This Texas pinto beans recipe are cooked up with brisket burnt ends and barbecue sauce to make them the perfect cookout side dish.

1 lb./450 g pinto beans (dried)
2 qt./2 L water
2 cups/475 mL brisket (burnt ends, chopped)
1 14 oz./400 g. can tomatoes (whole)
1 onion (large, chopped)
1 cup/240 mL barbecue sauce
6 garlic cloves (minced)
3 jalapeno peppers (seeded and chopped)
1 tbsp./15 mL chili powder
1 tbsp./15 mL Worcestershire sauce
1 tsp./5 mL salt
1 tsp./5 mL cumin (ground)

Steps:

  • Gather the ingredients.
  • Wash beans and pour into a large saucepan or Dutch oven .
  • Add all other ingredients, except the salt .
  • Bring to a boil while stirring.
  • Reduce heat and allow to simmer for 2 hours, covered.
  • Stir occasionally, bringing up the beans from the bottom to prevent burning and so they will cook evenly.
  • Add the salt after 1 hour.
  • The beans are done when they're soft but still hold their shape.
  • Serve and enjoy.

I have an enormous family and all of the men go trail riding several times a year and these beans are one of the things they look forward to. My aunts and I put together their favorite combination several years ago, and have it ready at their camp, and they are some happy cowboys! You can mix different beans to your liking (lima, kidney, etc.), but the boys in our family like this mixture the best.

1 pound bacon
2 pounds ground beef
1 large onion, chopped
1 cup ketchup
⅓ cup brown sugar
1 (55 ounce) can baked beans (such as Bush's®)
2 (15 ounce) cans Great Northern beans
1 (15 ounce) can pinto beans
1 (15 ounce) can pork and beans

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned and crispy, 10 to 12 minutes. Drain bacon slices on paper towels and crumble when cool enough to handle.
  • At the same time, heat another large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  • Place bacon, ground beef, onion, ketchup, and brown sugar in a slow cooker; mix well. Add baked beans, Great Northern beans, pinto beans, and pork and beans.
  • Cook on Low, stirring often, about 4 hours.

Number Of Ingredients 10

2 cups pinto beans, cleaned, soaked overnight in a non-reactive bowl and drained; liquid discarded
1 ham hock
1 bay leaf
3 cloves garlic, peeled
1 whole jalapeno chile
5 cups water
2/3 cup finely chopped white onion,
2 slices thick-cut bacon, finely chopped
4 ounces pork chorizo, casing removed
Salt and freshly ground black pepper

Steps:

  • In a large saucepan, bring the soaked beans, ham hock, bay leaf, garlic, jalapeno, and 5 cups of water to a boil over high heat. Cover the pan, reduce the heat to medium and simmer for 2 hours or until beans are tender. If the beans absorb too much water, add 1 cup of water after 1 hour and continue cooking (Beans mixture should remain soupy while cooking). Turn off the heat.
  • Cook the bacon in a large saute pan over medium-high heat until almost crisp, about 10 minutes. Add onion and cook for about 3 minutes or until translucent. Transfer bacon and onion mixture to the pot with the beans. Wipe pan clean. In same pan cook chorizo over medium heat until crisp, about 1 minutes. Using a slotted spoon, remove the chorizo and drain on paper towels. Add to the beans. Season lightly with salt, if necessary. Stir the beans over medium-high heat until heated through. Remove the bay leaf and ham hock and discard. Ladle into bowls and serve.
  • Cook's Note: In place of soaking the beans, you can use 3 (15-ounce) cans rinsed and drained pinto beans. Proceed as above but reduce the cooking time to 1 hour.

  • Pour beans into a colander and rinse. Look over beans and make sure they are clean and free of any stones or dirt that might have made its way into the bag. Place beans and approximately 2 quarts (8 cups) of water into a large pot and bring to a boil over high heat.
  • Once boiling, carefully transfer the beans and water into a slow-cooker. Add oil, onion, and season with about 1/2 tablespoon of salt. Cook for at least 6 hours on high, although you can leave for a few hours more. I’ve also had success cooking them on low for 10-12 hours if that works better for you.
  • When beans in the slow cooker are ready, cook the bacon in a large pot over medium/medium-low heat until crisp, stirring to avoid burning. Once bacon is crispy, remove some of the bacon grease, leaving only about 1 tablespoon in the pot. Don’t throw away that liquid gold! Store in refrigerator for future use.
  • Add the garlic and cook for about 1 minute, stirring constantly. Add the can of fire-roasted tomatoes and a pinch of salt, and with a wooden spoon, scrape up any browned bits that are stuck to the bottom of the pan from cooking the bacon. Let mixture cook for about 3-4 minutes, stirring occasionally.
