Provided by Reuse Grow Enjoy

Categories     Canning

Time 40m

Number Of Ingredients 7

1 Tsp Celery Seed
4 lbs Fresh Jalapeños (washed and stem removed)
5 Cups Sugar
2 1/2 Cups Apple Cider Vinegar
1/2 Tsp Turmeric
1/2 Tsp Mustard Seed
1/8 Tsp Cayenne Pepper (optional)

Steps:

  • Rinse jalapenos well then slice them into about 1/8-1/4 inch slices. Place in a bowl and set aside.
  • In a medium saucepan combine vinegar, sugar, celery seed, cayenne pepper, mustard seed, and turmeric. Bring this mixture to a full rolling boil. Then immediately reduce the heat and allow it to simmer for 6 to 7 minutes. Be sure to stir it frequently.
  • Now add the sliced jalapenos to the saucepan. Turn the heat back to high and bring it to a rolling boil. Now reduce the heat to low/medium again and allow it to simmer for about another 6 to 7 minutes.
  • While that is simmering, put your pint canning jars and lids in the water bath canner. This is to sterilize them. After a minute or two, remove the jars and lids and place on a dish towel. You always want to be sure to work with sterile canning jars.
  • Now use a large slotted spoon to transfer the jalapenos to the canning jars. Be sure to make them as equal as you can. While regular jars will work, wide mouth jars make it easier to pack the jars.
  • After you remove the peppers from the pot, turn the heat back to high to thicken the brine into a syrup. This should take about 5 minutes.
  • Now distribute the hot brine syrup between the jars. You want to make sure to cover the peppers completely but allow 1/2 inch headspace.
  • After you have the jars full, remove any air bubbles, wipe rims with a damp paper towel or cloth. Then place lids on and then rings. You want the rings to be finger tight. Place jars in a hot water bath or large pot of boiling water and can for 12 minutes. You want to make sure you have enough water in your canner. The water should cover the jars by about two inches.
  • After 12 minutes, remove the jars carefully and allow them to cool on a towel for about 8 to 12 hours.
  • After cool check out seals and if everything is sealed (that is when the top center can't be pushed in) you can store in a cool place for up to one year.

CANDIED JALAPENO OR COWBOY CANDY

Candied Jalapeno or Cowboy Candy image

Time 1h5m

Yield 9 Half Pints

Number Of Ingredients 7

3 lbs jalapenos, fresh and firm
2 cups cider vinegar
6 cups granulated sugar
1/2 teaspoon turmeric
1/2 teaspoon celery seed
3 teaspoons granulated garlic
1 teaspoon ground cayenne pepper

Steps:

  • Wearing gloves, remove the stems from all of the jalapeno peppers. The easiest way to do this is to slice a small disc off of the stem-end along with the stem. Discard the stems.
  • Slice the peppers into uniform 1/8-1/4 inch rounds. Set aside.
  • In a large pot, bring cider vinegar, white sugar, turmeric, celery seed, granulated garlic and cayenne pepper to a boil. Reduce heat and simmer for 5 minutes.
  • Add the pepper slices and simmer for exactly 4 minutes.
  • Use a slotted spoon to transfer the peppers, loading into clean, sterile canning jars to within 1/4 inch of the upper rim of the jar.
  • Turn heat up under the pot with the syrup and bring to a full rolling boil. Boil hard for 6 minutes.
  • Use a ladle to pour the boiling syrup into the jars over the jalapeno slices. Insert a cooking chopstick to the bottom of the jar two or three times to release any trapped pockets of air. Adjust the level of the syrup if necessary. Wipe the rims of the jars with a clean, damp paper towel and fix on new, two-piece lids to finger-tip tightness.
  • *If you have leftover syrup, and it is likely that you will, you may can it in half-pint or pint jars, too. It's wonderful brushed on meat on the grill or added to potato salad or, or, or... In short, don't toss it out!
  • Place jars in a canner, cover with water by 2-inches. Bring the water to a full rolling boil. When it reaches a full rolling boil, set the timer for 10 minutes for half-pints or 15 minutes for pints.
  • When timer goes off, use canning tongs to transfer the jars to a cooling rack. Leave them to cool, undisturbed, for 24 hours. When fully cooled, wipe them with a clean, damp washcloth then label.
  • Allow to mellow for at least two weeks, but preferably a month before eating. Or don't.

CANDIED JALAPENOS RECIPE (HOMEMADE COWBOY CANDY)

Candied Jalapenos Recipe (Homemade Cowboy Candy) image

Candied jalapenos (homemade cowboy candy recipe) are easy to make, perfect for nachos, burgers, desserts and more, nice and sweet with a touch of heat.

Provided by Mike Hultquist

Categories     Dessert

Time 15m

Number Of Ingredients 6

1/2 pound jalapeno peppers (about 10-12 average sized jalapenos)
1 cup sugar
1/2 cup apple cider vinegar
1 teaspoon chili powder ((optional))
½ teaspoon turmeric powder
½ teaspoon ground ginger

Steps:

  • First, slice the jalapeno peppers into ¼-inch round slices.
  • Stir together the sugar, vinegar and seasonings in a pan. Bring to a quick boil, then reduce the heat to a low simmer until the sugar dissolves into a gooey syrup.
  • Add the jalapeno pepper slices and mix to evenly coat them with the syrup.
  • Simmer them about 4 minutes. They will darken a bit as they slightly cook and absorb some of the sugars.
  • Transfer the candied jalapeno peppers to cleaned jars, then fill the jars with the remaining syrup.
  • Cover and store in the refrigerator for up to 3 months. You can eat them right away, but it is best to let the flavors develop at least 1 week in the refrigerator before eating.

