cubed seedless watermelon (1 inch), divided
1 pound uncooked shrimp (16-20 per pound), peeled and deveined
1 medium red onion, cut into 1-inch pieces
1/2 teaspoon sea salt
1/4 teaspoon coarsely ground pepper
Minced fresh cilantro, optional

Steps:

  • For glaze, place soy sauce, chili sauce, honey, garlic and 2 cups watermelon in a blender; cover and process until pureed. Transfer to a small saucepan; bring to a boil. Cook, uncovered, over medium-high heat until mixture is reduced by half, about 10 minutes. Reserve 1/4 cup glaze for serving., On 4 metal or soaked wooden skewers, alternately thread shrimp, onion and remaining watermelon. Sprinkle with salt and pepper., Place kabobs on an oiled grill rack over medium heat. Grill, covered, 3-4 minutes on each side or until shrimp turn pink, brushing with remaining glaze during the last 2 minutes. If desired, sprinkle with cilantro. Serve with reserved glaze.

This is a quick and simple recipe that is as appropriate for a tailgate party as it is to serve your boss or in-laws. Serve as a finger food with or without cocktail sauce. Or for a sit down dinner, serve over greens with an Asian style dressing, or with a stir fry of veggies prepared the same as the shrimp in a separate skillet or wok and cooked about 10 minutes on slightly lower heat.

1 lb jumbo shrimp
caribbean jerk seasoning, McCormick
1/4 cup butter, melted

Steps:

  • I use 1 pound jumbo shrimp, precooked frozen, peeled and deveined, tails can be either on or off.
  • The most important thing to remember with this recipe is to completely thaw the precooked, frozen shrimp in a colander. When most of the water drains off, pat dry the shrimp as much as possible with paper towels. (Or start with fresh, peeled, deveined shrimp, precooked. A lot of grocers will steam them at no extra charge.).
  • Turn your burner on medium high (almost high) and set your large non stick skillet or wok over the burner. When skillet begins to get really hot, but NOT smoking, quickly add the melted butter and shrimp.
  • Sprinkle on the Caribbean Jerk Seasoning to taste. It's hot and spicy so be careful if you don't like the heat.
  • Keep the shrimp moving in the pan, glazing the shrimp with the hot butter and spices.
  • Cook just until hot and slightly browned. (only about 3 minutes or even less depending on the heat of your skillet).
  • You can also make these in the broiler or on the grill after tossing the shrimp in melted butter, sprinkling on Caribbean Jerk Seasoning and spreading them on a broiler pan or open grill. Broil for only 2 to 3 minutes, watching closely.
