1 cup cracker meal
1 egg, beaten
1/2 cup milk
12 ounces lump crab meat, picked over to remove any shell fragments
1 rounded teaspoon crab boil seasoning
1 tablespoon baking powder
A handful flat leaf parsley, chopped
1 lemon, zested, plus 1 lemon, cut into wedges, for garnish
1 rib celery from the heart of the stalk, finely chopped
Several drops Worcestershire sauce
Several drops hot pepper sauce
2 tablespoons mayonnaise or ranch dressing
Vegetable or canola oil, for frying
1 (8-ounce) jar roasted red peppers, drained, or 1 large freshly prepared roasted red pepper
1 cup mayonnaise or reduced fat mayonnaise
1/2 cup prepared chili sauce

Steps:

  • Place cracker meal in a bowl and make a well in the center of the meal. Beat egg with milk and pour into well. Moisten cracker meal and combine liquid with meal using the tines of a fork. Add crab meat, crab boil seasoning, baking powder, parsley, lemon zest, celery, Worcestershire, hot pepper sauce, and mayonnaise to the bowl. Mix all ingredients well and form into 8 (3-inch) patties. Add 1/2-inch vegetable or canola oil to a skillet and heat to medium high temperature. Fry cakes 3 minutes on each side and drain on paper towel lined plate. Cook 4 cakes at a time, so that oil temp does not drop too low.
  • For red pepper sauce, combine drained red peppers in a food processor bowl with mayonnaise and chili sauce. Pulse/grind the ingredients into a smooth sauce. Transfer sauce to a small serving dish.
  • Serve crab cakes with sauce and lemon wedges.

2 cups whipping cream
1 1/4 cups chopped seeded tomatoes
1/3 cup diced carrot
2 tablespoons brandy
1 teaspoon chopped seeded jalapeño chili
3/4 teaspoon Hungarian sweet paprika
Pinch of cayenne pepper
1 pound fresh crabmeat
2 3/4 cups fresh breadcrumbs made from French bread
1/2 cup mayonnaise
1/8 teaspoon cayenne pepper
3 tablespoons olive oil
Lemon wedges

Steps:

  • Bring clam juice, cream, tomatoes, carrot, brandy, jalapeño chili, and 1/4 teaspoon paprika to boil in heavy large saucepan. Reduce heat to medium; simmer until sauce is reduced to 2 cups, stirring occasionally, about 45 minutes. Puree sauce in blender until smooth. Return to saucepan; add pinch of cayenne pepper. Season sauce to taste with salt. (Sauce can be prepared 1 day ahead. Cover and refrigerate.)
  • Combine crabmeat, 1 1/2 cups breadcrumbs, mayonnaise, remaining 1/2 teaspoon paprika, and 1/8 teaspoon cayenne in large bowl, mixing until well blended. Form eight 1/2-inch-thick crab cakes, using scant 1/2 cup mixture for each. Coat crab cakes with remaining 1 1/4 cups breadcrumbs, pressing gently to adhere. (Can be prepared 4 hours ahead. Arrange in single layer on baking sheet. Cover and chill.)
  • Heat olive oil in heavy large skillet over medium heat. Add 4 crab cakes to skillet and fry until golden and heated through, about 4 minutes per side. Transfer to paper-towel-lined plate. Repeat with remaining crab cakes.
  • Meanwhile, bring sauce to simmer. Divide sauce among plates; top with crab cakes. Garnish each with lemon wedges.

2 teaspoons canola oil
2 scallions, thinly sliced, green and white parts
1 medium green bell pepper, finely diced
1 jalapeno pepper, finely diced
1 tablespoon finely grated fresh ginger root
2 cloves of garlic
1 pound of crab claw meat, picked over
1 teaspoon finely grated lime zest
2 tablespoons fresh lime juice
1/4 cup finely chopped fresh cilantro leaves, plus 18 whole cilantro leaves
1 large egg, beaten to mix
1 cup of Panko breadcrumbs, or regular unseasoned breadcrumbs
3 tablespoons canola mayonnaise
1/2 teaspoon salt
1/3 cup nonfat, plain Greek-style thickened yogurt
1 teaspoon hot chili-garlic sauce, such as Sriracha, plus more to taste

