SPICED BEEF ON PITA TRIANGLES WITH FRESH MANGO SALSA
The pita chips and meat mixture can be made days ahead.

Steps:
- Heat oven to 325 degrees. Place pita triangles on oven rack set in the middle position. Bake until golden brown, 10 minutes. (Store in an airtight tin for up to a week.)
- Mix cumin, ginger, cinnamon and cloves in a small bowl. Leave 1/4 teaspoon of the spice mix in the bowl and sprinkle the remaining spices over beef; mix to combine.
- Heat a large (12-inch) skillet over medium-high heat. Add meat and all but 1/3 cup of the onion; saute seasoning with salt and pepper and stirring frequently to break meat into a finely ground texture. Stir until meat is fully cooked and all liquid has evaporated from the pan, about 9 minutes. Stir in 1/2 cup of chutney; cook to blend flavors, about 1 minute longer. (Can be refrigerated in a covered container up to 5 days.)
- When ready to serve, rewarm beef and make the salsa: Stir together the mango, cilantro, and remaining chutney, onion and spice mix. Spoon a portion of meat on each pita triangle, top with salsa and serve. Or set out meat, pita chips and salsa and let guests make their own.

PITA TRIANGLES WITH SUN-DRIED TOMATO/BASIL DIP
I have not made this but it is another of Stacey's recipes (remember the Bread Sticks) that came to me via my friend Ted - When He says its good-believe me - it's good. Both the dip and the triangles freeze well. If you wish you may add 1/4 cup chopped fresh basil to the dip.

Steps:
- Mix together the Cream cheese,mayo,tomato, lemon juice& garlic, mix well.
- Cut each pita into 12 bite size triangles, the trangles are double thickness, and place them on a cookie sheet.
- Mix together the butter, lemon pepper, fresh basil and pepper.
- Brush one side of each triangle with the butter mixture.
- Bake in 350F oven for apprx 10 minutes or untilcrisp& browned.
- Cool the pita chips& serve with the dip.
SPICED TILAPIA WITH MANGO BLACK BEAN SALSA
From Fine Cooking's "Cooking Fresh." This salsa is wonderful and versatile. Even though this recipe is for 2 servings, I suggest you make the whole batch of salsa (Recipe #230800) and store it for other dishes. It is obviously easier to make in larger batches. Try this spice rub on chicken or grilled chops as well!

- For salsa: Combine all in a bowl and mix. Store in refrigerator, covered, until used.
- For fish: Mix all spices and rub both sides of the fillets equally with the mixture.
- Spray a non-stick skillet with cooking spray, generously. Heat over medium-high heat until hot.
- Cook the tilapia fillets in the skillet until lightly browned and the flesh is opaque and flakes, about 2 minutes per side.
- Serve topped with cold OR warmed salsa!

ABSOLUTE BEST MANGO SALSA
I absolutely adore fresh mango, and this salsa is the perfect way to make them shine! The result is very fresh, sweet and spicy, and chunky...similar to pico de gallo in texture. Make sure you use mangoes at their peak...if they are too ripe, your salsa will be mushy. I make this often for guests by serving with blue corn tortilla chips (the color is so much prettier than plain ol' tortilla chips!) or serve alongside mahi mahi or other grilled fish. I hope you enjoy it as much as I do!

- Add jalapeno to taste (I usually use about 3/4 of a medium-sized jalapeno, which gives it quite a quick!).

This is from Every Day w/ Rachael Ray. It's inexpensive, easy and tastes great. I'm not a fan of bell peppers, so I used a bit of petite diced tomatoes for color and flavor.

- preheat oven to 500 degrees.
- In a small bowl, combine the yogurt and 2 garlic cloves and season with salt and pepper.
- In a large skillet, heat the olive oil over medium heat. Add the bell pepper and onion and cook, stirring occasionally, until softened, about 5 minutes.
- Stir in the remaining garlic, the chile and cumin and cook for 30 seconds.
- Add the beef and cook, breaking up with a spoon, until no longer pink, about 5 minutes and season with salt and pepper.
- Place pitas on a baking sheet and bake for apx 5 minutes until a little brown.
- Top with ground beef mixture and serve with garlic yogurt.

- Combine yogurt and mango chutney in a bowl; stir well, and set chutney sauce aside.
- Cook meat and onion in a large nonstick skillet over medium heat until browned, stirring to crumble.
- Drain meat mixture in a colander; wipe drippings from skillet with a paper towel.
- Return meat mixture to skillet. Add currants and next 6 ingredients (currants through black pepper); stir well.
- Combine water and cornstarch; stir well, and add to the meat mixture.
- Cook over medium heat 2 minutes, stirring constantly.
- Remove from heat; set aside.
- Working with 1 phyllo sheet at a time, cut each sheet lengthwise into 4 (3 1/2-inch-wide) strips; lightly coat strips with cooking spray (cover remaining phyllo dough to keep it from drying out). Stack 2 strips, and spoon about 1 tablespoon meat mixture onto one end of each stack. Fold the left bottom corner over mixture, forming a triangle; keep folding back and forth into a triangle to end of strip.
- Place triangles, seam sides down, on a baking sheet; lightly coat with cooking spray.
- Bake at 400° for 12 minutes or until golden.
- Serve warm with chutney sauce.
- Serving size: 1 triangle and 1 1/2 teaspoons sauce.
