1 pound onions, chopped coarse
2 large cloves garlic, chopped fine
1 tablespoon olive oil
1 pound yellow or red and green peppers, chopped coarse
1/2 pound carrots, chopped fine
3/4 pound mushrooms, trimmed and chopped coarse
1 28-ounce can no-salt-added tomato puree
1 teaspoon dried oregano
1 teaspoon dried basil
1 cup water
1 1/2 cups instant couscous

Steps:

  • Saute onions and garlic in hot oil in a nonstick skillet until onions soften and begin to brown.
  • Add peppers, carrots and mushrooms and continue cooking over medium heat for 15 minutes.
  • Add tomato puree, oregano, basil and water and cook over low heat for about 15 minutes longer, until flavors are well blended.
  • Meanwhile, cook couscous, following directions on package. To serve, pour the sauce over the couscous.

2 tablespoon extra-virgin olive oil
1 bay leaf, fresh or dried
1 medium onion, chopped
1/4 zucchini, diced
1/4 yellow squash, diced
Salt and pepper
1/2 cup canned pumpkin
4 cups chicken or vegetable broth
1 1/2 teaspoons ground cumin, half a palm full
1 teaspoon coriander seeds, 1 /3 palm full
2 1/4 cups couscous
1 vine ripe plum tomato, seeded and finely chopped
2 tablespoons each chopped cilantro and flat-leaf parsley
Mediterranean flat bread, for passing

Steps:

  • Heat a large sauce pot over medium high heat. Add oil, bay leaf, onion, zucchini and yellow squash to the pot and season with salt and pepper. Saute, stirring frequently, 7 or 8 minutes. Add pumpkin and broth to the pan and stir to combine. Add cumin and coriander. Bring broth to a boil. Add couscous to the broth, stir, cover and remove from heat. Let stand 5 minutes. Remove lid from the pot and fluff couscous with a fork. Remove bay from the pan, add finely chopped tomato, cilantro and parsley, toss again with fork to combine and transfer to a serving platter. Serve with warm Mediterranean flat breads.

8 ounces shiitake mushrooms, stemmed

3 tablespoons extra-virgin olive oil, plus more for brushing
Kosher salt and freshly ground pepper
1 large red onion, sliced into 1/4-inch-thick rounds
1 10-ounce package couscous
1/2 cup 2% Greek yogurt
1/4 cup sliced almonds, toasted

Steps:

  • Heat a grill pan over high heat. Toss the bell peppers, squash, mushrooms, garlic, herbs, olive oil, 1 teaspoon salt and 1/2 teaspoon pepper in a large bowl. Brush the onion rounds with olive oil and season with salt. Brush the grill pan with olive oil, then grill the bell pepper mixture and onion rounds (in batches if needed), turning, until tender and marked, about 10 minutes. Peel the garlic.
  • Meanwhile, cook the couscous as the label directs.
  • Pulse the garlic, 2 pieces grilled bell pepper and the yogurt in a mini food processor or blender until smooth. Add 1/4 teaspoon salt, and pepper to taste. Cut the remaining grilled bell peppers into chunks and toss with the squash, mushrooms, herbs and onion in a large bowl; season with salt.
  • Fluff the couscous with a fork and divide among bowls. Top with the vegetables and almonds and serve with the yogurt sauce.

1 cup lentils, picked over and rinsed
2 3/4 cups low sodium vegetable broth, divided
1/3 cup raisins
1 cup whole wheat couscous
1 (12 ounce) jar chunky medium salsa or 1 (12 ounce) jar picante sauce
1 cup chopped cilantro
3 tablespoons tomato paste
1 1/2 teaspoons ground cumin
1 tablespoon olive oil
1 small onion, finely chopped
1 large carrot, diced
1 (15 1/2 ounce) can chickpeas, rinsed and drained
1 tablespoon chopped of fresh mint
1/4 cup toasted pine nuts

Steps:

  • Bring lentils and 6 cups water to a boil. Reduce to a simmer and cook uncovered 15 minutes, or until lentils are just tender.
  • Bring 1 1/4 cups broth and raisins to a boil. Stir in coucous, cover and remove from heat.
  • Place salsa, cilantro, tomato paste and cumin in ffood processor and puree until smooth.
  • Heat oil in large skillet over medium high heat. Add onion and carrot, and season with salt and pepper. Cook 5 to 6 minutes, or until slightly broned, stirring frequently. Add salsa mixture, remaining 1 1/2 cups broth and chickpeas. Bring to a boil, cover, reduce heat to low and simmer 10 minutes, stirring occasionally.
  • Drain lentils and add to chickpea sauce. Thin with additional broth if sauce is too thick.
  • Place coucous in 6 bowls and top with sauce. Sprinkle each serving with mint and pine nuts, and serve.