COWBOY CANDY (SWEET PICKLED JALAPENOS)

Cowboy Candy (Sweet Pickled Jalapenos) image

I don't eat raw jalapenos, they are too hot and spicy for me,! But when you add vinegar and sugar to the pickling liquid, you are left with the flavor without the heat. Now that I can do! These pickles are sweet and tangy, with just the right amount of bite. But be careful, these are awfully addicting! Serve them on cream...

Time 25m

Number Of Ingredients 5

1 ½ pounds jalapenos (15 to 20 medium)
2 cups white vinegar
2 cups white sugar
1 teaspoon pickling salt (or kosher (see notes))
1 tablespoon pickling spice

Steps:

  • Make a spice sachet by laying a 5 x 5-inch piece of cheesecloth onto a clean work surface. Spoon the pickling spice into the center. Gather the edges of the cheesecloth together in the center, twisting tightly; tie firmly with kitchen string. Trim the ends with scissors, if necessary.
  • Combine the brine ingredients in a medium pot and bring to a boil over medium-high heat. Place the bouquet into the pot with the pickling liquid; simmer covered for 35 minutes.
  • Turn off the heat and allow it to cool for about 5 minutes.
  • Remove the bag of spices and discard.
  • Meanwhile, use a sharp knife to slice off the stems of the jalapeno and discard. For milder slices, remove the seeds and veins. (Wear gloves to protect your hands)
  • Place the jalapeno slices inside of a 1-quart canning jar or 2-pint size glass canning jars with lids. Pour the warm brine into the jar(s) over the jalapenos. Wipe down the outside of the jar and the rim, if necessary. Let the jar(s) cool completely before sealing the jar with the lid and ring.
  • Refrigerate the jalapenos at least a week before using. You can enjoy candied jalapenos for up to 3 months sealed tightly in the refrigerator.

COWBOY CANDY AKA CANDIED JALAPENOS

Cowboy Candy AKA Candied Jalapenos image

Cowboy Candy is a colloquial term for candied jalapenos, which has been used for nearly 100 years in vintage Texas cookbooks! We use these candied jalapenos to top our brisket deviled eggs but they're also wonderful atop cream cheese served with crackers, as a condiment with barbecue, or served within sliced brisket sandwiches!

Categories     Sauces & Condiments

Time 40m

Number Of Ingredients 9

3 lbs. green and red jalapenos
1 c. apple cider vinegar
1 c. red wine vinegar
4 c. sugar
1/2 t. turmeric
1/2 t. celery seed
1 T. granulated garlic
1 t. cayenne pepper
Pinch allspice

Steps:

  • Prepare the jalapenos by slicing off the stem and then slicing 1/4-1/8 inch coins. This is made easier by wearing disposable gloves! Reserve jalapenos.
  • In a large stockpot, add all of the other ingredients and bring to a boil. Add the jalapenos and simmer in the syrup for 5 minutes.
  • If you are canning, transfer peppers into sterile canning jars with a slotted spoon. Leave 1/4 inch headroom.
  • Bring the heat up on the syrup to a full rolling boil. Boil 6 minutes.
  • Use a ladle to ladle the syrup over the jalapeno slices. Wipe the rims of the jars clean, add lid and ring, and secure tightly.
  • Place the jars in hot water canner, covered by 1-2 inches of water, and boil 12 minutes. Remove the jars and place carefully on a towel on the counter-top. You may hear popping noises as they seal. Let cool for 10-12 hours. Tighten rims and store.
  • The candied jalapenos can also be boiled and transferred to a jar and kept in the refrigerator without processing in the water bath. Keep refrigerated.

Categories     any meal     condiment

Time 35m

Number Of Ingredients 7

3 pounds fresh (firm, washed jalapeno peppers, sliced into 1/8-1/4 inch slices)
2 cups cider vinegar
3 cups granulated sugar
3 teaspoons granulated garlic
½ tsp ground cayenne pepper
1 teaspoon celery seed
1 red bell pepper (if desired for color)

Steps:

  • In a large pot, bring cider vinegar, sugar, garlic powder, cayenne, and celery seed to a boil.
  • Reduce heat and simmer for 5 minutes.
  • Add the jalapeno pepper slices (and red bell pepper, if desired) and simmer for 4 minutes.
  • Use a slotted spoon to transfer the peppers into clean, sterile canning jars, packing the jalapeños semi-firmly within ¼-inch of the rim of the jar.
  • Turn heat up for the remaining syrup and bring to a full rolling boil.
  • Boil for 5 minutes.
  • Use a ladle to pour the boiling syrup into the jars over the jalapeño slices.
  • Insert a knife into each of the jars two or three times to release any trapped pockets of air.
  • Add more syrup if necessary. (*see notes for leftover syrup)
  • Wipe the rims of the jars with a clean, damp paper towel then screw on two-part canning lids.
  • If you do NOT want to properly can these, simply cool jars at room temperature for an hour and then store them in a sealed container in the fridge for up to 3 months.
  • Use proper canning procedures to store at room temperature for longer periods of time.
  • To can, place jars in a canner and cover with water by 2-inches. Bring the water to a full rolling boil. When it reaches a boil, set the timer for 10 minutes for half-pint jars or 15 minutes for pint jars. When the timer goes off, use canning tongs to transfer the jars to a cooling rack or kitchen towel. Leave them to cool, undisturbed, for 24 hours. When fully cooled, wipe them with a clean damp washcloth. Double check that they've sealed properly by pushing down on the center of the lid. It will not move if it is sealed.