Steps:

  • Preheat the oven to 425 degrees. Spray a baking sheet with canola oil cooking spray.
  • Heat the oil in a nonstick skillet over a medium-high heat. Add the scallion, green pepper, and jalapeno and cook until the peppers soften slightly, about 3 minutes. Add the ginger and garlic and cook for one minute more. Set aside to cool slightly.
  • In a large mixing bowl combine the pepper-scallion mixture with the crab, lime zest, lime juice, cilantro, egg, 1/2 cup of the Panko, 1 tablespoon of the mayonnaise, and the salt.
  • Put the remaining 1/2 cup Panko on a plate. Form the crab mixture into 8 crab cakes and gently roll each in the Panko and place on the prepared baking sheet. Spray the tops of the crab cakes with the canola oil cooking spray to coat lightly.
  • Bake the crab cakes until they are golden brown on the bottom, about 10 minutes. Gently turn them over and cook for 10 minutes on the other side. In the meantime, in a small bowl stir together the yogurt with the remaining 2 tablespoons mayonnaise and the chili-garlic sauce.
  • To serve, top each crab cake with about 1/2 teaspoon of the spicy cream and one cilantro leaf.

Steps:

  • Mix first 9 ingredients in large bowl. Season with salt and pepper. Mix in 1/4 cup breadcrumbs and egg. Shape crab mixture into eight 2 1/2-inch-diameter patties, using scant 1/2 cup mixture for each. (Can be made 6 hours ahead. Cover; chill.)
  • Place 3 cups breadcrumbs in shallow dish. Coat crab cakes in breadcrumbs, pressing to adhere. Melt 1 tablespoon butter with 1 tablespoon oil in heavy large skillet over medium heat. 1 lb lump crabmeat, picked over
1 tablespoon fresh lemon juice
1/2 cup plain breadcrumbs
1 large egg
1/4 cup mayonnaise, plus

2 scallions, trimmed and minced
1 tablespoon chopped fresh flat-leaf parsley
1 tablespoon dry mustard
salt, to taste
black pepper, to taste
2 tablespoons unsalted butter
2 tablespoons canola oil
6 cups salad greens
2 ears fresh corn, husked
2 cups cherry tomatoes, coarsely chopped
1/2 medium red onion, finely diced
2 scallions, trimmed and minced
1 1/2 tablespoons capers, drained
1 tablespoon balsamic vinegar
1 teaspoon group cumin
1 teaspoon hot sauce (to taste)

Steps:

  • Crab Cakes:.
  • Put crabmeat in medium bowl, sprinkle with lemon juice, and gently toss.
  • In large bowl, mix together bread crumbs, egg, mayonnaise, scallions, parsley, mustard, salt and pepper to taste.
  • Add crabmeat and mix together gently.
  • Shape into small patties, about 1 inch thick and 2 inches wide, and place on baking sheet.
  • Cover with plastic wrap and refrigerate for at least an hour.
  • Heat 1 tbsp each of butter and oil in large skillet over medium-high heat and cook half of the crab cakes until golden, 3-5 minutes per side.
  • Drain on paper towels.
  • Heat remaining butter and oil and repeat with the rest of the crab cakes.
  • To serve, divide salad greens among 6 plates. Top each plate with three crab cakes and spoon the salsa over them.
  • Cherry Tomato and Corn Salsa:.
  • Bring large pot of water to boil. Add corn, return to boil and cook for 5 minutes.
  • Lift corn from water and set aside to cool.
  • When cool enough to handle, scrape kernels off cobs with small, sharp knife and transfer to large bowl.
  • Add tomatoes, onion, scallions, capers, vinegar, cumin and hot sauce and toss gently.
  • Cover and refrigerate at least 2 hours before serving.
  • The salsa will keep in the refrigerator for up to three days.
  • Makes about 3 cups of salsa.