CHICKPEA, SPINACH AND TOMATO COUSCOUS

I adapted pinkcherryblossom's great recipe for spinach and chickpea curry to make this tasty vegetarian couscous. I changed the combination of spices a bit and substituted canned tomatoes for fresh ones. It's very flavorful and filling but light at the same time. I use Near East couscous mix for the grain: it's ready in 5 minutes as opposed to real couscous which is very long to make. If you don't use spinach in the recipe, you might want to add a little water in step 3. You may also add other vegetables, such as carrot, squash, eggplant or potatoes. Boil or steam them aldente separately and add them in step 3. This makes a perfect vegetarian entree that you can serve along with a mediteranean salad (tomato and cucumber with olive oil and lemon dressing) or simply by itself.

Steps:

  • Heat the olive oil and add the onions. Cook over medium heat for about 10 minutes or until onions are golden. Stir often.
  • Add the garlic, spices and salt (not too much as the bouillon is also salted). Stir and cook for another 2-3 minutes.
  • Add the tomatoes, spinach, chickpeas, lemon juice and bouillon. Bring to a higher heat for about 3 minutes then let it simmer for about 10 minutes or until the sauce is flavorful but not too thick.
  • Prepare the couscous grain according to package directions.
  • Serve vegetables over warm couscous and decorate with fresh coriander. Enjoy!

The sweetness of grilled vegetables is balanced by a tart tomato sauce, which mixes perfectly with simple couscous. Preferably use a heavy grill pan. If you don't have one you can use a baking tray beneath an oven grill, or even roast the vegetables in a hot oven and then transfer them to a pan for the last part. But you will get more of the char-grill flavor if you use a pan. If you want to make more or less couscous, just use the same quantity of water as couscous. This dish keeps well, as the flavor of the vegetables seems to grow stronger. It is just as nice served lightly warmed for lunch as hot for a dinner, or use it as a cold dish in a selection of salads.

1 red bell pepper
1 zucchini
1 small eggplant
1 large sweet onion
¾ cup frozen broad beans

Steps:

  • Remove the seeds from the pepper, and chop into strips about 1 to 2 inches long. Cut the eggplant crossways into rounds about 1/3 to 1/2 inch thick, and cut each one into 6 to 8 even chunks. Peel the onion, and chop into 8 portions. Trim the zucchini, and cut into thick slices.
  • Heat grill pan over a high heat with a generous splash of olive oil. When it is very hot, add all the vegetables to the pan. Press down occasionally to get grill lines across them. Turn occasionally to prevent burning. Cook for about 15 minutes, or until the vegetables are evenly browned and cooked through.
  • Stir broad beans into the vegetables. Add chopped tomatoes, and vinegar. Simmer for a few minutes while the couscous is prepared.
  • Place couscous into a medium bowl. Add boiling vegetable stock, and stir with a fork. Keep lifting the couscous occasionally to prevent it sticking. It only takes 2 to 3 minutes to become soft. Place couscous in a large bowl or serving platter, and serve the vegetables on top.

1 chicken, cut into portions
4 ounces cooked chickpeas (tinned are easiest)
2 cloves garlic
1 medium onion
2 carrots
4 large ripe tomatoes
1 tablespoon tomato puree
1 ounce chopped parsley
12 ounces couscous
4 tablespoons olive oil
salt and pepper

Steps:

  • Peel and trim the vegetables.
  • Fry the chicken pieces in half the olive oil until lightly browned.
  • Add the sliced onion and the chopped garlic, the tomato purée and enough water just to cover the chicken.
  • Season generously and simmer for 10 minutes.
  • Add the cooked chick peas, the carrots, cut into batons (lengthwise into quarters), and the tomatoes, cut into 8 pieces each.
  • Mix the couscous with its own volume of water and the remaining olive oil.
  • Stir it and leave it to swell up for about 15 minutes.
  • To cook: place it in a colander or sieve over a pan of boiling water (traditionally its done over the stew but this can be hazardous), steam for 20-25 minutes until swollen and cooked through.
  • To serve: stir a knob of butter into the couscous and pile in a ring around a large dish.
  • Spoon the chicken and vegetables into the centre of the dish and pass the sauce separately.
  • It can have a little chili added to give it extra pungency.

1 cup chopped onion

1 teaspoon cumin seed, lightly toasted and ground
1 teaspoon turmeric

1/2 teaspoon paprika
2 cups light vegetable broth
3 small tomatoes, peeled and pureed

Steps:

  • Heat olive oil in a non stick pan and cook the chopped onion and garlic in it till the onion is soft and translucent.
  • Stir in the cumin, turmeric, cinnamon, coriander, cayenne and paprika.
  • Continue stirring over medium heat for 2-3 minutes, then add vegetable broth, tomato puree and currants.
  • Simmer the sauce for 10 minutes.
  • Remove the sauce from heat and stir in fresh lemon (or lime) juice to your taste.
  • If not using immediately and planning to reheat before serving, wait to add citrus juice at the last minute.
  • To cook the couscous, heat the broth, water, butter and salt together in a medium skillet till the liquid boils.
  • Reduce to a simmer, add the couscous, cover the skillet tightly and leave on the lowest heat for 5 minutes.
  • Remove the pan from the heat an leave it covered for another couple of minutes before fluffing with a fork.
  • (If using instant couscous, check package directions - you may not need to keep it on heat after boiling, but just cover and wait till liquid is absorbed - just see if liquid amounts match what is mentioned on the package).
