1 teaspoon olive oil
1 cup chopped onion
4 cloves garlic, minced
⅜ cup red wine
1 tablespoon white sugar
1 tablespoon chopped fresh basil
1 teaspoon crushed red pepper flakes
2 tablespoons tomato paste
1 tablespoon lemon juice
½ teaspoon Italian seasoning
¼ teaspoon ground black pepper
2 (14.5 ounce) cans peeled and diced tomatoes
2 tablespoons chopped fresh parsley

Steps:

  • Heat oil in a large skillet or saucepan over medium heat. Saute onion and garlic in oil for 5 minutes.
  • Stir in wine, sugar, basil, red pepper, tomato paste, lemon juice, Italian seasoning, black pepper and tomatoes; bring to a boil. Reduce heat to medium, and simmer uncovered about 15 minutes.
  • Stir in parsley. Ladle over the hot cooked pasta of your choice.

28 oz can of San Marzano peeled tomatoes
1/4 cup olive oil
4-6 garlic cloves, (minced)
1 medium onion, (chopped)
1 1/2 teaspoons red pepper flakes
Salt, (to taste)
Optional toppings: fresh basil, shaved parmesan, olive oil, white beans, burrata, pepper

Steps:

  • Add the peeled tomatoes and sauce from the can into a bowl and break them apart into chunks with your hands or with a masher. Set aside.
  • In a medium pot, heat the 1/4 cup of olive oil, and add the garlic and onion. Sauté on low heat for 3-4 minutes.
  • Add the red pepper flakes and tomato chunks into the pot.
  • Stir and allow to cook for 20 minutes with the lid on, over low-medium heat, stirring occasionally.
  • Adjust for salt, as needed.
  • Toss with pasta, and enjoy with your favorite toppings! Ours include olive oil, burrata, parmesan, fresh herbs, and/or pepper!

1 to 2 tablespoons olive oil
1 tablespoon crushed red pepper flakes
3 to 4 cloves garlic, minced
1 small to medium onion, chopped
1/2 cup white wine (or chicken broth)
Two 15-ounce cans crushed tomatoes
2 tablespoons Italian seasoning
Pinch sugar
Salt and freshly ground black pepper

Steps:

  • Add a tablespoon or so of olive oil to a hot pan over medium-high heat, throw in the red pepper flakes, garlic and onions and give them a stir. Add the wine (or chicken broth), whisking to deglaze the bottom of the pan. Cook until the liquid reduces by half. Add the crushed tomatoes and Italian seasoning and stir to combine. Add a pinch of sugar and some salt and pepper to taste. Reduce the heat to low and simmer for 30 minutes.
  • Let cool, then portion into 4 freezer bags and freeze.

1 pound penne rigate (penne pasta with ridges)
1/4 cup olive oil
3 cloves garlic, chopped
One 26.42-ounce container chopped tomatoes, such as Pomi
1/2 teaspoon red chile flakes
1/2 teaspoon Italian seasoning
6 leaves fresh basil, chopped, plus more for garnish
Block of Parmigiano-Reggiano, for garnish

Steps:

  • Bring a large pot of water to a boil. Add kosher salt to the boiling water, then add the pasta. Cook according to the package instructions, about 9 minutes.
  • In a large skillet over medium-high heat, add the olive oil and heat until the oil starts to shimmer. Add the garlic and cook, stirring, until fragrant, 1 to 2 minutes. Add the chopped tomatoes, red chile flakes, Italian seasoning and salt and pepper to taste. Bring to a boil and cook for 5 minutes. Remove from the heat and add the chopped basil.
  • Drain the pasta and add it to the sauce. Garnish with Parmigiano-Reggiano flakes and more basil and serve warm.