1/4 cup sweet pickle relish (or a mixture of sweet and dill relish, to taste; half of each is pretty good)
1 tablespoon Dijon mustard
2 tablespoons chopped fresh tarragon or 1 teaspoon dried tarragon, lightly crushed
1 tablespoon chopped fresh parsley
1 tablespoon skim milk or 1 tablespoon nonfat yogurt (optional)
salt & freshly ground black pepper
1 lb lump crabmeat, picked over
1/2 cup plain breadcrumbs
1/4 cup low-fat mayonnaise
3 tablespoons chopped green onions
1 tablespoon Dijon mustard
1 egg white
4 -5 drops Tabasco sauce
1/2 teaspoon salt
fresh ground black pepper
1 tablespoon extra virgin olive oil
1/4 cup chopped fresh chives
lemon wedge, and accompaniment (to garnish)

Steps:

  • Prepare Tarragon Sauce first.
  • Combine all ingredients in a small bowl.
  • If too thick, add skim milk or yogurt to thin.
  • Season to taste with salt and pepper.
  • Refrigerate, covered, to allow flavor to develop while crab cakes are being prepared.
  • Crab Cakes: Combine crab, 1/4 cup breadcrumbs, mayonnaise, green onion, mustard, egg white, Tabasco, salt, and black pepper.
  • Form into 8 equal patties.
  • Place remaining breadcrumbs on waxed paper.
  • Dredge patties in crumbs, transfer to a plate, and refrigerate, covered, for at least 1 hour.

Sauce:

2 tablespoons lemon juice
2 teaspoons finely chopped fresh cilantro
1 pinch cayenne pepper
salt and freshly ground black pepper to taste
¼ cup corn oil for frying

Steps:

  • Put eggs, lemon juice, mayonnaise, bell pepper, onion, cilantro, salt, cayenne pepper, and black pepper in a mixing bowl and mix well. Gently fold in crabmeat and 1/2 of the bread crumbs.
  • Form crabmeat mixture into 8 patties. Coat both sides in remaining bread crumbs. Place patties on waxed paper and freeze for 15 minutes.
  • Meanwhile, preheat the oven to 350 degrees F (175 degrees C).
  • Prepare the sauce: Mix sour cream, mayonnaise, bell pepper, garlic, lemon juice, cilantro, and cayenne pepper together in a bowl. Season with salt and black pepper.
  • Heat 1/2 of the oil in a skillet over medium heat. Carefully add patties to hot oil in batches. Fry until golden, about 30 seconds on each side. Transfer to a paper towel-lined plate to drain. Repeat with remaining patties, adding remaining oil as needed.

I made crab cakes before and they usually fall apart...these stay together really well and they taste better than any restaurant's! Recipe is from Hotel Hana-Maui in Maui, Hawaii.

1 tablespoon vegetable oil
2 shallots, chopped
2 cloves garlic, chopped
2 teaspoons chili-garlic sauce
1/2 cup whipping cream
1/4 cup sake
1/4 cup fresh lime juice (I thought the sauce was a little tart, so you might want to add a little less and taste as you go)
1 1/2 cups fresh white breadcrumbs (I used Panko and it worked great!)
8 ounces fresh crabmeat, picked over
1/3 cup chopped green onion
1/4 cup chopped fresh cilantro
1 large egg
2 tablespoons water
2 tablespoons vegetable oil

Steps:

  • For Sauce: Heat oil in heavy medium skillet over medium-low heat.
  • Add shallots and garlic and saute until tender, about 5 minutes.
  • Add chili garlic sauce and stir 1 minute.
  • Add cream, sake and lime juice.
  • Simmer until sauce is slightly thickened, about 7 minutes.
  • For Crab Cakes: Mix first 4 ingredients in medium bowl.
  • Season with salt and pepper.
  • Whisk egg and 2 tablespoons water in small bowl.
  • Stir 2 tablespoons egg mixture into crab mixture (mixture will be dry).
  • Discard remaining egg mixture.

Steps:

  • The oil should be hot but not smoking.
  • Transfer cakes to the baking sheet and bake for 10 minutes.
  • To make the Sour Cream Sauce: Blend all ingredients in a small bowl, put in refrigertor until ready to serve.
  • You can make the crab cakes a day in advance, but do not coat them with the breadcrumbs until you are ready to fry them.
  • You can also use a combination of shrimp, lobster and crabmeat!
  • Serve with a large green salad!
